Hey Stacy!!!! What about this side dish. It is one of my favorites at potlucks and such. Tortilla wraps. You could make a batch with low carb wraps/toritillas and a batch with regular tortillas.


16 oz cream cheese softened
16 oz sour cream

mix well

1/4 c minced jalapenos~
1/2--1 c of minced ham ( i use deli ham and mince it up)

mix everything all together and spread out onto tortilla ohhh about 1/4 thick and roll up not like a burrito but like a pinwheel. Slice with knife or i use dental floss. they make these cute little pinwheels and omg they are so addicting. I slice them about 1-1 1/2 inch thick and lay em up in a flat dish so u can see the pinwheel pattern. wax paper before doing another layer. I always eat the funky mishaped ends. Te he he he

Hi Everybody:

Just a quick check in.......

Tomorrow I will be taking my Mom to her appointment with her gyn/oncol. There are no tests scheduled, so we will talk to him at this point about that "mass" (GOD I HATE THAT WORD) in her side. She saw her primary doc and he said it was golf-ball size and deep in.....near her back. She also has been having some back and hip pain.......but she thinks it could be the way she is walking from her neuropathy in her feet. So we will see what he says anyway, and I'm sure some tests will be scheduled. I feel SO FREAKIN' BAD that she even has to do ANY of this. YOU GUYS ARE GREAT! ALL OF YOU.......for being there for me. It means alot......and I DO MEAN ALOT to me. Words can't describe.

Carrie: Glad you are home and doing good from the ICD implant. Now that it's been a day or two, how do you feel now? Getting better each day? I sure hope so. You sound like you're doing great on the diet. Better than me. I'm actually not doing too bad. I guess our "7" days are over as of today, huh? I don't think I lost anything!!!! I'm not sure though. Will have to check.

Went for a walk tonight.........FINALLY!!!!!!!! It's been about 3 weeks since I've walked and just HAVE TO get back on track. Enough is enough. I got to lose a few more pounds before I go to Florida in October. (Octoberfest Bike Week - Daytona and visiting relatives and my good friend Ellen).

Eve: You work too much! You sound like me......got to get back on track with the exercising. We must be on the same wave length. Your farm festival sounds great! And they have that every weekend? Wow! Too cool. Ours is just once a year in August. It's pretty big though. Actually, about 15 miles a way, there is this thing called "Crossroads" and it kind of sounds what you are describing and it is year-round (minus the produce). Anyway, I just love doing those things. There are a few good ones coming up around here.

Stacy: Thanks for your kind words too! Hey, remember a while ago I posted that TACO DIP recipe? Well, I would HIGHLY recommend it for your picnic. I KNOW you will get compliments. It's alittle different from the normal potato salad.....hahahaha. How many people will be at the picnic? This makes a 9 x 11 pan. Gotta be a DEEP pan (like 2 inches deep) as it fills up when you start putting the toppings on. I went back a few pages and found the recipe........so, in case you're interested, here it is:

2 Eight oz. cream cheese cube things
1 Sixteen Ounce Sour Cream
2 Packages dry taco mix (can buy 1 hot and 1 regular if you like real spicy)

Put all together in bowl, mix with blender.
Spread in bottom of pan

1 jar HOT chunky salsa

Put a medium layer of this on top of the mixture above.

Then cut up lettuce - bite size. This goes on next.

1 Package Taco Shredded Cheese. Put on the lettuce.

Cut up (bite size) one tomato. Put on top of cheese.

1 can black olives. Put on top. (Not the whole can, just eye it up to what looks good).

2 bags tortilla chips.

Couple of notes: I usually buy a tin foil pan....deep. Gotta be kind of deep because after layering everything, it gets pretty big. And with the tin foil pan, you can just throw it out at the party. Nothing to carry home.

Tortilla chips. The no-name brands usually work best. Buy the ROUND chips. The no-names are a little thicker and scoop up the dip pretty good without breaking. The brand name chips are usually those pointy chips and pretty flimsy. They just end up cracking off and get all over the place. So, for once, NO-NAME CHEAP chips are the better buy.

Also, you can make the dip part the night before and chill. But don't do the lettuce part until the next day, or maybe an hour or two before you go, because the lettuce can get alittle soggy. Not bad really, but I like crispy lettuce. LOL! And I think everybody else does too!

You can cut that recipe in half if you just want to have it at home. Actually, its low low low carb, but you need the chips, so that kills THAT idea!!!

Eve, your dip sounds delicious too. Got the same cream cheese and sour cream. That combination is a great taste and I think everybody likes it. So, hopefully Stacy will make either/or.

Good evening ladies!

Well, I'm gonna shoot both my sisters. Mary brought over KFC and all the fixins' for dinner tonight. She was doing a good deed by bringing it so I wouldn't have to cook dinner. I told her I couldn't eat any because of the low carb woe. Everything was fine and she understood. Yeah, for me!

Well, Sandra pulls up into the driveway. She walks in and says, "OMG! KFC!" I didn't think too much of it. No big deal. Well, she finds out I'm not going to eat any of it and she is like, "Are you crazy?" I said, "OK, I will have chicken with the breading taken off, but absolutely no side dishes." Another "yeah" for me!

So, I start making me a sald to go with my unbreaded chicken. I then procede to sit down to the table and look around at all the mashed potatoes, gravy, biscuits and macaroni and cheese. Big sigh.

I will just say this KFC has the best biscuits! OMG! It was like I went crazy! I ate EVERYTHING including my salad.

Then, after dinner my little 3 year old neice was wondering if I had any donuts. I said, "No, Princess Pinky (that is what I call her), but I have a cherry pie snack cake." So guess what! Just guess. She had one and I had one.

Well, I do have a theory about all this. I think this ICD is shocking me and I just can't feel it happening. Therefore, because of all the shocks, my electrical system in my body is becoming overloaded and it is frying my brain. Well, I go back to the electrophysiologist next Tuesday for a post-op visit. I will just have to let her know about my theory.

So much for me being so inspired yesterday evening. You know, that was probably some of the after affects of the shocking too. Be right back, I need to write these theories down for the doctor. They do clinical trials and studies at Barnes. I think they should possibly look into ICDs causing delerium (did I just make up a new word? Somebody call Webster!) and euphorism.

Oh, Eve, maybe you should run over some of those turkeys and throw one in the freezer for Thanksgiving! Just think FREE MEAT! With gas prices the way they are, every little bit counts. Your boat trip sounds fun. Get all that time in you can girl. It will be cold before you know it.

Betty Lou, I will be thinking of you and your mother tomorrow. I'm glad you will be able to speak with the doctory tomorrow. At least hopefully you and your mother will be able to ask questions and the doctor will have some answers for you. As far as the ICD goes, yes I do feel much better. It feels so tight though at the implant site. Sometimes more than other times. Especially if I turn my head to the right. I can't complain though. It turned out so much better than I expected. I am very thankful for that.


Stacy, I must say those dip recipies that Eve and Betty Lou have given you sound absolutely delicious! I hope all is going well with you today and you were able to get your lists made. I stress eat also. I also eat when I'm bored, depressed or my freakin' sister brings over KFC for dinner! I can't even imagine trying to keep up with everything you do. Goodluck Superwoman! If you need your cape sent to the cleaners, let me know.

Well, guess I better try to go back to bed. It is currently 12:42 am. This sleeping for a while and then being awake for a while is awful! I will be so glad when I can sleep on my sides again.

Good Evening!!

Well, I put in a long day on the road. Will put in a long day tomorrow, but I will be home doing paperwork, so that makes me a little happy. I feel like I haven't been home in forever.

I forgot about the taco dip. Thanks for reposting that. I am not sure how many people will be at the party, but I am sure there will be a few. And I am also sure that it is impossible for me to make too much food.

I have done really good today. Drank LOTS of liquids. The problem with that when I am trying to get as much done as possible is having to stop to use the restroom. But, I was back at 158 this morning.

KFC sounds pretty good. I looked up nutrition facts on the chicken once upon a time. I think that a breast has 11 carbs in it (or somewhere in that area.) Then, I decided why bother looking that up, if I am gonna have KFC, I am gonna have the biscuit and the potatoes darn it! My mom almost always buys KFC for dinner when we visit. I guess that is her excuse to have it.

Betty Lou, I will keep your mom and you in my thoughts. I am sure that I can say we will all be waiting to hear from you. Glad that you were able to get out for that walk tonight. Awesome!

Carrie, I agree, you absolutely need to tell your electrophysiologist your theory. Then again, I laugh now----what happen when your theory is proven?

Eve, thanks for the tortilla wrap idea! I love the idea of eating the ugly ends. I do that with ham pinwheels. I wonder if I subconsciously make some of them ugly, just so that I can have one more. I wouldn't put it past myself.

A couple of years ago, we rented a cabin in the mountains with the kids. I promise you, it was as close to a perfect weekend (for all of us) as it gets. Today, I was up in that area doing a survey and drove past that cabin. It is for sale. Man, I sure wish that I were in a position to buy it.

Woo-hoo! Hubby is out of the shower. I am on my way to bed. I am whooped and ready to cuddle.

Back from boating, and boy was i bad!!!!

Okay back from boating. Glad to see you all and to read your posts. Sorry i don't have much time to chit chat. I will fill you in on all the details later. Glad you are all safe and sound and going full steam ahead in your lives. Once again good to see you Betty Lou. Like Stacy said, we hope to hear how it all goes with your mom.

I will have to say we had the boat-in-only campground all to ourselves and i was overcome by this overwhelming desire to become one with nature. It was way awesome. Who says skinny dippin can't be exhilerating even at my age. We had a great time. Okay okay i am digressing.

I want you to take a look at my new friends. Oh and the water was smooth as glass too!!!

I agree, skinny dipping is awesome! Haven't done that yet this year. But, I sure want to!

I love your visitors! It always amuses me to see any kind of wildlife. Yesterday while working I snapped pictures of at least a dozen deer, a herd of elk, and a fox! Oh, and a cow in the middle of the friggin road. Not just any road, in the mountains at the end of a blind curve. When I get those uploaded, I will post a couple.

Alright, who is ready to party with me? 156!! Woo-hoo!! I have been really good this week. Today is day 3 of strict induction. I have a headache and I am slightly sick to my stomach which tells me I haven't been as good as I should have been. Induction flu sucks.

Ok, gotta get back to work for a bit. Also got some schoolin' to do with the boys. My ninth grader is already done for the day, so he has decided to help me by doing my fourth graders art class with him. Every little bit helps. I will be back in a bit.

Wow WTG Stacy!!!!! Thats flippin awesome. You are so close to goal. You've come along ways baby But........you can't leave us once u make it there. I for one would miss you terribly. Yesssssss i want to see some pics. Even of the cow lol. So the home schooling is going okay? May i ask y u decided to home school? Did your daughter graduate?

Well i did my 2 days of cheating yesterday and the day before so today was back on task. I though it was going to be hard to get back in the mode but, it wasn't. I had some leftover fajitas and took those to work and had my sf jello with sf whipped cream. I wasn't too hungry today. Work was busy and kept my mind off of eating bad.

How are u getting along Carrie? mmmmm i love KFC. I haven't had that in such along time. We would have to go clear across town to one and I just never think about it. ROFLMAO regarding Stacy's cape. Yes i want to know what your doc has to say about your theories.

Betty Lou, how are things with you and your mom? How did her appointment go?

well i have some laundry to do and gotta get in bed NLT 9pm. I didn't get enough sleep and i was sure loopy today.

I didn't realize onions had so many carbs and i need to switch to heavy cream with my coffee instead of 1/2 and 1/2.

Liz hope all is well with you and that your hanging in there nice and strong.

I ain't leaving. Staying in touch with you gals really helps keep me on track. 76 pounds and still got a good size belly. Geez! But, it is a lot smaller than it was. Along with the rest of me (boobs...what are those?)

We had Subway for dinner. No sandwich for me. Got a salad with tuna on it. No dressing. It was darn good too. We went to the zoo with the boys tonight. Walked up and down the mountain- no problem.

We decided to home school the boys for a couple of reasons. Our ninth grader liked school- for the social interactions only. That was getting him in trouble. So, we told him that he needed to pass all of his classes in order to stay in public school, he was very much against home school. He failed a "gimme" class. He refused to wear the proper uniform to school. So, his teacher would kick him out of class and he'd receive a zero for the day. He and his friends thought it was a fun game. He thought we were kidding. Such mean parents, aren't we? With our fourth grader, he hated school. LOVES to learn, but did not enjoy school at all, so we are working with him this year too.

Well, hope all of you have a great night. Still have some work to do- the internet was running slow today, so I didn't get everything done.

Hi Everyone! I've been out of the loop here. I'm guessing now that the "subscribe" message in my profile is an invitation. Sorry. I'm a newb.

All is well. Ketostix show I'm fully in ketosis, and I've lost weight. Check my sig line stats. I'm at 169.2 for the second day, and I'm so pleased.

My three boys are back in school again, and I'm back in school again, too. Time management is becoming an issue after the long, lazy summer.

I had turkey bacon and a cheese omelet for breakfast along with coffee. I have a roast in the oven that should hold me today and some tomorrow. (I love having food ready all the time. It helps prevent slips.)

Stacy, I'm so impressed with your weight loss. That's amazing. You're doing great, too, Eve. I haven't checked everyone's stats here, but I do know that the fellowship at this board makes a big difference--at least for me.

Evening ladies!

I think I am in the same boat with Stacy. I think I have induction flu. I have decided to do strict induction for at least week and hopefully two. It is worth the not feeling well though. I have dropped quite a few pounds in the past few days. Plus, it doesn't help that I did quite a few things around the house yesterday. I think I over did it. At least I can sleep on my right side now and am able to get more than 2 to 3 hours of sleep at a time.

Stacy, I didn't realize you have dropped that much weight! That is such an inspiration to me. Actually, all you lovely ladies are. It is so wonderful to chit chat about our woes. It keeps me focused. I do hope you start to feeling better soon. I know it must really be hard trying to keep everything going when you don't feel well.

I made some awesome chicken strips last night. I took chicken breasts and cut them in half and dredged them in crushed pork rinds. OMG they were good. My sisters preferred them over the ones I made the traditional way of dredging them in flour. Tonight I made a meatloaf and used crushed pork rinds instead of crackers or bread. It was also amazing. Tomorrow I think I am gonna made some hot chicken legs. I really wanted hot wings, but I refuse to pay $8.96 for a 3 lb. bag of chicken wings when I can get a 3 lb. bag of chicken legs for $4.96. So, I will see how they turn out. Hopefully they will be awesome.

Eve.......those pictures are beautiful. Everything looks serene and calm. Skinny dipping. Gosh, I haven't done that in a few years. I bet you had a blast! I know the last time my husband and I did it, we had so much fun. I was scared to do it and he finally talked me into it. He is such a nasty ole' man. I like to call him that because he is 14 years older than me.

Betty Lou.......can't wait to hear from you. Been saying a prayer for your mother. I hope all is going well for you. If you ever need a shoulder to lean on you know all of us are here for you.

Liz......I completely understand the not knowing about the subscriptions. I also didn't understand at first. I am relatively new here also. I also like having food on hand. It makes it so much easier. Especially if I need a snack. I can make a good choice instead of rumaging through the cabinets.

Well ladies, I am gonna hit the hay early tonight. It is only 7:30 but I am extremely tired. I probably won't be able to fall asleep, but at least I will be able to lay down, prop up, read a book and rest for a while.

Good morning everyone!

Carrie, you've lost an amazing amount of weight in such a short time. It's even more remarkable because of your situation. When I'm not feeling 100% I often use it as an excuse to eat. Kudos.

I love the pork rind idea, Carrie. I'm going to have to try that. I looked up some articles about them and found they are very high in protein, but have no carbs. I would never have guessed! (I don't think I've ever had a pork rind in my life. This will be interesting. )

I'm doing pretty well. I weighed in at 168.8 this morning. It's so affirming to see progress.

I am sad on one point: I haven't heard from my penpal Kat in a couple of days. I hope she's doing OK.

Everyone's stats looks great!! I am stuck at 206. Oh well, I am not gaining and thats a good thing. I am not sure what the suscribe message means other than you have posted on a particular thread. Hmmmmm. We could ask a moderator.

I have the next 3 days off and my dh has to work. I am contemplating going to the boat and spending the nite by myself. It will probably be the last time this season I will be able to do that. Hahahahaha, bet you all will be glad when i quit yapping about the boat. It will be nice cuz I am going to take my beading stuff and finish Betty Lou's bracelet. Probably take a good book and a couple of movies.

What does everyone else have planned for the labor day weekend?

I'm not sure what we'll do for the holiday. My husband is working, but I'd like to do something fun with the kids. I'd love to hear any ideas. They keep asking for a "real" vacation of some kind. Maybe I'll pitch the tent in the backyard.

Keep up the good work everyone. I'll check in unless we figure up some grand holiday plans.

Howdy Ladies!

Eve, I love your boat stoies. They don't bother me at all. I will admit though........I'm a chicken. I would be so scared to go out there alone. Make sure you bring back some more wonderful pictures if you can. I am feeling better today. I did a few things around the house, but made sure NOT to over do it again. I get tired of sitting though. I will have to remember this the next time I feel so overwhelmed.

As far as the holiday goes, we have nothing planned at all. My husband has to work Saturday night and the surgery kind of puts doing anything to a halt. That's okay though. I'm thinking about renting some movies and the kids and I can have a movie night on Saturday evening. Maybe make a low-carb pizza. Yummy!

Eve, I must ask a stupid question. When you talk about your husband.......what does "dh" mean? I have seen other people use that before and I have been guessing ever since. I have come up with all kinds of ideas as to what "dh" could possibly mean.
Here are a few:
divorced husband, deceased husband, deranged husband, dingleberry husband, dumb husband, dips**t husband, damn husband..........I could go on and on. I don't mean to sound ignorant I really have no clue.

Liz, it is good to hear from you again. When you commented on my weight loss I noticed I didn't have my starting weight on there. I have changed my signature so many times. I have no idea why I have though. This is probably the 4th or 5th time I have changed it up.

Stacy must be busy today. I don't know how she keeps up.

Let's see, DH could mean one of those various names that you mentioned, but normally (at least as far as I am letting onto) it means dear or darling husband. I gotta say, mine could mean dingleberry (as he looks over here to see what I am giggling about.)

Well, I am at 155-156. But, the weekend is here and we are going riding/camping/drinking/bbqing with the biker friends. So, I am anticipating a not so strict weekend. Ok, I am anticipating I will probably blow it.

I was able to get all of my work and paperwork done for the week. No weekend work this week!!! I am psyched about that. How bad is that?

Eve, I so wanna go out on that boat with you. I think that next summer we should all get together at your place for a weekend out on the water.

Forgive me if I get everyone mixed up now and then. I'm still trying to learn names.

Sounds like you have some great holiday plans cooked up. Carrie, I'm sure the kids will love pizza and a movie. There's nothing better than spending time with mommy!

I blew it last night. I ordered pizza and cheese sticks for the kids, and there was a glass or two of white wine languishing in a bottle on the counter. (I'd been longing for a sip of that wine for two weeks.) We had pizza and put on a movie. Then I had that last glass or two of wine after the kids went to bed. Then I figured I had blown the night so I justified eating quite a few butter pretzel twists and Ghiradelli chocolate chips.

I still weighed in under 170 this morning, but I was up from yesterday's 168.8. (My ketostix reading went down to "trace" from my usual "moderate" or "large" reading.)

I'm back on track this morning and plan to be consistent with the eating in spite of the temptations that go hand-in-hand with holidays. I'm going to go out and buy some pork rinds to crunch while the kids eat their goodies. (Hope I like them. I hear they're a fab no-carb food. Thanks for sharing about them the other day.)

Still at 155-156 this morning. Had steak, mashed cauliflower, and salad last night. Dang good, too!

Well, we are just about out of here for the weekend. That is if my DH (insert your own version here) will get ready. I swear, he is slower than a girl. Drives me nuts. Woulda said bananas, but those are way too high carb.
