I think my family would agree with you on the turkey and veggie burgers. LOL. Guess I must be the oddball. I don't know why I like them but I do. Funny but I love the hot artichoke dip too. Now I hope I had a better one than you Corrisann because I really would hate to find out that my taste buds are completely off with everything...think of my poor family having to eat my cooking!!
![]() South Beach really recommends pistachios. Since they are in a shell and you have to stop and open each one individually, they're not as easy to eat a quick handful without thinking and so hopefully you don't eat as many as you would another kind of nut. I think that was a good snack choice. ![]() Well I put off making the chili. I stopped at the store and bought more meats, forgetting I had a full freezer. I went in for only milk but you know how that goes. So I had to take some things out of the freezer in order to fit more in. I made chicken last night and have country-style ribs defrosting for tonight. Will get to that chili at some point I hope, but with Lent and not being able to eat meat on Fridays, it throws my whole week off. Yesterday's menu: B-Egg beaters omelette w/spinach, 2 veggie sausage links, coffee L-2.5 oz fat-free canned chicken breast w/chopped pickle, shredded lettuce & 1 tbs mayo in low-carb pita D-baked chicken breast, mashed cauliflower, lettuce w/low-carb dressing S-2 carb-free bran crackers w/cream cheese, 1 pickle I see a lot of those Progresso soup commercials saying they are 0 WW pts so those must be great to have on your plan. Soup is a good filler. I don't know if you guys get the La Tiara brand of taco shells but especially for us counting carbs, they are amazing. I promise you much better than the veggie burgers LOL. They are very thin and crispy but best part is that they are only 4 carbs each! I think regular taco shells are like 20, aren't they? They are 40 calories each so I don't know if that fits in your plan, YH, but I love being able to eat a taco without the guilt or worry that I'm going off program! And with them being thinner than the regular kind, they taste much more authentic and homemade. Sometimes I break them up and make a taco salad out of them too. I highly recommend them. I buy mine at a Shur Fine store. Maybe you would do better to buy the fresh ground turkey and use that to make your tacos? Definitely not as greasey and I think it would taste good if you added the taco seasonings to it. Or if you bake up some chicken ahead of time, you could shred it and have a chicken taco. I do that a lot..make up a batch of chicken breasts or even a whole chicken and keep it in the refrig and make different meals out of it during the week. Oh and I did end up buying a canteloupe last night! It does help to hear what you guys are eating because it gives me ideas and variation for my own menu, thanks. Yes I am on the go a lot...but it's mainly sitting at meetings, which I can handle as long as the meeting doesn't run too long. I am able to do things in small spurts without too much trouble. It's the sitting/standing/walking for longer amounts of time that I cannot do. I brought my water bottle with me yesterday and no snacks, so I was good. I'll do the same at today's meeting. YH, I don't know how you could work with someone like that. I would dread going to work everyday!!I didn't think Teresa was going on her trip till next week but maybe she left already. ![]() I am determined to eat good today. I really want to see a good loss, actually any kind of loss, on Saturday! ![]() Take care ladies and have a great day! DLast edited by Denise78 : 02-28-2008 at 07:18 AM. |

Morning, Gals--
I'm still here, yesterday was a busy day and didn't get a chance to check in. I'm leaving early Sunday, so hopefully I will still be able to check in for the next 2 days. Today is busy, too; got to take the dog to the groomer's. That takes all afternoon, so I will go to the drugstore, etc. while waiting for her. It takes me about 3 days to get ready for a trip because I can't be on my feet for very long and have to spread everything out. We get a housesitter for the dog while we're gone, and I have to make preparations for her as well. Sometimes I wonder if traveling is worth all the trouble; but I know if I didn't ever go anywhere, I'd get depressed (more than I already am ) and would just wither away! My dh is nearly 78, and he does not like to go very many places, or do new things. He has balance problems, and tires easily, so since we both are not very energetic or mobile these days; our life is pretty routine.Denise, I wish I had your energy! You are able to accomplish an amazing amount of stuff, with your MS--congratulations! You are doing so well, too, on your food plan. A lot of activity will become too stressful for me and throw me off. But I guess when you're the cook for the whole family, you can be in charge of what you eat. I am not able to be on my feet enough in a day to go to the store, and stand in the kitchen to cook. That's why I eat lunch out. I do make breakfast, tho. DH will do some dinners, but he gets tired at the end of the day, so we often have to eat out, too. Can't stand those frozen dinners! But we are pretty good at knowing what we can eat when we go to restaurants and not gain weight. There's a nice bakery-deli near our house we often go to that has a lot of soups and salads and things that fit the plan. Re the artichokes--yes, I get the small jars of the ones that are marinated in vinegar, oil, and garlic. I just use a few in a salad, and they add a little variety of flavor. I actually do like veggie burgers, but they have too many carbs in them for me right now. I think we used to get a brand called Gardenburger, and they were good. We have a lot of vegetarian restaurants in Santa Cruz, and all over CA, so veggie burgers are everywhere! YH, what a bummer to have to worry about some nutcase stalking you! I almost wonder if you should report her as a stalker! You should not have to put up with that, but I understand the nature of bureaucracies--it's nearly impossible to get any problem attended to! Hope she backs off of you! Don't feel bad about having had to be a single working mom. We all do what we have to do to survive, and kids grow up and become what they're going to be no matter what. I think their friends have more of an impact on them than their parents. I have always felt there is too much pressure on parents to be perfect, and it is not at all realistic or even seems to make that much of a difference on people growing up. Kids with the same parents can grow up sooo different. I think we're born with certain personalities and are going to be a certain way, regardless! I do not feel like a great mom, either! ![]() Corrisann, it's great to hear that you finally had a good night's sleep and are feeling rested--you deserve that! ![]() I had a pretty good eating day yesterday, and yes, Denise, I weighed in at just 1/2 lb. over 153, where I wanted to get back down to before I leave--yay! B - egg yolk, lox, cream cheese, spinach L - salad, 1 carne asada, and 1 vegetable enchilada, lc choc D - salad w/ a little fruit, meatloaf, 1/2 c. minestrone soup S - cheese, almonds Have a great day, everyone! Hello Ladies!
![]() Thought I'd take a sec and check in! I'm still doing my walks DAILY AND closely following Atkins...nothing new there! In fact, I've been reading my Atkins book again just to see if there's anything I missed, and getting new and interesting recipes to try here on lowcarbfriends and other places. I'll let you know if anything tickles my fancy. You know me and recipes! ![]() I am going to go home and weigh in this weekend, God willing, but I can FEEL that I've lost substantially more. My ponsone (belly) is shrinking, and does that ever feel GOOD!! ![]() I love all your posts! Only trouble is, by the time I'm finished reading them, it's time to go back to work. This little blurb did catch my eye, though, and I wonder if you could clarify it for me, Denise?: Quote:
And what would those health issues be, Denise? Since you also claim to be doing "low carb" as well, I am amazed that you'd take that risk yourself, especially with your MS incapacitating you so much! I sure would like to know what I'll be facing in the future, especially if it's terrible! Thanks in advance for your answer and your concern. Who knew Atkins was such a health risk long term?? ![]() Quote:
BTW, I am not a "hermit", am seldom "all alone" (which is why I so savor my alone time), am quite popular at work AND at home (it's only my mom that is a pain sometimes - - - oh ok, OFTEN! Gotta love her; she's my mom), my son and I eat wherever we want when we want to and with whom we want, often together and at the table, but out of RESPECT for me, he keeps his "goodies" out of sight (and out of mind for me), and I very much appreciate it. In fact, I would consider myself a pretty happy person. And I'm getting happier every day. ![]() Quote:
![]() Quote:
I'll look forward to that support and count on it, for I never had the slightest thought of leaving all of you in the first place.Off to work... HB ![]() |

NOT QUITE FINISHED YET!!!
I AM SOOOOOOO HAPPY!!!! AND I HAVE TO SHARE IT WITH YOU ALL!!! ![]() (And I have to hurry!!) ![]() I just got off the phone with a skin care/ laser clinic that I pass by every day as I drive my bus. I took down their website and gave them a call. ONLY $85/TREATMENT FOR LASER HAIR REMOVAL (upper lip - since I was 16 yrs. old! - UGH!) I have had electrolysis (PAINFUL!!! ) in the past, and had waxings: painful as well. My daughter gets after me to "take care of it", but until now, I didn't know what to do. Until today! They say I will need approx. 4-5 treatments over several months to do the trick.I also am getting this slight "waddle" under my chin, little wrinkly lines that weren't there 40 lbs. ago. THIS PLACE CAN FIX THAT TOO! I have also decided to get my teeth whitened too! These treatments may be old hat to all of you, but I am not the type to get "dolled up". But the more I lose, the more...what?...self-esteem, comes up for me, and I WANT THESE TREATMENTS! I don't even go to the Beauty Shop, but rather cut my own hair! I also want to get some color in my hair...something I haven't done since 1964 when I was in Beauty College! What has come over me???!!! ![]() I can afford all this. No problem. I am BLESSED with a good job! All I have to do is work a weekend or two and what I want is paid for. I'm on my knees in gratitude for that!!! ![]() I'd better go now and make my lunch (to go, natch! ) so I won't get too hungry, but I HAD TO TELL YOU ALL ABOUT THIS!! I AM SOOOOO HAPPY!!! I'm startin' with the 'stach!! ![]() HB |

on a roll
While I seem to have found my nitch again so hopefully am over all the stress eating I was doing. I really am going to look for that book at the library HB just haven't had a chance yet. Hope to get there Sat. But after 4 days w/o even a whiff of a carb my cravings have subsided & I woke up w/ a charliehorse last nite--so I know I'm in the zone. Stopped on my way home & bought my Potassium so hopefully no cramp tonight.
This is what I am making for dinner tonight. It's off a thread here. Called Buffalo Chicken Main Dish. I love casserole kind of meals!!! 8 boneless skinless ck breasts 1tbsp oil 3oz softened cream cheese 1/2C ranch dressing 1/4C Frank's hot sauce 1/4tsp garlic powder 1/2C shred cheese Season ck w/salt & pepper. Cook in oil til brown. Place in greased 9x13. Beat cr.cheese til smooth, then beat in ranch & hot sauce. Stir in cheddar. Pour over ck & bake at 350 20-25 minutes. Maybe turn on broiler to brown top. Sounds yummy to me & should make good leftovers. My cr cheese is real, my ranch is lf, & the shred cheddar I have is 2%. So it hits the SB pretty well. Wanted broccoli w/it but when I went thru the freezer I found I am out of veggies....how did that happen?? There is corn....won't have that will give it to dh. So now I need a side & am not going out to the store. Have to dig thru the cupboards. HB I have a couple friends who did the laser hair removal a few years back & they have been pleased. Would love to get my neck down some day...it's getting that middle aged lady look to it....& if I actually get 80lbs off it will be worse I'm sure. But I figure I can't afford it. We'll see when the time comes. Make sure & do before & after pic's. I will have to look for the LaTiara shells for sure! I wasn't all that happy w/the lc flat bread I tried. Would be great to make up my ck chulupas again! Didn't you use some that worked out real well HB--were they the same brand, I have forgotten. Try to find all that I can locally instead of ordering. YH that's quite the nutcase you are working with!!! Be careful around her! Course I'm sure you are not stupid & know to take care, but you know what I mean. You hear on the news a couple times a year about a disgruntled employee going into work & shooting folks. Too bad the union isn't any help. Hopefully you can just keep your nose to the screen & forget she's there most of the day. Being a parent is a real struggle, & as Teresa said there is no such thing as a perfect parent (or mate or person) and most of us do our very best as we love our kids. DNA is a very powerful thing & as I have gotten older have really started to realize how much it directs us. And even a crummy parent is no excuse once you are an adult. Any therapist will tell you to get over it & get on with you LOL!!! Well ladies I need to get off here & get my ck in the oven. Enjoy your evenings!! |

Hey Teresa, glad to see you haven't left yet. That's great that you got to your target weight before vacation
I am trying very hard to be as active as possible but it involves a lot of resting in between so I can relate to your struggles but hey, if it takes us a little longer to get something accomplished, that's okay. Important thing is that we're out there and we're trying! I don't get to Mexican restaurants often so forgive my ignorance, but what is a carne asada? You've mentioned them before and I've always wondered...![]() Corrisann, now that is a recipe that my whole family will love! I just bought boneless chicken breasts yesterday too, so perfect! I make buffalo wings or tenders often, they're a family favorite, but never thought to instill ranch dressing and cream cheese into the recipe. Sounds yummy and not high in fats at all -- perfect for South Beach! Those Tiara shells are the hard kind, not a soft taco shell like a flatbread. Just so you know to look in the aisle where the shells and salsas are kept. I wore my jeans today, ladies, and they are not even snug anymore! Of course jeans do stretch a bit when you wear them all day but it was nice not to feel that tightness at all. ![]() And yes, meant to comment on this before YH & Teresa, parenting is such a tough thing, should come with an instruction manual!! We raised 3 boys, two of my own and one of my dh's, all in the same household raised the same exact way, and only one turned to drugs and alcohol. Sometimes it's not the environment and/or the parenting...it just IS. ![]() Well girls..the weather is sooo nice and I am so tempted to try to walk but I've been on the go too much already today and am paying for it now, so that will have to wait till a quieter day for me. Tomorrow my friend and I are going to check out that gym and I am praying it is something I am physically able to do...even if I have to build up day-by-day to get the full work-out. I'll let you know!Take care my friends D |

Corrisann...glad those cravings have disappeared, knew you could do it.
![]() Wanted to wait till I had supper to post what I ate today. ![]() Today's menu: B-Egg Beaters scrambled eggs, spinach, coffee L-2.5 oz fat-free canned chicken breast mixed w/lettuce & low-carb dressing D-country-style pork ribs (trimmed of fat), 1 cup broccoli, lettuce w/low-carb dressing S-?? maybe a pickle later Blood sugar levels have been in the 70's and 80's, which is perfection so I'm happy ---Denise Last edited by Denise78 : 02-28-2008 at 05:39 PM. |

Is today Friday ?
Made it till 300am - yeah - T-took your advice and looked in my pill collection and found Ambien CR 12.5 mg. I think it helped. I am depressed like you too!
T-have a great trip-glad you have a sitter for your dog-those kennels are terrible. I lost my Ginger- she was 17yrs old- mostly Collie - never had dog food in her life - ate salads and everything. I will have another dog someday. She was hit by a moving truck at age 8-very-bad-cost me a fortune but she made it another 11 years. What is your ailment with the feet ? I see another water candidate for exercise, have you tried swimmimg, pool stuff ? Sorry about hubby not being able to do much. How old were you and him when you got hitched ? Are you driving to Tucson ? Great you got rid of the pound-you eat so healthy too ! Oh yeah, s2 got a puppy so i grandpuppy sit often - he is an American Dingo dog aka Carolina dog - I just love it - I take him to doggie park - he completely wears me out. C-those chicken breasts sound good - i may try those-you are doing great this week too-we must be losing mounds of pounds. I had to laugh because i cant tell you how many times i told s3 to grow up and get over it - move on-move out since im so terrible. I did not have the best childhood either - I never blamed my crap on alcoholic family blah, blah, blah Thks all for the words of encouragement on my guilt - bad mother - s3 really knows how to work this and is killing me financially. He throws stuff in my face from ages ago. Work psycho-I just have to blank her out of my head when im there-she brown noses the right people - I dont brown nose and am a very straight up person and speak my mind, do my work. I am careful - we are alone on that floor for 2 hrs. every day - I had my hrs changed so I could come in earlier - when i did that she did too !!! HB-Your back ??? Im surprised-you will need a cardiologist in the near future if you dont watch it-sauces-creams- globs of butter-that will catch up- lions, tigers and bears !! I dont want you to get sick down the road. Beauty stuff advice - get the laser, teeth whitening, hair color/highlites, new style, etc. I really would wait on any type of expensive wrinkle / sag treatment. Unfortunately the more weight you lose the worse that will get unless you have extremely resiliant skin. Get facials/peels while your losing. When near your goal you can deal with that issue. Two people at work recently had the gastric surgery - they look 10-15 yrs. older, thats the downside unless you got the bucks to take care of at that point. One has a tummy tuck and facelift scheduled. Thursday am: watermelon and 1 plum lunch: green salad w vin. and oil. raw broccoli whey potion dinner: 2 scrambled eggs with 1 slice of low wheat bread with smidge of FF marg. 20 mini pretzels, 1 fruitie D - now im at the dreaded hair appt. Thurs. after work and pick up a magazine and I read how great eggs are for losing weight so of course now i want eggs for dinner, i notice you eat eggs alot-according to this article thats great- it was called the Egg Diet ! I think I was in the wrong aisle at the store the other day because i looked at the taco shells ( boxed stuff ) high and low for something decent. I did not go to the sauce area-I bet the Tiara shells are there. Want a full report on the Curves expedition today - I hope you will be able to utilize some of the equipment. Now im thinking about a Krispy Cream donut ! |

Jeans
D - Forgot to congratulate you on the jeans - just got dressed for work and got some capris on with no stretch in the fabric that i could not zip 2 wks. ago - now if I can sit in these that will be good - wash those jeans and dry on super hot and they'll fit next week !
Oh yeah - I overheard nutcase at work yesterday say that she is starting to DIET-could it be me...did she notice an oz. of fat dissappear - no one knows im on a diet at work. |

Well it is snowing again this morning--real pretty looking out the window, not so pretty when I hit the road. But March is here so spring is peaking around the corner!!

Am so happy it's Fri!!! We are going to campus to visit w/son on Sun so Sat is ours to do whatever. Dh is going to his moms after work today to help her w/any paperwork etc so that he doesn't have to go tomorrow. Just have to get a couple ck dishes made up & in the fridg and do a couple loads of laundry and I'll try & cram that in tonight after work. Well have to run. Bkft=leftover chicken coffee w/cream L=shrimp & grapefruit D=cajun fish & veggies S=pistachios |

Good Morning Gals!
Glad you made it till the wee hours of the morning YH
Count me in on those suffering depression. It stinks, doesn't it? I was on meds for it but boy did they make me gain weight so I'm off now and am just dealing with it. ![]() Eggs are now good for us? Here I was getting worried I was eating too many of them and was replacing them with Egg Beaters. I do love eggs so I'm glad to hear this and aren't they great for any meal, not just breakfast! I think I am making myself a quiche or souffle tonight while my gang has tuna casserole (Lent). I forgot to buy fish and the little local store only carries breaded fish sticks and formed patties, nothing I can (or want to) eat! We had a part Collie but lost her a few months after we moved to Nebraska. Raised her from a pup. Beautiful dog. She got hit by a car when she was 13 and even though we went through the surgeries...she died a couple of months later from complications Our lab now is our baby. She loves going places with us and gets so excited when she sees me come outside with my purse and coat. Starts jumping all over the place, thinking we are going on a fun trip. It is hard to tell her that sometimes I am just moving my vehicle from one driveway to the next ![]() It almost sounds like your co-worker is jealous of you. Maybe she is following you and changing hours (and now dieting!) because she is envious of the way you look and act?? Although she is going about it in a very scary way!! Yep -- she sounds like a real stalker! Be careful!!!I've been telling everyone I am on a diet. I think for me, it motivates me to hear the encouraging words from others. Plus it will probably be awhile before my weight loss is even noticeable. Just a drop in the ocean right now. Congrats on getting into those capris!! That is awesome. ![]() Oh by the way YH...I am ignoring that last line of your first post!! ![]() So Corrisann, you think the chicken dish would be better in small pieces rather than whole breasts? I plan to make that one day next week. I won't do the peppers/onions as ds2 is a picky eater and won't do veggies of any kind, but he loves buffalo chicken so I think this would be something right up his alley. I imagine the smaller pieces or strips will cook faster so I will have to remember that and adjust the cooking time. Snow??!! Ugh. I doubt we are done for the season either. We have had snow as late as May or June and as early as September around here. Then we hit the 100+ temps in July and August. I swear, we go right from Winter to Summer and then back again to Winter. No Spring or Fall at all ![]() Have a great time with your ds! I love visiting my ds1 on campus. He's coming home tonight for a week -- midterm breaks --- and I so look forward to having him around. He is my buddy..the one that sits at the kitchen table and just yaks and yaks with me. My younger one is 16, typical teenager into his friends and activities and sometimes it's just "hi Mom" and "bye Mom." Your menu looks yummy! Fridays are always a challenge for me and today I am stopping for lunch with my friend so will have to do a salad or omelette as I don't think this little local diner will have unbreaded fish. Hi Teresa hope you're getting all your packing done and I hope you have a wonderful trip and safe travels!! ![]() Well I need to get going here but just needed my "fix" for the day while I was having my coffee. Have a great day everyone!! ---D Last edited by Denise78 : 02-29-2008 at 06:47 AM. |

After work
So far today i had:
AM: Blueberries and a peach Mid: Kashi cereal (plain oats) with FF milk. Whey drink Tonite its salmon and veggies, snacks unknown, the same ol im sure. Today at work someone brought in 5 pizzas, I did not even go near the area. That so nice to hear about snow - it got down to 65 on Thur. and these people are freezing , wearing winter coats, cmonnnnn... D & C - your both seeing your sons - that nice - C - how far is the campus ? Your weekends look way better than mine so far - the dreaded yearly condo meeting is Sat. am-now there are only 10 units here but there will be lots of complaining, whining, and so on. I am on the board. Last year one owner was so bombed that it really got ugly-I had to send a letter not to come loaded to meetings anymore ! BF knows im on a diet but thats about it - I do better the other way. Depression- Yep, ive been on all those weight gainers, the only one I did not gain weight on is Prozac. My neighbor is on a new one called Cymbalta, i may check that one out-don't know if its a weight gainer. He says he feels way better - he has health problems too. The article said yes, eat your eggs - who knows - if you believe all that stuff about certain foods either way you would go crazy. I believe 10 a week was just fine. Im going to take some hard boiled eggs to work next week. The nutjob left work at 900am today, that was nice - the lady who has to share the office with her was happy as now she could talk to me....if she speaks to me when nutjob is there then she has hell to pay sharing that office with her. |

Back from the gym
We went to check out the gym today. I really liked it!
There were 6 machines right now, 4 more coming in next week. No running at all, everything is sitting down, which was great for me. Only one machine I had a problem with, the leg lifts, and she said I could skip it or go slow on it and build up to it. Everything else I could do, slow but at least I could do them. Each machine targeted an area of your body, arms, back, legs, waist, butt, abs, etc. In between each machine is a step that you can walk in place or jog on for 1 minute. It is bouncy so low-impact on your knees and feet, thank goodness. Just to warm you up and keep you moving before you go onto the next machine. There is music playing and a cd that announces when it is time to move onto the next machine. You choose how many times you want to go through all the machines. We did them each twice today and I can feel it in my arms. Good workout. I just want to make sure I am not in pain tomorrow from this before I commit to it. But otherwise, I loved it! She said a key is only $10 deposit and we would get the $10 back when we returned the key, so not a bad deal and then we can go whenever we want. All in all, I was very pleased and think this might work for me since I can go at my own pace and it is not long on each machine, short reps, and then right onto the next machine, and like she said, if one machine gives me trouble, I can skip it and do the others. I knew I would have the most problems with my legs as I cannot lift my right leg up that much due to the MS but maybe with time, I can work on that. Maybe this will even help my MS, strengthen my weak limbs, so it might be good for me in the long run, in addition to helping me lose weight. I can only hope! TGIF!!!!!
so another good day. had ck wings & a cheese stick for dinner as I was too pooped to cook when I got home. did stop at store on way home & bought my chicken & some veggies. am going to make one of the yummy califlower lc dishes & get that in the fridg to use w/my protein during the week.
yeah I laughed myself silly (well sillier anyway) when I read that about the eggs. here they found out they have stuff that is even good for your good cholesterol.....these researchers are gonna drive us crazy!!! they did that on my beloved coffee a couple years ago too. & on the metal cookwear I like--decided after 10yrs that the amount of metal that went into the food wouldn't add up to anything to do damage. and on & on the circle goes. I enjoy eggs alot as they can be used in so many ways. if it bothers you leave a few of the yolks out in the frittatas & quiches etc. have some good recipes for those that I will pass on at some point too. love 'em cause they reheat so well. glad to hear that the gym seems like it will work for you D!! you sure can't beat their prices & set up! well it's after 8 so I need to join dh in livingroom as he's whining he wants to sit w/me & watch some tv LOL they can be like kids! I'll be back in the morning w/my coffee |

Glad to hear you had such a great day Corrisann. I am thinking those chicken wings sound really good!
![]() I made myself a low-carb crustless quiche tonight. Very quick and easy recipe, although I omitted the ham because of Lent and I used zucchini instead of spinach or broccoli. 1/2 lb chopped ham 1 c shredded cheddar 1 c shredded mozzarella 1/2 c heavy cream 1/2 c water 5 eggs 3/4 cup chopped broccoli or spinach salt, pepper, dill, dry mustard to taste Sprinkle cheeses in large quiche or pie pan, lightly sprayed with PAM. Put ham and WELL-DRAINED spinach or broccoli over cheese. Beat remaining ingredients and pour over top. Bake in pre-heated 350 degree oven 30 min. Serves 4 @ 3 carbs, trace fiber, 499 Calories, 40 fat, 31 protein It was nice that I could have 1/4 of the quiche for supper. I think I will like it even better when it is cold and would have loved to have ham or smoked sausage in it too but it was less fat and calories without the meat so that was good. Today's menu: B-scrambled Egg Beaters w/salsa, coffee L-cheese omelette, sm salad w/ranch dressing, ice tea (restaurant) S-1 cup canteloupe chunks D-1/2 cup cold tiny shrimp w/dab of ketchup and horseradish, zucchini quiche, lettuce w/low-carb dressing I enjoyed the canteloupe so much. I've been reading YH's menus with all the fresh fruit and was just craving some. 13 carbs but I was pretty low in carbs in other areas, so it worked out okay. I was on Lexapro and then I think it was Zoloft...gained too much weight. Went on Wellbutrin but then started reading about side effects of seizures, psychotic episodes and decided I would rather be depressed than risk that! ![]() YH, way to go on passing up the pizzas. ![]() Tomorrow is weigh-in for me. Keeping my fingers crossed for a good loss ![]() Have a good night everyone!! --- Denise Last edited by Denise78 : 02-29-2008 at 05:42 PM. |

Hi, All--
Gosh, you gals have sure been coming up with some good sounding recipes lately! The chicken and the frittata sound good enough for me to want to try to cook! ![]() Denise, so glad you enjoyed the Curves! I know it will be fun for you to go with a friend; a couple of mine go and have really liked it, and it has helped them get into better shape, and feel better, too. And re depression--exercise does help that, at least partly. I think depression goes hand in hand with just being female, though, especially when you start to hit menopause. A friend of mine says it's a miracle there's a woman alive past the age of 50! ![]() Those anti-depressants just made me way too sleepy, so I just put up with it. I notice I do feel better on the days I get some exercise, especially when I go to the gym, and then if I can go for a little walk in a beautiful place. YH, I have plantar fasciitis, tendonitis, and neuromas in my feet. I have inflamed tendons in various places all over due to my spondyloarthritis. Over exercise makes everything worse; I have to tread a fine line between rest and mild exercise. But we do what we can! I was 25 and dh was 44 when we met at a chamber music concert on the Berkeley campus. So that's one reason we still go to a lot of chamber music. ![]() Glad you remembered to try the Ambien. But doesn't the CR make you sleep a lot longer? And congratulations on passing up the pizza! That's super-human, beyond human capabilities! ![]() You gals are all doing so great this week--Congrats to everyone! Teresa |
