So here we are at the 23rd already...WOW!!! These hours are just sucking up my life!! This next week is good as I have Christmas Eve/Day & New Years Eve/Day off!!! And both food situations are not bad in either place as none of my family does the huge overeat thing & the place we go to each new years weekend they are health nuts & the little food you do get is all low/no fat no cholestrol no flavor no taste stuff so no chance of over doing there LOL!!! So after work today I am free for 48hrs. My db & sil are flying in from WY tonight. So the next 2 days will be very busy but fun.
Kathleen I've seen the Rachel Ray show several times now at my clients house (on full volume....ouch!) & she uses the ww pasta all the time now. Talks about how the ww nutty flavor actually improves the flavor of your dishes. I thought that was interesting. I am making 2 big pans of lasangna for Christmas & am using half regular & half ww cause that's what I have in the cupboard. Glad that you are home Teresa!! Things mainly seem to flow more smoothly at home! Hope your dh is feeling better! My dh has a job & will start Jan 2nd. So we are happy with that. It's not all he wanted pay wise but the benefits are good & in MI you are just happy to have a job. Odd thing to me is that they get paid once a month???? What's up with that?? So Jan will continue to be tight as there will be no unemployment & no work pay checks just me.....will be difficult to get the hang of that in ones budget.... well gals I must run. You have a very nice Christmas with lots of family & friends surrounding you!!! |

Well, here it is after the holiday and I'm wondering how y'all are doing? Hope you gals had a very nice Christmas. We had a very quiet one, spent the day reading and sitting by the window, then went out for dinner by the water. It was very nice, and I swore it was the last meal where I ate dessert and other carbs. Now I really have to suck it up! And that's going to be hard because we have various relatives visiting all week and will be having lots of dinners out again. But it has to stop somewhere! I have just gained back too much!
So I went shopping today and loaded up on meat and cheese and did okay today even tho we ate out. I have gained back more inches than lbs. and my feet are acting up badly again, so I think it's the carbs that are causing part of the inflammatory response, and/or the weather. I felt better in Palm Springs, but I guess I have nothing to complain about compared to what you're getting back in MI Corrisann! Hope you're not freezing! Glad your dh's job begins soon; that is unfortunate (and strange) that they only pay once a month! Hope he likes the job! And hope you are surviving the long hours, Corrisann. How was your visit with your db and sil--had it been awhile since you had seen them? Kathleen, how did your Christmas go? I imagine you had all the family there? I know everyone is still busy with the holidays, but I just wanted to report that I have successfully made it back to induction, more or less, and the weight is starting to come back off! Yay! Which is amazing, since we've had visitors for 3 days, and more coming for the next 4 days and we've been eating out constantly. Fortunately, they are not big eaters, non dessert eaters, and that really helps! And I am relearning how to just say no to bread and dessert! ![]() Hope you all will be rejoining me soon! Welcome, HoneyBera! Good to have you with us! And congratulations on your amazing weight loss in a little over 1 month! ![]() Wish I could do half as well! We've all been off plan a bit since the holidays began, but we're getting back into it now. I gained back 7 lbs, but have gone back to induction the last few days and have got some of it back off. Is this your first time on Low carb? Are you still on induction, or what plan are you doing? We find it helpful to post our menus most days; it helps us stay on a plan, and encourages one another. When we all get back into it, we do a mid-week weigh-in on Wednesday, to keep us accountable. Of course that flew out the window with the holidays! But we will all be starting back again after New Year's I'm sure. Hi, Corrisann--good to hear from you! Sorry things are still not going well, diet-wise, but I bet you'll re-enter the diet stream after New Year's when things have settled down. We mustn't give up or we'll be right back where we were last summer--no, no!
I am pleased to report that I have taken off 3 of the 7 lbs. I regained since Thanksgiving, since starting induction 4 days ago! It helped that I went to the store and brought home a lot of lunch meats and cheeses, to be sure I had sufficient snack food on hand. I thought I was sick of eating so much protein, but once I got back into it, it's OK, and actually, I'm starting to feel better, more energized and my shoulder and arms aren't hurting as much.HoneyBera--How are you doing, today? How's it going on induction--what are you eating? Kathleen, how is the new job? You did start already, didn't you? Is your lodge having a New Year's party? Hope you are doing well. Teresa |

I haven't been "off" the plan since I started! I went in for my yearly physical for work (bus driver: Commercial License) and FAILED the test! I had a +1 sugar and a +1 protein in my urine, and they will not issue a Medical Card if those readings are present. The doctor performing the physical informed me that I had two weeks to change this finding and lower my blood glucose to under 200, and to get those results verified by my own physician, OR ELSE they would be forced to notify my employer and revoke my driver's license! And that is my livelihood! And I'm the only breadwinner in my home! A home with a mortgage!!! I was told to go home (I was on vacation the next week) and see my own doctor and get the sugar (and protein) under control, and I had but two weeks to do it. This was the day before Thanksgiving (11/21/07 Wed.), and I was at work (I live at work during the week and then commute 100 miles home on the weekends). I was so bummed out that I just sat there at work, paralyzed with fear, through Thanksgiving and the next two days, my entire (and now inappropriate, high carb) dinner defrosting in the front seat of my pickup truck. I couldn't even have the cranberry sauce! But I also remembered that I had heard somewhere that Atkins can help lower blood sugar, so, in total desperation, I began Atkins, or at least "Atkins" as I remembered it when I tried it in 1974. First off, I had some eggs and cheese handy, and so made myself an omelet. Yum. And I got a Protein Style at In-N-Out Burger! And there's always rotisserie chicken at the store! I was a person grasping at straws! ![]() When I got home a few days later, I immediately got online and began to read everything I could get my hands on on the internet re: Atkins!!! I needed to understand just how to do this!! Induction, OWL, all of it!! Was I doing it "right"?!! I got the book off Amazon. I ordered Splenda Liquid off EBay. I have even bought ThickNThin not/sugar and not/starch from netrition. I can hardly wait to try them tomorrow when I cook ahead for the next week! If the "gravy" is half as good as the Liq. Splenda, I'm in heaven!! I only get home once a week, and otherwise I live in a travel trailer [albeit a nice one] AT WORK for free, but with no running water or electricity [that I don't provide myself]. I hand-carry the water and run my generator for electricity. BUT I still managed to fry up the best darned pork chops ever last week and nuke my vegies. And I'm buying a portable Weber gas BBQ so I can grill right in the back of my pickup at work, sort of like a tailgate party. My fellow bus drivers who also "camp" at work will probably plotz when they smell the wonderful aroma of my "diet food" cooking over the flames! I do alright! The payoff? On 11/26/07, the Monday after Thanksgiving, I went in to see my doctor and throw myself on his mercy! To my absolute shock, I had lost 7 lbs!! 7 LBS!!! I was THRILLED! NOTHING BUT NOTHING had worked before. It was almost too good to be true! ![]() Then I went in to the doctor's office on Dec. 23rd just to weigh, and I weighed in at 278.9, down from 304.6!! And that is from eating chicken WITH the skin and the fat on the steaks and chops!! Plus I love vegies! I am eating spinach with hamhocks and hot sauce and losing weight! I also use FitDay - Free Weight Loss and Diet Journal as a place to post my menus (daily and religiously!!) - it helps me to see just what I've been eating, and in some cases, not eating, like enough fiber or whatever. I find that if I just eat when I'm hungry (not starving), and eat until I'm full (not stuffed), I end up eating about the right amount of calories. So I shoot for about 1400-1800 kcal/day. Good luck at the doctor's on your weigh-in. Maybe it's better that you don't weigh in too often anyway, then you'll get more used to looking at this way of eating as a lifestyle instead of a quick weight-loss diet, and you know, we can never go back! Good morning ladies!!!
I have the next 3 days off & I am sooo happppyyyy!!! Well your story gave me back the excitement I felt when I did lc 3yrs ago Honeybera. Was just amazed at how great I felt physically/emotionally, & how satisfied I felt eating all that real food!! In the first 3 months I lost 29lbs. Then I finally had my first stall. Got several lc cookbooks (I love to cook....)& started making all these new dishes & trying all the "frankenfoods"--which seemed to keep me in the stall. But I was keeping the weight off for the first time ever!! When I had my annual dr's check up I was one of the folks Atkins talked about whose cholesteral #'s went way up....so I started playing around trying this that & the other being confused with what to do now. Long story short I ended up back in the same old place with all the weight back on plus a few lbs more. My 2 big concerns now are that at 53 I'll never get this under control & will be in big trouble at 60 or will end up diabetic which is a horrible mess to be in. We were all doing pretty good here til the last couple months & I think your enthusiasim will help us get back on track!! Just listening to you talk about all the good food made my mouth water & sent the carb cravings away LOL!!!! We will be gone away to friends for this weekend. But they are the die hard healthy eaters so it is lowfat/lowcholesterol/no flavor/no sodium etc foods & you are not tempted to over eat anything that they offer....LOL!!! So it will be a good purge of my sytem so that I can get back on track on Tues. Will you have no computer access every other week Honeybera?? Teresa congrats on losing so much already & getting back on track!!!I love the protein so that has never been a problem for me, but I know you struggle with getting enough eaten. My hands are starting to bother me so I know what you mean about your shoulders & arms! Hey Kathleen---time to get back in here girl!!! Very satisfying proposition! I know! Let me tell you the week's menu! It is yummy! 1. Curried Chicken with Cauliflower and Tomato (that just sounded good to me last week as I was driving my bus around) 2. A large pot of this Hamburger-Cheesy-Cabbage-Rotel stuff called "CJACK1's Main Dish". I got it off a recipe site for low carb, but I got all "ladeedah" and threw in 8oz. of Smokey flavored Fontina cheese. OMG! SOOO GOOD! It's my breakfast every day (1 cup + vegies on top + a sprinkle of shredded cheese) , heated up in the driver's room and eaten on my first break on the road at 7am in the driver's seat (and now, with coffee, Liq. Splenda, and about a ¼c. of heavy cream (yes, I count the carbs)! Sell my shoes, Ma, I've died and gone to heaven!!). ![]() 3. Roasted Turkey Breast WITH Homemade Cranberry Sauce! WITH "gravy"! (no/starch) Who says you have to do without on Atkins?? I will have this with broccoli and/or zucchini b/c gravy is good on that, too. 4. "OK" Vegetable BEEF soup/stew - probably "stew" due to the fact I now have my no/starch! YIPPEEE!!!! (that is, HEAVY on the BEEF part, with a rich broth, but with no peas, potatoes or carrots - I will use a hint of onion, sautee it, add celery, and then tomatoes, add spices and bay leaf, slow cook it, and spinach, zucchini, and whatever vegies added at the end.) 5. Bringing back frozen fish fillets AND individual packets of frozen chicken breasts for my freezer at the trailer. I just nuke them. They turn out great, and it's quick, too. I use a lot of herbs (like, for example, dill in olive oil for the fish or this special Italian herb mix for the chicken) to top them. Oh man, they are SO GOOD that way! And I can chop them up and add mayo and celery for a Chicken Salad over shredded lettuce! 6. My Uncle Burt's recipe for Tuna-Pasta-Noodle (Dreamfield's) Salad done with Rotini, olives, red onions, celery for crunch, pimentos, Beau Monde seasoning, and REAL (Canola) MAYO! Oh drool! I know I need to go sparingly with this, but oh, man, is it ever good! 7. The Dreamfield's Spaghetti with Bolognese Sauce I forgot to take with me last week. (Although I may eat that today.) 8. And of course, my currently frozen pork chops. They are my mainstay. I MAY attempt to make Liq. Splenda applesauce to accompany them, IF I have time. Wow, with this menu, I'd better get busy! It's 10am already, and I have to leave to go back to the yard by 7pm so I can get some sleep tonight! Bedtime is 9pm! And it's about a 2 hr. drive. TTYL and have a great LC day!! ![]() I forgot to mention for all who have a WinCo grocery store near them... I found a delicious root beer named Teddy's Root Beer (diet) sweetened with Sucralose!! It's only 72 cents for a 1 liter bottle, and as far as I can see, it's ok for Atkins (no caffeine). Does anyone else know about Teddy's? It claims 0 carbs, 0 calories, and it tastes GREAT! Hi! Back from the doc's! 276.8 lbs!! That's another two off!
One thing though, I was surprised by the way I got disappointed over "only" losing two pounds in a week. Weighing isn't good for me mentally. I obsess over the scale. It's why I don't have one here at home. I mean, what's the point? Why am I weighing? To see if I've gained? Or to make sure that I don't lose to the point of anorexia? Fat chance! (No pun intended!) If my clothes/uniform become tighter again, or if they are falling off me (like now), I will know that that means I'm gaining or losing. It's not such an obsession like "weighing in" is. I will weigh in maybe once a month or so, just to see where I am, or whenever I have to see the doctor, but every week wouldn't be a good idea for me, I think. I also changed my mind about my weekly menu once I got to the store. They had these little steak pinwheels rolled up with spinach and cheese and roasted red peppers and, at 30% off, I got 4 of them. All you do is bake them (which I can do here) for 30 min. @ 350ºF and eat 'em or take them with me! My kind of last minute meal! Plus the Rotel Main Dish. And I got some blueberries and raspberries and All-Bran Buds - that + heavy cream + liq. Splenda = :-9 I also had an entire beef roast (on sale and with lots of nice fat for flavor!) cut up into stew meat and got couple of soup bones. That should make a nice rich broth! AND I also bought a turnip! For my stew. Interesting. I have never eaten nor cooked a turnip! I'm going to cook a couple of strips of bacon, and then in the grease left, brown the meat and then the vegies (a bit of onion, a carrot (just one), celery - you know, a mirapoix, the aromatics), and then simmer that for hours with a bay leaf and some seasonings, like thyme. At the end, drop in some turnip, lots of cabbage, a can of Rotel tomatoes, and after that simmers a while, a handful of spinach leaves. And voila! "OK" vegie soup! Or thicken it for stew with my new toy, no/starch! I'll see how it looks at the end and decide then. But I may have to shelve the entire thing until next weekend due to running out of time... ![]() I also got some sausages ON SALE! They are 0 carbs! I am taking the Basil/Garlic ones this week. I'll cook/nuke them over there in my trailer next week when I'm ready to eat them. Plus I'm taking "Egg Boats" (aka Deviled Eggs). I love those things! MMMMm!!! Or maybe just Egg Salad - there isn't much difference, really, except for ease of transport. I forgot to get salad (lettuce in the bag), but the grocery stores over there by work have lettuce, too. Wow, HB! You have got some really fab menus going there! You must enjoy cooking; of course, we all enjoy eating, or we wouldn't be here, eh? It is incredible to eat creamy, cheesey, high protein and lose weight, isn't it! I got into trouble this fall by starting back to eating bread and dessert, and then cereal, and it sent me into a 6 week binge, that's how I gained back my 7 lbs. That doesn't sound like a whole lot, but it is when you're short, older, and small-framed, and it took a long time to lose. Low carb is the only way of eating that I've ever been able to lose weight on, so I know I have to stick to it forever! And it really lowered my triglicerides in the past, plus increased my HDL, and helped lower my elevated liver enzymes. What with controlling blood sugar, why would we ever go off of it! ![]() So glad you're really enjoying the food, HB. And it's so great you're planning ahead preparing meals, that will be a tremendous help. What kind of a bus do you drive? Corrisann, glad to hear you got a few days, off--you deserve it! And good thing you're going to be with those who are health-concious; that will give you a good start to the new year and getting back on track! I ordered these trees before finding Atkins. These white "donut" peaches are so sweet, are only 7.5 carbs each, and peaches have 4 fiber, so 3.5 NET CARBS per peach...not too bad. Safeway carries them only in late June, but man oh man, is it worth the price. I think they have organic over at Whole Foods, but we are talking really pricey!($5-6/lb!!) And from what I understand, home grown organically are just the best! I also grow these little mini-tomatoes (about the size of grape tomatoes) in my garden. They are a very pretty orange color, and so sweet and non-acidic! I eat them right off the bush while I water the rest of the garden. My house is in the hot-in-the-summer Central Valley (San Joaquin), so the tomatoes grow like crazy! Everything does, really. My house is where an orchard used to be, and my dad (a farmer himself) gasped when he saw the dirt my tract house sits on! He said, "My God! That's Hanford loam!! That's the best soil there is!!" So I feel fortunate indeed. Now if I could just get my son (who lives at home) to water when I'm away at work for a week at a time... I may just put in an automatic watering system and permanent raised garden plot along with the peach trees. I CAN'T WAIT FOR SPRING!!!! ![]() ![]() ![]() My brother owns 40 acres of almonds, and farms more (does it for a friend)! When he harvests, they always take "samples" for quality (didn't this year, darn it, but his wife got after him about that [she likes the almonds, too]), and he assures me that next year [Fall 2008 ], he will save some for me. I can make my own "almond meal" or "flour" in the blender or food processor. And I could also make some snacks for work - homemade, of course. I can glaze them using liq. Splenda and/or not/sugar. I'm toying with all these ideas for later when I have my recumbent trike (isn't it cool?) landstrider trike.jpg up and running on a daily basis (now it's just too cold and rainy) plus walking daily for 30+ minutes back and forth from the bus and light rail, and hence, have more carbs to "spend". Boy, that's going to be hard to get used to. It just seemed to turn 2007; I was still writing 2006 sometimes, or 1984 or something. ![]() I've had a really crazy week with lots of company and a lot of stress trying to handle the grandkids with no parents around and not being in any kind of shape to do it; man, am I beat. So I went off the plan and ate a piece of apple pie dh brought home for dessert for everyone last night. But I haven't been eating a lot otherwise, so I hope it doesn't start me on a binge again. It's surprizing to get your tastebuds back, isn't it, HB! Yes, it does happen--especially if you don't go off like I did and start eating sweets again! How wonderful to live where you can grow your own fruit and vegetables! What a great feeling to be able to eat your own fresh grown produce! And who doesn't love to have fruit trees on their property. They are so beautiful!It's so great you love to cook, too--we're all going to get inspired by your delicious sounding recipes! Low carb doesn't have to be boring! I get really bored with it because I don't enjoy cooking, so I just eat a lot of plain meat, anything that can be cooked quickly in a pan. Today I've had two microwaved hot dogs; but hey--hot dogs are a no-no on most people's lists, and I love 'em! Hope you all had a fun night last night, and a lovely first day 2008. T. |

![]() What a relaxing and revealing day off for me! I have been busy puttering around the old trailer today (it's a 2004, 30' long and has wood cabinets...poor little me!) It's like a cute little 1 bdrm apt. I've been battening down the hatches anticipating the coming storm on Thurs.-Sunday. It should be a doozy! They say it's going to be the worst storm in 2 yrs.I had a wonderful morning! While I was relaxing in bed, I rolled over on my back. I was just laying there, looking at the ceiling, quietly thinking, and all of a sudden it hit me! I was ON MY BACK! AND I COULD BREATHE STILL!! I have not been able to do both things at once for several years now!! While that may not seem like much to anyone else, to me it meant the world!! I was so happy!! If my generator didn't run out of gas (hence, no electricity and no computer), I would have written to you earlier!When I used to roll over onto my back, it was only "in transit" to getting to the other side. If I paused on my back, the sensation was like suffocation, the weight of my own stomach like someone heavy straddling me, and I just couldn't breathe!!! This morning, I just laid there, breathing fine, pondering the day ahead, relaxed. What a miracle this diet is!!!! Then I got up and ate a med. rare 7oz. steak pinwheel (with spinach and roasted red pepper and a glop of sour cream) to my head!! Then I had a Cauliflower-Broccoli-Carrot Medley WITH butter. (I only had a ¼c. of carrots, but it was so nice to eat them again.) ![]() L- 1c. Dreamfield's Spaghetti w/1c. (lotsa meat) Bolognese Sauce & Olives + "Grey" Zucchini, nuked until the spaghetti was hot and the zucchini tender. Then I sprinkled Mexican cheese and parmesan + 1t. olive oil on top. =9 S- One of those "diet" Root Beer "floats" with ¼c. heavy cream mixed in and poured over ice. (GREAT mouth-feel! It's like the mouth-feel of the whipped cream @ Starbuck's!) D- B/S Herbed Chicken Salad w/cubed "herbed" chicken, fresh spinach, grape tomatoes, bagged lettuce (gotta count the carbs in that one), cucumber, feta cheese, a tiny bit of red onion (like 1 t.), and 1000 island dressing! I buy my boneless/skinless chicken in individual bags at Costco (they come in six connected bags, 2-3 breasts in each bag) and freeze them, and then just defrost a bag or two at a time. I put the chicken on a microwavable plate (Corelware), sprinkle "herbs" (from Safeway - they have all kinds, but I recommend DeLallo) over the raw chicken, cover it with PressN'Seal, and nuke 'em for 3 min. on one side, turn the breasts over, and nuke for another 3-4 min. until done (no pink, but still juicy). This, to me, is INSTANT FOOD! I keep them on hand in the fridge. Here are some of the things I've done with them: 1. Mixed with mayo (+ celery + Beau Monde Seasoning + fresh cracked pepper + maybe some onion?) = Chicken Salad (with or without lettuce) Variation: add mustard. 2. Put on a plate with ¼c. of Alfredo Sauce and heated through, sprinkle with parmesan...DEEELICIOUS!! 3. Put on a plate with ½c. low carb spaghetti sauce + mozzerella cheese + extra spices sprinkled on top, nuked for a min or two, topped w/ parmesan. Ooo, YUMMY! (Maybe mix it up with some low carb veggies? ½c. is a lot of spag. sauce...leave none to waste!) Drizzle with a tiny bit olive oil for richness.4. Pan-fry a low carb tortilla in a bit of oil (canola) on both sides until crisp and brown. DON'T BURN IT! Put it on a plate. Slice up an herbed ch. brst...put shredded Mexican cheese on the tortilla, Mexican Seasoning, and the chicken. Nuke it for about a min. for the cheese to melt and the chicken to warm up, fold it = CHICKEN QUESADILLA! And these are SO good!! Someday, I'm writing a cookbook! ![]() OMG! I've got to go to bed! But before I tried it again (b/c I hated Atkins, not realizing that it truly works!), I had tried the high carb, low fat routine, and nothing budged! I even tried the Anti-Diet routine (Overcoming Overeating) and learned to recognize my own hunger, which was good, but I gained 50 lbs! Now this Atkins diet works, and all I have to do is eat meat and vegies, and my challenge is to make it all taste great, which isn't hard on this diet! Hey there ladies!! Glad to hear you are doing so well Honeybera!! What a grand thing to be able to do something important that you haven't been able to do for a very long time!!!!! Really encourages one to stick with it huh?!?!! Your menus all sound good. Do lots of chicken breast & will most certainly do it in the micro w/the press & seal. Don't usually like my meat cooked in the micro.
Hope the holiday stresses are all behind you now Teresa!! Eating just the plain meats is a real draw back for you. Have you checked into getting any of the lc prepared frozen meals?? I have a client who's husband lost weight a couple years back on Atkins & since she has MS & doesn't cook they buy the frozen meals. Found them on line. Am trying to remember what the brand is.....I'm sure there are many choices. I started back today. Weight this a.m. was 241. Not as bad as I'd feared. Did fine w/my eating today. The mind set is in place plus as you said Teresa my body has been telling me it's tired of the overload of carbs. Even exercised for 15mins this morning. My client is sick today & I fear she will end up back in the hospital, so my long hours may be ending. It kind of poaches them in their own juices. Living in a trailer without any utilities or hookups of any kind can be challenging, and I found it's a slick way to cook chicken for other dishes. I used to make sandwiches out of the "chicken salad" recipe(s), and you can make any variety of changes to it, like adding curry to the mayo, and/or raisins or nuts (like walnuts for crunch), etc., but now the bread is out! So I still make the b/s chicken breasts, but now I just wrap them in lettuce leaves or make a salad of them. It's still heavenly!! I'm making myself hungry! I'd better go have my dinner salad. Corrisann, 241--that's not bad at all for getting thru the holidays, congratulations! I have read that it is a successful weight loss technique to alternate eating carbs at certain times along with lc, because it jumpstarts your metabolism. I am surprised I didn't gain back more weight than I have for overeating so much over the holidays. I lost 4 lbs. last week going back to lc, but then gained one back after being off again the last couple of days. But now the company is all gone and I'm ready to get back to it! BTW, what is a Chinese pork chop? That sounds yummy! Pork is my current favorite meat, and one that I can easily cook. Love pork steaks with all the wonderful fat in them (gross, but love pork fat!), and you don't have to do anything with them to make them taste good! I get tired of chicken, but I have to say, HB, your chicken breast recipes sound really good! Hi, All--
HB, you and I are getting thru this big storm OK, I hope! Our electricity just came back on after being out over 12 hours. We fortunately have a gas stove so we could still cook, but we were cooking in the dark! Oh well, no restaurants were open all day; the entire city was out, so I had to cook! I ended up making a couple of things that were tasty to me, using real cream and mushroom soup with curry powder and hot spices. Chicken for lunch and pork steak for dinner. Fortunately I have several cans of green beans on hand, so I think I stayed pretty well on low carb, although the soup has a few. I enjoyed making something for a change, other than just at breakfast, even if it was simple. HB, I think you are inspiring me to try to do some cooking! I just wish it didn't hurt my feet so much to stand at the stove. I would love to cook more often if it wasn't painful!HB, it is weird how just when you start being successful at losing weight and getting healthier, everybody wants to put their 2 cents in, even when they haven't achieved any weight loss, and don't know what they're talking about! It never ceases to amaze me how many folks out there continue to spout old wives' tales about the dangers of Atkins or low carb when they haven't done their research or tried it themselves. Over the years, I have tried just about every diet out there, and even had ignorant reservations about Atkins myself, until I tried it in desperation and discovered it was the only diet that works for me. Of course, the problem with all changes in ways of eating is to change old bad habits permanently! So anyway, just ignore them. Many of us on low carb have learned not to tell anyone, and lo and behold, they rarely even notice what you're eating! I missed the fact that you were having a storm...hope you are all back together & that you weren't having to drive in it HB!! I did have to take my client to the hospital on Thurs. So I am back to my regular life--which seems pretty strange after all these many weeks. Enjoyed hanging out with ds all day yesterday & we take him back to campus today. HB I got so tired of folks hasseling me about Atkins that I went to just saying low carb & that helped alot but still got remarks & went on to just saying oh I'm eating lots of veggies & lean proteins & the comments pretty much dropped off. And as Teresa said people didn't really pay any attention what I was actually eating. But I too just wanted to scream I'm 200 now not 239 so what on earth is more unhealthy about this lifestyle then when I was shoveling whatever into my face??? But I didn't yell at anyone. But like I said earlier my #'s had went up quite a bit when I went in for my annual check up so I do need to do it with the leaner foods this time--which is ok cause it's still real food & very tasty!!! Teresa I made this great pork loin roast yesterday that was wonderful & you only have to stand a few minutes to put it together. Take a 2lb loin & make some slits in it & insert slices of garlic in them. Make a paste of 4tsps olive oil/1tbsp rosemary/1/2tsp salt/1/2tsp pepper & rub it all over the loin. Put in your roasting pan & pour 1/2C dry white wine in. Bake at 350 for an hour & a half. Baste with the juices a few times while cooking. Was great. Steamed some cauliflower to go with. Was so good the guys almost finished it off so no left overs to speak of. Well my moms on the phone so I must get a move on |

Probably a lot leaner than the pork steak, too. And much as I love fat, I don't seem to have lost weight since eating the pork steaks, so it could be the extra fat calories holding me back. ![]() Wow! I just took a heck of a fall! One of my dogs was about to pee on one of our blankets that had fallen off the couch and onto the floor, and I was running to pick her up before she could. I tripped over my ds who was sitting in a chair, didn't see the problem I was rushing to behind him, and he didn't move out of the way fast enough, and WHAMMO! I went flying across the room, and down I went onto my left knee!! HARD! Man, I am 61 yo. That is a jarring experience! I think I must've bruised my knee, and my lower and middle back hurts a bit, but I'll be ok. ![]() I was just about to start cooking. I've got everything, but now I'm hurting. The worst part is, I haven't eaten all day long! Woke up at 8am, gathered up my stuff and threw it into the pickup for the trip home (dirty dishes, food from the fridge that I'll need to cook, dirty laundry from the week away from home). I rushed the 100 miles over here only to find my ds hadn't done his chores all week (this is nothing new) and that the ants are still here and have moved into my freezer, taking nose-dives into my ice caddy. I guess they only get that far and then freeze, doing a swan dive. SHEESH! So, instead of eating something, I cleaned up the kitchen for 2 hours. Put the dishes in the dishwasher away, loaded up another load, picked up the garbage the dogs had strewn all over the floor and ds had left there, took it out to the trash, and THEN had to go grocery shopping. I did get some yummy stuff, and did make it home before the torrential rains hit. But now I've fallen and my knee is stinging. I am staaaarrrrvvvving!!!!!![COLOR="Red"]BTW, I could not find cranberries of any sort anywhere, and I looked!! Finally, today, at a little upscale market here in the Valley, I found some [COLOR="RoyalBlue"]frozen[/COLOR] cranberries!!! The reason this is so exciting to me is that I love cranberry sauce[/COLOR] and the day before Thanksgiving (a day that will live in infamy!) I had two cans of Ocean Spray Whole Cranberry Sauce sitting in the truck with my turkeys...and I couldn't have canned OS Cranberry Sauce anymore (full of sugar and carbs!!) Once I got the hang of this diet (you can have cs but you have to send away for Liq. Splenda and not/sugar first, and homemake it), there wasn't a cranberry to be found in the entire Bay Area, fresh or frozen! "The season had passed.", I was told. But today I found 8 bags of frozen cranberries, and I bought them all! Now I can take them out over the next year at my leisure and make one batch at a time to have with my turkey! I love it when a plan comes together! ![]() I think I'd better have some scrambled eggs to ease my hunger. I have lots to say (so what else is new?) but I'd better go lay down and rest for a bit. ![]() What a night! I was in such pain with my knee!! Seems my upper and lower spine is ok, as are my hips (the overnight "resting" did that), but that left knee really got it! It was all swollen up, but not bruised, thank God! It feels like a bruise, though...so tender! I'm going in to the doctor's this morning, just to be sure. Yes, I did have to drive in that rain ALL DAY, in a huge 40' bus, and the wind coming in gusts! T., I heard you had some pretty strong gusts at the coast as well!! They closed down the SamTrans (San Mateo [CA]Transit) route along the Coast Hwy. for a bit due to the heavy rains/winds, and some routes up in San Rafael, too, due to the waves topping the retaining wall and going all over the street! It knocked my heavy bus around, too, and on my break, I got totally soaked (rain dripping off my uniform shorts [I wear shorts year 'round]) as I stood at an intersection waiting for the light to change. I had to urgently use the restroom over at Starbuck's, some 250' away. I know that doesn't seem far, and usually it isn't, but that day the rain was coming down in howling gusting sheets SIDEWAYS, right at me, and I had to just stand there as it pelted me, soaking me! I had to drive from 10am (my last break time) until 11am (my relief time) drenched to the skin, even my coat and hat soaked through! Also, my defroster wouldn't work, so if I used the heater, the windows fogged up and I couldn't see to drive, so I sat there wet AND cold! BTW, it also wouldn't go over 30mph. I called it in for a Bus Exchange for the next driver. What equipment we have! ![]() On my second half (I work a split shift), they gave me a leaky bus! (2nd day in a row!) All my express passengers complained ( "These seats are WET!!"), but what could I do? The rain was dripping onto the driver's area, too, and was running down the inside of the windshield. What a day!But what had me really scared was my trailer! My "neighbor" at the yard said her rig (a pickup and camper) was REALLY rocking, but my trailer seemed to weather it well, only rocking slightly during the biggest gusts. The only thing is, when I got here (home), my "briefcase" (a pocketed bag made of heavy backpack material) was soaking wet inside, and it only stays inside with me in the trailer. All my important papers were damp, including my mortgage payment book! The only way I can think of that that could've gotten wet was in the trailer!! I need to check that immediately when I get back over there!! If that's the case, it'll cost me a bundle! And that's a bundle I don't have right now. ![]() I think all this bad luck and worrying is getting to me somewhat. I did something I haven't done in a long time: I got up and ate in the middle of the night. I had some chicharrones (fried pork skins - 0 carbs), maybe 3/4 c. I also drank lots and lots of water. I had to be careful there were no ants in the water. They are all over my water dispenser on my fridge! And I even found a couple of scouts crawling on me in my bed! UGH!!! They are everywhere, just looking for trouble!! What a crappy night! Here is me yesterdayJanet in kitchen with Atkins food 1-5-2008.jpg, and this is what I managed to eat all day (steak and scrambled eggs), except for an Atkins Advantage Bar, and I ate just before I went to bed, due to that awful fall. Not a good day...but today is better! I have a 6lb. roast on the Showtime rotisserie, and does it smell good! X-rib roast sprinkled with Pappy's Seasoning - got it for $1.89/lb yesterday. I think I will do this with a roast every weekend! I'm also making that Rotel thingy with hamburger, sausage, cabbage, Rotel, and smoked Fontina cheese. Oh Lordy, it's good! I'll give you the recipe here if you'd like. Plus a quickie Chicken Stew with my new not/starch...I'll let you know how it turns out. If I have to, I'll buy a rotisserie chicken at Costco today or Monday. Teresa, can we use canned mushroom soup on Atkins??? That would open up tremendous possibilities for me. Chicken, beef and pork in mushroom "gravy"! YUMMY! I guess if you count the carbs, anything is possible! And re: your feet hurting while standing and cooking. Orchard Supply (or any hardware store) should have those cushioned rubber mats for the stove and/or sink areas. It might help. ![]() And MI CHICK, ty so much for that pork roast recipe. That sounds SO GOOD!! And easy too! And that's what I need!! Good, easy, and portable for later! Wow, HB, you sure have had a rough time the last few days! I sure hope your knee is OK! No wonder you had to snack in the middle of the night! But great going that you stuck to lc and didn't go on an all-out binge! That's a cute picture--is that at your house? As usual, your recipes sound delicious. What is Rotel? My weight has stuck the last few days, I think because I have not been strictly counting carbs, just going ballpark, and eating a little fruit. It looks like I better cut that out and start measuring veggies if I want to see a drop. And probably cream of mushroom soup is not the greatest thing to be using. I only used 1/3 of a can, with heavy cream, so I don't think it was very many carbs, but it obviously did not do me any good. Corrisann, what did you do this weekend? How's your weather? We are still having some rain, but not heavy; it's just depressing. Wish I were back in Palm Springs! This cold wet weather has made my inflammatory arthritis kick up badly and I can hardly sleep. It's enough to make me want to eat everything to soothe myself, but I know that will only make it worse. Starchy food makes it worse, so I have to stay on the program. ttyl, T.
