Hi everyone,
I'm on vacation in ME, enjoying the company of the sister and her family. I have been sticking to plan but have indulged on peanuts and lc ice cream so the have gained back some weight but not worried about it. I need to keep track of carbs better but At least i'm sticking to plan and not eating sandwiches and junk food. Mary, keep those recipes coming I really enjoy them, so does the family. I don't really have the money or the time to put the kids in a YMCA program since I am running to several different homes taking care of several different Grandmom's LOL. But they have lots of friends and are keeping busy. PLus they get to go to the shore for 2 weeks every year. Touch back later...have a good Fourth.

Hope everyone is doing well. I am pretty much on track these days except for the occasional handful of nuts. I am almost down again to my low of 265lbs. I do get tired of the fact that when I think about it I could have been down another 70+ lbs if I just wouldn't keep regaining the same 5-8lbs each time I screw up.
Anyhow hope everyone had a great Canada Day and Fourth of July celebration. |

Here's a recipe for you all today. I made it this week-end and I love it.
Hope you are watching those carbs to, I have been off alittle with mine but am trying really hard to get back to eating like I need to be. Hope you all are staying out of this heat where you are, this heat wave has the temps up over 100 in alot of places, but really that is the norm here sometimes where I am, really we mostly stay in the 90's here, around the middle or high 90's. Florida Cucumber Salad ________________________________________________ Ingredients 2 cucumbers, peeled and seeded 1 red onion, thinly chopped 3 tablespoons green onions, chopped 1 tomato, sliced thin 1/2 bunch cilantro 2 tablespoons raspberry vinegar 2 tablespoons extra light olive oil pepper to taste Preparation Chop and slice vegetables and combine in bowl. Pull cilantro leaves from stems and toss with vegetables. Drizzle with raspberry vinegar and olive oil. Add pepper to taste.

Hi Ladies,
Great to be back. It was a much needed vacation. Got on scale this morning and down to 220. I can't wait to brake this 220 mark. I would really like to be at 200 by mid Aug but not sure if that is possible for me since I seem to be such a slow loser this time around on Atkins. I've been feeling like giving up the last few days. Yesterday a man asked me when i was due right in front of my husband, I almost bursted into tears. Don't worry I really won't give up just feel like it... Not sure of menu since I just got back and no one food shopped while I was gone. B: Probable eggs if there is any L: Tuna not sure on what yet. D: Chicken Marinara and some veggie Mary, Thanks for the recipe sounds really good. |

Weighed in at 220.
Thought I'd ck in..been very busy packing up my house then running to grandmom's to pack up her house so we can fit our stuff in....very nerve racking. I haven't been staying strictly on plan...mostly but not strictly. Yesterday, DH took me to dinner at Morton's Steakhouse. I got crab cake (no fillers) and scallops wrapped in bacon, veggies were spinach and mushrooms and potatoes sauted in onions and bacon. Today I had a chicken sandwich from McD's, i felt like i was going to pass out it was so hot out and grandmom's house was so hot upstairs. Well more packing tomorrow...check in later. |

I am so happy. I cut out salt for just two days and am down 9lbs. I can not believe how much salt was affecting my ability to lose weight. This is my lowest weight ever. 262lbs.

Well I certainly do recommend it. Funny thing is I didn't really think I was having so much sodium at all. I didn't drink any crystal lite nor add salt to my eggs. There was some in the soya sauce I used to marinade chicken in but not as much as my usual choice of seasoning. I still managed to loss weight. Oddly enough since there wasn't as much salt on my chicken I had no problem keeping my portion reasonable. Usually chicken is something I have real problems not over eating. I now wonder if it was the salt, hmmm.

Please be care ful of all the salt in foods, it will swell you and keep you from losing.
Eat fresh foods and if you have to have salt on them use the mortons lite salt, it has half the sodium as regular salt does and you cannot tell the difference. Its unlike the no-salt products. |

How much sodium does sea salt have? I love sea salt. I'm maintaining at 220 but just not losing and I know it's my own fault, i haven't been eatting clean at all and I need to get back on track..it's just hard with everything going on right now.

Hope you will like this recipe, i only made it once and really like it alot. I really need to start cooking again like I use to do because i eat better when I do. But lately with my knees hurting so much I have not been doing much standing to do any cooking much.
Hope all is well with your eating these days. keep me up on how you are doing. __________________________________________________ _______ Frittata Torta (4 servings) • 1 tablespoon butter, divided • 1 cup (about 2 1/2 oz.) sliced fresh mushrooms • 8 eggs • 1/2 cup milk • 1/4 teaspoon oregano leaves, crushed • 1/4 teaspoon garlic salt • 1/8 teaspoon pepper • 1/2 medium green pepper, sliced 1/2-inch thick • 1 medium tomato, sliced 1/2-inch thick Heat 1 teaspoon butter in nonstick 10-inch omelet pan or skillet with ovenproof handle (wrap handle completely with aluminum foil). Cook mushrooms over medium heat until tender but not brown, about 3 minutes. In medium bowl, beat together eggs, milk, and seasonings. Pour 3/4 cup of the egg mixture into pan over mushrooms. Cook over low to medium heat until eggs are almost set, about 3 to 5 minutes. Broil about 6 inches from heat until eggs are completely set, about 1 minute. Slide from pan or invert onto warmed serving platter. Cover and keep warm. In same pan over medium heat, cook green pepper rings in 1 teaspoon of the butter until tender but not brown, about 3 to 5 minutes. Pour 3/4 cup of the egg mixture over peppers and cook and broil as for mushroom layer. Slide or invert pepper layer onto mushroom layer. Cover and keep warm. In same pan over medium heat, cook tomato slices in remaining 1 teaspoon butter until tender but not brown, about 2 minutes. Pour in remaining 3/4 cup egg mixture and cook and broil as for other layers. Slide or invert onto pepper layer. Cut in wedges to serve. |

Thank you Mary for the recipe I will definitely try it. I think my problem has been not enough time to cook for us with everything going on so I haven't been eatting clean.
I plan on getting back on track once we get in Grandmom's house (this weekend). |

I'm so glad to finally have internet...been busy unpacking, repacking grandmom's stuff, taking care of family and taking care of grandmom. I'm so wiped out.
Not doing well on diet but been able to stay at 220. I think it's all the moving around, i haven't sat still long enough. |

I'm doing okay for the most part. A couple of bad choices here and there but nothing so bad that I haven't been able to get back on track. Kind of frustrated for myself as I have losing and gain the same 3-7lbs this past month. I could have been down a bunch more if I didn't have to keep losing weight that had been already lost, kwim.

I hear ya. I know if I would have stayed on track I'd be down past 220 but I think the stress is just getting to me. Though today is a new day and I started it out with a fried egg and made tuna for lunch so I am gonna try and get back on track.

2nd day back on induction
So far so good. Drinking lots of water and no soda...big feat for me.
Hopefully i'm back on track now. Darling husband made dinner tonight. Hotdogs and hamburgers, steak and peppers on cabob, and shrimp all on the barbeque. Not sure what bug got up his butt but i like it. All LC. Can't wait for left overs. |

Not so good today. I think there is something to the idea of carb fog. I put a roast in the oven around 4PM. About an hr later I am guessing I came into the kitchen and said to myself "who left the oven on?" and turned it off. About 10pm remembered suddenly that I had a roast cooking in the oven and freaked thinking I had totally burned it. Find out my mistake.
