Mary, do you have any suggestions for when you seem to retain water. In one night I went up 3lbs and the only thing I can think of is the salami I had was very salty and a handful of nuts.

you need to be careful with the lunch meats because of the salts. Stay with fresh turkey and chicken lunch meats if you can.
As for the salt it may take a couple of days to get rid of it, just keep off the salty foods and it will go away on its on. I do have some swelling to every now and then and thats what I do. If I use salt at home I use the mortons lite salt, it has half the sodium as regular salt has and taste the same to me. And I try not to eat to many salt foods at all. I stick to fresh veggies if possible to because alot of can foods has alot of salt in them. Salt is really hard to get away from completely so just try to eat less of it ok. And drink the water, it will help flush the salt out your body to.

Body Fat Basics
The human body contains two types of fat tissue: White fat is important in energy metabolism, heat insulation and mechanical cushioning. Brown fat is found mostly in newborn babies, between the shoulders, and is important for thermogenesis (making heat). Since adult humans have little to no brown fat, we'll concentrate on white fat in this article. See the bottom of this page for more on brown fat. Fat tissue is made up of fat cells, which are a unique type of cell. You can think of a fat cell as a tiny plastic bag that holds a drop of fat. White fat cells are large cells that have very little cytoplasm, only 15 percent cell volume, a small nucleus and one large fat droplet that makes up 85 percent of cell volume. How Fat Enters Your Body When you eat food that contains fat, mostly triglycerides, it goes through your stomach and intestines. In the intestines, the following happens: Emulsification in Your Kitchen When you add water to a greasy skillet, the grease forms a layer on top of the water. If you squeeze one drop of dishwashing liquid into the center of the skillet, you'll see the large grease layer immediately break up into small droplets. Large fat droplets get mixed with bile salts from the gall bladder in a process called emulsification. The mixture breaks up the large droplets into several smaller droplets called micelles, increasing the fat's surface area. The pancreas secretes enzymes called lipases that attack the surface of each micelle and break the fats down into their parts, glycerol and fatty acids. These parts get absorbed into the cells lining the intestine. In the intestinal cell, the parts are reassembled into packages of fat molecules (triglycerides) with a protein coating called chylomicrons. The protein coating makes the fat dissolve more easily in water. The chylomicrons are released into the lymphatic system -- they do not go directly into the bloodstream because they are too big to pass through the wall of the capillary. The lymphatic system eventually merges with the veins, at which point the chylomicrons pass into the bloodstream. You might be wondering why fat molecules get broken down into glycerol and fatty acids if they're just going to be rebuilt. This is because fat molecules are too big to easily cross cell membranes. So when passing from the intestine through the intestinal cells into the lymph, or when crossing any cell barrier, the fats must be broken down. But, when fats are being transported in the lymph or blood, it is better to have a few, large fat molecules than many smaller fatty acids, because the larger fats do not "attract" as many excess water molecules by osmosis as many smaller molecules would. -------------------------------------------------------------------------------- Fat Storage In the last section, we learned how fat in the body is broken down and rebuilt into chylomicrons, which enter the bloodstream by way of the lymphatic system. Chylomicrons do not last long in the bloodstream -- only about eight minutes -- because enzymes called lipoprotein lipases break the fats into fatty acids. Lipoprotein lipases are found in the walls of blood vessels in fat tissue, muscle tissue and heart muscle. Figure 2. How a fat cell stores fat, and converts glucose and amino acids into fat. Insulin When you eat a candy bar or a meal, the presence of glucose, amino acids or fatty acids in the intestine stimulates the pancreas to secrete a hormone called insulin. Insulin acts on many cells in your body, especially those in the liver, muscle and fat tissue. Insulin tells the cells to do the following: Absorb glucose, fatty acids and amino acids Stop breaking down: glucose, fatty acids and amino acids glycogen into glucose fats into fatty acids and glycerol proteins into amino acids Start building: glycogen from glucose fats (triglycerides) from glycerol and fatty acids proteins from amino acids The activity of lipoprotein lipases depends upon the levels of insulin in the body. If insulin is high, then the lipases are highly active; if insulin is low, the lipases are inactive. The fatty acids are then absorbed from the blood into fat cells, muscle cells and liver cells. In these cells, under stimulation by insulin, fatty acids are made into fat molecules and stored as fat droplets. It is also possible for fat cells to take up glucose and amino acids, which have been absorbed into the bloodstream after a meal, and convert those into fat molecules. The conversion of carbohydrates or protein into fat is 10 times less efficient than simply storing fat in a fat cell, but the body can do it. If you have 100 extra calories in fat (about 11 grams) floating in your bloodstream, fat cells can store it using only 2.5 calories of energy. On the other hand, if you have 100 extra calories in glucose (about 25 grams) floating in your bloodstream, it takes 23 calories of energy to convert the glucose into fat and then store it. Given a choice, a fat cell will grab the fat and store it rather than the carbohydrates because fat is so much easier to store. __________________________________________________ __________________ Breaking Down Fat When you are not eating, your body is not absorbing food. If your body is not absorbing food, there is little insulin in the blood. However, your body is always using energy; and if you're not absorbing food, this energy must come from internal stores of complex carbohydrates, fats and proteins. Under these conditions, various organs in your body secrete hormones: pancreas - glucagon pituitary gland - growth hormone pituitary gland - ACTH (adrenocorticotropic hormone) adrenal gland - epinephrine (adrenaline) thyroid gland - thyroid hormone These hormones act on cells of the liver, muscle and fat tissue, and have the opposite effects of insulin. When you are not eating, or you are exercising, your body must draw on its internal energy stores. Your body's prime source of energy is glucose. In fact, some cells in your body, such as brain cells, can get energy only from glucose. The first line of defense in maintaining energy is to break down carbohydrates, or glycogen, into simple glucose molecules -- this process is called glycogenolysis. Next, your body breaks down fats into glycerol and fatty acids in the process of lipolysis. The fatty acids can then be broken down directly to get energy, or can be used to make glucose through a multi-step process called gluconeogenesis. In gluconeogenesis, amino acids can also be used to make glucose. Figure 3. How a fat cell breaks down fat. In the fat cell, other types of lipases work to break down fats into fatty acids and glycerol. These lipases are activated by various hormones, such as glucagon, epinephrine and growth hormone. The resulting glycerol and fatty acids are released into the blood, and travel to the liver through the bloodstream. Once in the liver, the glycerol and fatty acids can be either further broken down or used to make glucose. Losing Weight and Losing Fat Your weight is determined by the rate at which you store energy from the food that you eat, and the rate at which you use that energy. Remember that as your body breaks down fat, the number of fat cells remains the same; each fat cell simply gets smaller. Most experts agree that the way to maintain a healthy weight is: Eat a balanced diet - appropriate amounts of carbohydrates, fat and protein Do not eat excessively - for most people, a diet of 1,500 to 2,000 calories a day is sufficient to maintain a healthy weight Exercise regularly |

B: 2 egg omlete - mush/cheese
S: 2 slices of salami L: chickn lettuce D: ham/turkey/swiss/mayo roll ups and cucumber salad S: Maybe jello or something not sure yet but definitely want something. I would kill for ice cream.... Recipe for Chkn Cordon Blue Chicken Breast Cheese (I use whatever is in the fridge which is usually American) Ham (i've even used turkey) Pound chkn until it's flat, lay a piece of cheese and a couple pieces of ham or turkey. Roll chkn up and secure with a toothpick. I put butter on top of my chicken which keeps it moist. Cook at 350 not sure how long i think about 30 - 40 minutes.

I just had some left over beef stew for supper tonight.
I have felt alittle down with my side today, I pulled it last night and its been sore all day so tonight I did not feel like cooking so we jsut ate left overs. Your recipe sounds so good, I will try it sometimes. I like chicken cooked anyway. Sometimes I just bake chicken breast and stuff it with some cheese and top it with tomato sauce. Its good like that to. Do you eat seafood any? I have some recipes for that to if you want some. I need to go buy me some new bath scales because my old ones seem to stick and don't want to weight you right. I have to jiggle them to make them move sometimes. I was just wondering what the best ones to buy was. I seen some weight watcher ones at wal mart and they looked nice. Most times I just wait and get weighed in at my doctors because I have to go see him most months with my arthritis and back problems. It seems like I spend most my time going to docotrs anyore, guess thats what getting older means now for me. I usually can tell if Iam losing to by the way my clothes fit. When they begin getting loose i know I have lost some. When I first began my low carb back in yr. 2000 I never weighed myself, only got weighed at my doctors. This support board is really good in helping you lose to, I have been a member for many years and i know it helped me alot. I learned what not to eat and how to cook low carb and still to this day I use them to. I have learned that its more than just losing weight and means you need to learn to eat differently and don't let food control you. If you do then you will gain back what you do lose. low carb teaches you a whole new lifestyle of eating . And keeping it with you for life. So far its been a life saver to me. I recommend it to anyone who needs to lose weight and want to make a pernament life style change in their eating habits. Take care and I will check back in tomorrow sometimes, I have some things I need to do tomorrow so I am not sure when I will get here but I will be here when I can. Have a great evening. |

Hi Mary,
Sorry to hear about your side. I have been having a weird monkey jumper in my left arm for days now and it doesn't seem to want to stop...really bugging me. I bought a cheap scale at walmart, TAYLOR, it seems to work ok. I put a 10lb weight on it to make sure it was weighing correctly. I drank lots of water yesterday to flush me out and scale went back down to 223, so that a good thing. I LOVE seafood. I'm going to Ocean City MD next weekend for my birthday and i can't wait to get my hands on some crabs..Yummy. I also do the chkn in sauce with cheese..like a chicken parm..kids love this too. I would post menu for today but honestly i have so much running around to do that I have no clue what i'm going to eat. Well hope everyone else is doing well. |

Sorry I did not get here sooner but I had so many errands to run today and even met a friend for lunch to. I promise I ate right to.We went to a buffet place but I had my salad and some baked chicken.
Hope your eating is going well to. Just keep away from all the starchy foods and sweets and you will be ok. Think I will have a early shower and go to bed early to because I am worn out and my legs are hurting alot to for being on them to much today. Will check back in later. |

Yesterday was pretty good until around 8 pm when I had a mini binge. Darn and I was down a lb as well to my lowest weight yet. Drank diet pop as well which I had been staying away from since Christmas. I am sure that I messed up because I hadn't eaten enough during the day time. I am really not sure of what to take with me when I am out and about. I don't like relying on nuts to fill me but often that is the only choice available due to budget and time restraints. Oh well back on track today and so far so good.

Decided to re-add coconut oil to my diet as I was finding that I was cravings sweets on the days that I ate too many carbs and hopefully will be able to control my portions with it. The first time I did well but the last two bottles I was way over doing the coconut bark so I haven't had any in several months. I didn't drink any pop today so that was good.
Congrats on making it through the spaghetti and meatball fundraiser. |

MoMo,Carry with you when you are out some beef jerky sticks or some nuts. They are not a meal but will take away to snackies from your stomach, at least for awhile until its time to eat dinner.
RubyRed what is Coconut Bark? I have never heard of it. When I want a sweet I just eat me a low carb piece of candy. I keep a box of it in my freezer and eat one piece when I want something sweet. I get the Whitmans low carb kind. Just don't eat more than one piece at a time though or eat it to often either. Breakfast-coffee and 2 eggs scrambled with cheese lunch- left over chicken breast supper tonight- boiled shrimp and salad A friend brought us some fresh shrimp over the week-end and I plan to boil some for supper tonight. I put the rest in the freezer in zip lock bags. Do any of you eat seafood? Shrimp and a salad is a great low carb meal. I just boil my shrimp most times but I do like to make garlic shrimp sometimes to. Did get some riding my exercise bike some this morning but thats all my exercise today so far besides cleaning up some around the house (thats exercise to me)... My shingles are getting better so hopely soon I can go back in the pool at the club. I see my doctor again on Thursday with them so he will let me know if its ok to swim again. I miss that so much and my friends there at the club to. I will try to look up you all some snack ideas and get them to you as soon as I can, I need some myself. I like MoMo want some that I can carry in my pursae when I am out. See you later, watch those carbs, we can lose this weight and we will, just be patient and it will come off.. |

Note: some milks are "protein-fortified", and sometimes powdered milk is added for more "body" - this will alter the carb counts, so be sure to check the label. Low Carb snack Ideas
Ideally, a low carb snack should have protein, healthy fat, and some fiber (so the best thing would be to have some raw veggies with your eggs or jerky). Here are some easy snack ideas.
__________________________________________________ ________ Celery with peanut butter Celery with tuna salad Hard boiled eggs Deviled eggs Dill pickles and cheddar cheese (no kidding, it’s a great combo) ¼ cup berries with 1/3 cup cottage cheese Nuts (keep raw ones in the freezer if you think you’ll overeat them) Sunflower seeds (get them in the shell so it will take longer to eat them) Other seeds (How to Toast Pumpkin Seeds) Low Carb Trail Mix Jerky (beef, turkey, etc.) (try to find low sugar varieties) Low carb shakes Cheese sticks, such as string cheese Sugar free jello, alone or with cottage cheese and a sprinkling of nuts Cheese with a few apple slices 4 oz plain or sugar-free yogurt with berries and flax seed meal Smoked salmon and cream cheese on cucumber slices Lettuce Roll ups – roll luncheon meat, egg salad, tuna, etc. and veggies in lettuce leaves Lunch Meat Roll-ups – roll cheese, veggies, etc, in lunch meat (read the labels for carbs on the lunch meat) Roll the lunch meat or the lettuce around bean dip, spinach dip, or other low carb dip or spread. Coconut Bark
3T melted coconut oil 1T cocoa powder Mix and add sugarfree sweetener to taste. Sometimes I add shredded coconut or instant coffee(make sure its super disolved). Pour into flat surfaced plastic container such as ziploc, etc. Freeze until firm. Usually just a few minutes. Pop up and break into pieces. Yummy. If you do a search there are other versions of coconut bark. |

Is there a low carb cocoa powder? I have been starving today..cant seem to get enough to eat. I've eatten: salad pork chop beef jerky - no sugar peanut butter - no sugar salami and cheese strawberry (2) i'm still so hungry, I'm making MONK fish for dinner and a veggie, corn on the cob for the others. I miss corn on the cob. |

My menu for today is:
Breakfast--2 slices bacon and 2 fried eggs and coffee lunch--taco salad at the mexican place supper tonight--BB Que chicken, baked squash casserolle and ice tea Had a snack this afternoon consisting of three black olives, and three small cheese slices and diet soda. I plan to go buy me the ingredients to make thoise coconut barks you all say are so good. Are they crunchy like chips or what? Still having problems drinking all my water for the day, how about you all, are you drinking all of yours? I can only drink so much and then I get so bloated that I can not swallow another sip of it. Still riding my exercise bike everyday to. |

I have been using the Frys brand of cocoa powder and it has 1 carb per tablespoon. I think Herseys is even better but you can't get it in Canada any more.
The bark is like a crispy chocolate bar as in it snaps apart into pieces. I also sometimes add peanut butter which will then make it more smooth and creamy like. Years ago when I was on Atkins I use to make peanut butter cups, they were delish...
I'm gonna have to go buy some cocoa powder and coconut oil this weekend and make some... I've been so hungry, then today I'm not. Spent pretty much all day in bed yesterday as I was sick. Down 2lbs this morning so that is nice even though it is the 2lbs I had gain the day before yesterday.
If you want to make an idividual dessert: I take 4T cream cheese softened in microwave and add 1 large egg and liquid sugar twin to taste. Add 2 or more T cocoa powder and blend until smooth. Microwave for about 2mins unitl dry around the edges but still creamy in the center. It taste like one of those chocolate lava cakes. Really yummy. |

Sorry I was not here yesterday but I was not feeling well and stayed in bed all day. Am not sure what I will be eating today either since my stomach is still not feeling much of a appetite.
