Hey, howdy, hey!!!

Gosh, I have been so busy, my head isn't even on straight anymore. I'm so sorry that I haven't been on here. I haven't even been opening my email. That was my favorite pasttime not so long ago...Sigh...

Carrie, welcome, girl!! I apologize for not having been on here to greet you properly. I want Chinese food and fried ice cream now. Thanks. Chinese food is one of my big downfalls. Love it! I am really jonesing for German food right now. I have done pretty good at keeping away from it, just dunno how long that will actually last. Can't wait for you to get back; will keep you in my thoughts.

Betty Lou, how cool about your cousin! Very, very neat. Dang, look at the muscles on that girl. I love her abs. And, man, oh man, Kevin Costner looks good. Real good. Age does him well!!

Eve, congrats on the whoosh! Them are some purty toes you got there. Definitely unlike my mangled piggies. Once upon a time, they were purty like yours. Now they are not only able to, but needed to grasp onto the rocks as I climb up the sides of mountains. Lol!

Let's get the stats out of the way. 160-yep TOM, nope not been eating right, eh, eventually I will get to goal, right?

Work has been so flippin busy. My manager asked if I was ready for a heavier workload and I told her that I am. The last two weeks have been hectic. I have done what has been a month's of work in the last two weeks. I am not at all complaining, gotta make the money so that my hubby can keep building his insurance business.

Insurance---that is going ok. Slow, but getting there. Along with my job, I have been making fresh brownies for my sweetie to take with him when he goes out schmoozing. Been stuffing door hangers, reminding DH about appointments and such. I will be glad when it really gets rolling.

School started today. Yup, homeschooling the boys. Today was rough. So, tonight I am working on schedules so that we can make that work.

Along with schedules, I am hoping to make out this week's menu so that I can get back on track and stay there. You gals need to start posting yours. If for no other reason than to help me out. Believe me, I need all the help I can get. If you wanna come clean the house up while you are graciously helping, it sure could use it.

Can someone tell me what the hell I was thinking when I decided I am superwoman? I did take (most) of last Wednesday off. I called my buddy up in Denver and asked if he wanted to meet me halfway for a beer and a motorcycle ride. Permission granted from DH, of course. So, met my buddy, had lunch then decided to go for a ride. We had never been down one of the roads there before, so we did that. Rode all the way to the end of the road. About 50 miles out. I called my husband to see where he was with work, then he met us on the ride back. So much fun. We all hung out for a bit drinking iced tea and just talking. Sometimes, taking the time to sit back and talk really does a lot.

Blah, blah, blah....sorry. I will try to check in again in the next day or two. Again, sorry for not hanging out. I really miss y'all!

Crazy busy

Yeahhhhhhhhhhh Stacy we were going to send out a search party for ya soon. Glad to hear from you. We sure missed you. Sounds like you have been crazy busy. You must have a lot of energy and not take naps! I love my naps. Sorry to hear that you gained a few but like you, my TOM drives me crazy. I gain tons of water and get cravings that would drive me to madness if i didn't assuage them. It will come off cutie. I mean gosh you have done wonderful. Look at how much you have lost and how far you have come. You are an inspiration to me. Okay ummm err posting a menu? I'd rather come clean you house. I guess cuz i never know what i feel like eating at the time and i just roll with it day by day. But, for you, i will try. I do want to make aussie fries this week. Could you post that recipe when you get a chance? I need to make some more revol oopsie rolls too!. Man i love those things. I am going to make the lc pizza too and freeze some so i will have it for lunches. LOL how is that for a start of a menu?

Wonder what has become of Paula and Teresa and Marbles. Wonder how Paula has done with her motorcycle class.

day 2

okay! I didn't exercise today. 101.2 degrees outside. My exercise area is not air conditioned. I did stay with the lowcarb though. Had a chicken breast, porkchop, some almonds some sf jello with sf whipped cream. Then i had some pork rinds with cheese on em. I need to go get a few groceries. So pretty much just grazed today. Drank lots of water and spent a lot of time in the bathroom. I didn't do much of anything today. Kinda sulking cuz I am grumpy about what there is to eat here. LOL will feel better after getting out. I didn't want to go shopping in this heat. TTYL

Oopsies are ok for induction. I need to also make some of those. They are really handy. I love turning mine into French toast. Yum!!

Here is Sweeteater's recipe for Aussie fries. These are really good.

"Aussie" Squash Fries

Long neck yellow squash (or possibly zuchini)
cheddar cheese, shredded
bacon, cooked and chopped
Olive oil, salt, & pepper (plus other spices to your taste)

Cut squash lengthwise into fry shaped pieces
Fry in olive oil until browned and done.
Remove from skillet and place in oven proof baking dish.
Sprinkle with cheese and bacon pieces.
Heat in oven until cheese is melted.
Serve with spicey ranch dip.



For dinner tonight, I made fried chicken. I coated my chicken with Carbalose. Not as good as the real stuff, but it worked. I made gravy (with regular flour) to put on top of the chicken. I didn't use much on mine. Also made some greens, mashed potatoes (none for me) and Jiffy corn bread. Yup, I did have a little piece of that.

Tomorrow night is chicken fajitas. DH is in charge of making dinner.

I went to work for a couple of hours this morning. It went pretty smoothly. I haven't done the paperwork. I will do that tomorrow. Spent time with the boys doing schoolwork. That was a lot better today than it was yesterday. Hopefully, it will continue to get a bit easier.

Oh, I didn't weigh this morning. Totally forgot to. I am not sure how that is possible, but it happened.

Still have a reading assignment to go over with the youngest one. I shall talk to ya later!!

Hi there Liz! glad u found us. I can't imagine y the oopsie rolls wouldn't be okay. The only thing in them is eggs, cream cheese, cream of tartar and a packet of splenda. BTW how is it going so far? Are you weighing yourself everyday? LOL i had to stop doing that cuz it was driving me crazy and then i would sit and pout for a few hours if i didn't lose anything. Needless to say, it would set the tone for my whole day good or bad.

Dang i forgot the squash tonight. Okay will go back to the store tomorrow. Stacy thanks for posting the aussie fries recipe again. I can't wait to try them. I think i will make peanut ginger chicken again tomorrow. I love that stuff. Sounds like you had a yummy supper Stacy. If i ate just a little piece of cornbread or gravy, It would do me in and i would eat 2 of everything. I am going to try your loaded broccoli too. I am being a little more daring this time around.


Ohhhhhhh verrrrrrr Betty Lou didn't check in on her day 2!!! Shame on her! hahahahha. She probably will later since she is such a nite owl.

Carrie, are you all packed for your trip? If you were any more electrifying, i would have to wear insulated undies! hahahahahhaha. I mean you could be a real downer with all you are going through but your not! My hat is off to ya. I am still prayin for ya too.

Good morning, Eve.

All is well. I don't weigh myself every day, but it seems I'm losing slowly. I'm down from 174 to 173.2 in a few days. Of course this small fluctuation could just be the normal variation that occurs over days or hours.

I plan to use "ketostix" for the first time today. I bought the generic CVS kind. Hope they work. Is there a certain time of the day I should test or will the results be fairly consistent during the day? For example, will I register higher after exercise or when I'm hungry?

I looked for the oopsie roll recipe, but didn't find the one with the ingredients you listed. Do you know where I can find it? (The ones I saw had other kinds of cheeses.)

Thanks for any insights on these questions!

On a roll~

Hi everyone! It is such a wonderful morning. I have a feeling it is going to be another scorcher. The weather site says only 92 today. Okay i am down to 208.8 now. I am sure it is just water though. You know Stacy, i looked for turnips last nite and could not find one turnip. Must be a seasonal thing orrrrrrr this town doesn't offer much variety.

Liz here is the revol oopsie rolls:

3 large eggs: seperate them into two seperate bowls.

1 pkg splenda

dash of salt

pinch of cream of tartar

3 oz of cold cream cheese: do not soften

oven 350

Mix yolks, splenda, salt and cream cheese until well blended

whip egg whites and cream of tartar until stiff peaks form

Fold in yolk mixture to the egg whites. Do not mix too vigorously

spoon onto greased sheet to about the size of a hamburger bun (about 6 mounds) then flatten a bit with the back of a spoon.

Bake for 30 minutes and let cool then remove. They should have a nice light golden brown color to em. I store mine in a gallon size ziploc baggie.

I like to drizzle chocolate or caramel coffee syrup (sf of course) over them and put sf whipped cream on them. Makes for a nice sweet treat and reminds me of a cream puff. I have used them in place of bread for sandwiches or for a hamburger bun. Stacy makes french toast out of them. Not sure how she does that, if she dips em and fries them or just heats em up and adds sf syrup. Have fun with them.

About your ketosis question? I am not sure about that. I would think that once you get into ketosis, you stay in it until you change what you are eating. As a nurse, I am thinking that your ketone levels would be significantly higher after exercising just for the simple fact that you would be burning fat at a higher rate and ketones are the by product of fat metabolism. Your body would be using fat for energy now since you are limiting it's carbohydrate stores. I have never dipped my own urine to check. I could always tell i was in ketosis by my teeth Hahahahah it sounds funny, but i would start clenching my teeth and my jaw would feel tense. Our body sure does let us know that something is up if we listen to it. Stacy would probably know more since she is on atkins and I do anabolic solutions which operates on the same principles that atkins does. There is a good article called Muscle with attitude and it kinda gets into the nitty gritty/ chemistry of what is occurring in your body when carbs are limited.

Okay i gotta get some stuff done around here so i can play tomorrow. You all have a beautimus day Can't wait to hear how everyone is doing. Saying a special prayer for Carrie. I know she must be very scared. I know i would be. Tomorrow is her surgery day.

G'Morning~~

Quick check in. Gotta get dressed and get to work. I feel so lazy today.

When I do the oopsie french toast all I do is warm the oopsie in the microwave then top with butter, cinnamon and sf syrup. Sometimes I will add Whey Low powdered sugar or whipped cream. Depending on how good I have been. I usually have to double up when I make those, my 9yo loves them too.

Day 3

I have been stickin to it. I have had this today:

cottage cheese coffee with 1/2 and 1/2 and splenda

Chicken caesar salad with feta cheese and tomatoes only a few lots of water

handful of cashews

sf jello with sf whipped cream

pork chop and loaded broccoli. diet soda

I have been so bad about not exercising. I have good intentions but then i say nahhhhhhh not today. Why am i being like that?

Nothing spectacular occurred today. Just some house work. Going to the boat tomorrow for a little while then rush back home cuz i have my 3 day stretch after that. I work Fri-Sat-Sun

How did everyone else do today? Still hanging in there Betty Lou? You better not have cheated cuz then you get the swirlie.

Hi!

Quick note for now. Still staying strong here........!!!

I'm like you Eve, I haven't exercised (walked). I've GOT to get back into it. I was doing so good. It's getting dark earlier now. Ugh.....

Food part is doing great.......I've had things such as......chicken, celery, tomatoes, lots of fresh yellow beans, salads, cottage cheese, fresh grown peaches. God I love those peaches. That is my snack at night.

Those oopsies sound GREAT!!!!!!!!!!! Going to try those. Does anybody know approximatley how many calories it is for one?

Grrrrrrrr my last day off Oh well. Not going to the boat today. We decided to wait till next Tuesday. That way we can spend the night on the boat and not feel rushed. I love waking up on the water, feeling the gentle rocking of the boat and watching the sun come up over the water with a steaming mug of coffee. So far today i rolled out of bed, threw on some clothes and a hat lol d/t bed head and ran and got a coffee. Now am contemplating what I am going to do today. Got this niggling thought that i should go exercise before it gets hot, and it won't go away. Sighs i will probably give in and just do it. Stacy, unlike you i don't have a pressing agenda of things to get done etc. I work 3 days a week and the other 4 days i kinda do what i want. I always tell my dh that i am on Jamaican time. I remember though when my kids were younger how frazzled i was running them here and there and helping with school work and making sure we got to where we were going on time. I don't even really have to cook that much anymore.

Glad your stickin to it Betty Lou. This challenge has been good for me. Next time we should make an exercise challenge. What do you think about that. I am not sure how many calories are in the revol oopsie rolls. Lets see 210 calories for 3 eggs and 300 calories for the 3 oz of cream cheese that makes 510 calories for the whole bunch and it makes 6 rolls. I am guessing 85 calories per roll. That is not much more than a slice of bread.
BTW, have you seen the movie Swing Vote with Kevin in it?

Carrie is having surgery today. Lets keep her in our prayers and thoughts.

Day 4

Okay so far so good. The only thing i have eaten today has been loaded broccoli. and i ran and got a sf latte. Drank lots of water and I am really not hungry. I did manage to make myself exercise. I have lost a lot of momentum and I have to kinda start over again. I did 15 minutes on the eliptical and then worked arms with weights. Later this evening i plan on using the therapy ball to do some crunches. We shall see if i can make myself do that. I really want to start pilates up again but they are so dang hard and i feel like a beach ball rolling around on the carpet I probably look like one too!

I know i should eat more especially with exercising but I am just not hungry. This will probably put me in starvation mode and then i won't lose a thing!!!!
I will make my dh take me out to dinner. I love Chicken Caesar Salads. Maybe i will get some blackened chicken. Okay now I am starting to get an appetite. TTYL and lookin forward to hear how everyone's day went.

I haven't cheated once! I am really proud of myself. I even did my abs. I ended up ordering grilled chicken, steamed veggies and coleslaw. I hope there wasn't a lot of sugar in it. I won't be weighing myself again till after the 7 days. I don't want to obsess over it. Okay well i better hit the hay. Hopefully i will be able to post the next 3 days. TTYL have a great nite and awesome dreams.

Hi:

Well, let me get the bad news out of the way. My Mom has been having bad pains in her lower left side for 3 or 4 months now. Now it's going into her hip and somewhat into her back. (Remember she "had" uterine cancer w/ chemo and radiation last year). Anyway, she had a CAT scan the other day. Mostly everything was good, and it didn't show anything in the lower left, but the part that really has got me down right now is that it said something like........"Right para aortic lymph node necrosis" and check for metastisis in that lymph node.......or it could possibly be an absess.

Well, everything I read is kind of leaning to mets. Oh my God. In the nodes again. I absolutely cannot see where she can go through chemo again (age 71). It gave her such bad neuropathy in her feet/legs. In fact, yesterday she picked up her leg/ankle braces. And it figures, the brace for the right foot (the worst foot) is too big and doesn't really stabilize the ankle at all.

The Cat scan also said diverticulosis. So, maybe that could be her pain? The GI doc called, but she missed his call. She goes to her Primary Doc tomorrow first thing (he wants to see her at 7:45 a.m. and is coming in early for her). Next week Thursday I will take her to Roswell Hosp (Cancer Hosp.) to see her gyn/onc.

I don't know what the next step is. Probably somehow get a biopsy of that node? How? Needle? Just take the entire thing out laproscopically? Wow.....another chapter that I have to study up on. But even though if they take that node out, since it's a LYMPH node, wouldn't the cancer (if it is cancer) travel throughout(???). Yes it would....even microscopically.

So, I am really really really bummed. I am a worrier. Big time.

Ok, enough of that right now.

Day 4 of the "intense diet mode" is doing good. The food part is doing good, but I really haven't seen the scale move. Here we go again. Pisses me off. I hope at least THREE pounds come off. It better. I've got to get my ass out there and do some walking! Tonight I was at my Mom's after work, then came home. Ran out of time.

I took tomorrow off. I told my boss I'm just not coming in, just don't feel like it! How do you like that???? I said I would be calling in sick. I asked him if he wants me to make it official and call in, or is this good enough. He said telling him now was good enough. He's really good to me. Must have been a reason for it as I wanted to take off even BEFORE we got the results of the Cat scan. Next Friday I put in for a vacation day. Labor Day weekend and I always always take an extra day for an "extra-long" weekend. My hubby's birthday is Sept. 3rd and our anniversary (28 years!) is September 6th. So we usually do something. Being that we just got back from Atlantic City, I don't really thing we'll go that far out of town. Maybe just a day-trip. I'll think of something.....possibly Niagara Falls, Canada......that's always fun.

This weekend is also our town's "Farm Festival" with all the crafters, etc. Oh no........dough-boys. Gotta stay away! Then also there's a big Bike Bash party in Buffalo........might check that out.

The lady where I got Emma (German Shep) had another litter of pups. All sold and she kept one male and one female. She wants to come up this weekend with the puppies to socialize them alittle bit outside of her house. That'll be so much fun to play with the 2 German Shepherd puppies! Awwwww.....puppies again.........how fun.

Wouldn't you guys just love to be 12 years old again and JUST GO OUT AND PLAY???????? No worries. No make-up. No doing hair, nails. No nothing. And not even a BRA!!! Just throw on a t-shirt and shorts and ride your bike to the playground!

Ok, this is long, but had to get all these worries off my chest. Will try to get alittle more upbeat.........

I'm back again. LOL

Everyone is in bed here and I can't sleep. That's okay. I like the peace and quiet. I don't get that too often.

Anyway, like I said in my earlier post, everything went great. I am so relieved. The only problem they had was the anestheseologist getting stuff down my throat during surgery. I can tell it too. It is kind of sore. Maybe it will keep me from eating so much. Yeah, right, keep dreamin' Carrie.

Everyone at the hospital was EXCELLENT! These people really know what they are doing. I was so astonished by everyone from the doctors to the cleaning people. I NEVER once heard gossip, complaining, etc. That is always a pet peeve of mine anywhere I go. When I am the "customer" I don't want to hear that kind of stuff whether it be a waitress/waitor or the check out person at Wal-Mart. Take care of customers first and leave the complaining for the break room and not where customers can hear it. Oh, I sound a little b****y today. Hum.............probably the lack of SEX! Sorry TMI. It's unfortunatrely gonna be a little while.

The food at the hospital was unfortunately awesome! And, btw loaded with carbs! For dinner I had chicken stir fry with rice, small salad and APPLE PIE with WHIPPED CREAM! I looked at my plate and looked at my husband and he said, "Um, if you aren't gonna eat that pie, I'll eat it." My response, "Go to the cafeteria and get your own pie, sucker. This one is all mine." OMG it was sooooooooo good. I swear it tasted homemade. They probably had a little old lady way in the back of the kitchen shackeled to the wall just making pies. It tasted just like my grandma's.

I had a wonderful room mate while I was there. Her name was Mrs. Green. Neither one of us could sleep and we stayed up half the night talking. The nurses started calling us "the twins". We each had our own flat screens, but were watching the same programs (Food Network), had the same heart condition, the same doctor, ate the same food and both had to pee at the same time. She and I laughed really hard about "the twins" business. Especially considering the fact that she is a 73 year old black woman and I am a 37 year old white woman. She and I just laughed over that. We had such a good time together. She made my stay easier. I just realized our ages are reversed numbers.

I actually feel pretty good. I'm sore and I do get tired easily, but overall I feel a lot better than I expected. I am gonna tell you girls a secret though.............I am gonna let my honey and son take care of me all weekend. I take care of them all the time and I think it is my turn.

Stacy.........it is great to finally meet you. WOW! You have a lot going on girl. I can't even imagine working AND homeschooling my children. I hope the brownies you are making is helping your husband schmooze those clients. I would be afraid I would have to try a couple of those myself. I would be soooooooo tempted. As far as menus go......hum. Not quite sure at the moment, but I can start posting what I eat if that will help. I try to decide what I will eat for a week before I go grocery shopping that way I have nothing extra to choose from. I find it is easier for me to stick to plan that way. The Aussie Fries recipie looks awesome. Gonna have to try that. I absolutely LOVE yellow squash.

Liz............nice to meet you! I haven't participated here for long, but these ladies have made me feel so welcome. Good luck on your woe!

Eve..........those Oopsie Rolls sound great and easy! I may have to try those too. BTW, your menus look good! You are making me hungry right now. I need to plan what I am going to eat for the week. I am behind on the challenge already. At least I have my meats frozen and don't have to worry about them. Sorry you didn't get to do a boat trip while you were off, but at least Tuesday will be here soon. You described everything perfectly. I could see you there sipping your coffee and watching the sunrise. Of course I invisioned you with your feet propped up showing off your "sethy" toes. BTW..........good for you on not cheating!

Betty.........Sorry to hear about your mother. I truely hope everything turns out well. I can understand why you needed to take a day off. Sometimes we just need to sit back and collect our thoughts and feelings. It is wonderful that your boss will let you do that.

The Farm Festival for this weekend sounds like a lot of fun. Dough boys? Never heard of them, but I can just imagine it is some type of fried dough. Just say no! Say no to dough boys! I know you can do it. Um.......look who's talking......I growled to my husband over apple pie!

I have dogs myself. We have 3 Italian Greyhounds. Sophie, Bella and T-Bone. Sophie and Bella are sisters. We got T-Bone from a different breeder. I wanted to name him Asher. But, noooooooooo (the no should be read with a lot of attitude), my husband just had to named him. He said Asher was too girlie. Anyway, when you hear the name T-bone you expect a big dog that is scary. Well, T-Bone is skinny with long legs and the only thing scary about him is wondering if he will lick you to death. They are all so precious though. Sounds like fun having the puppies come over to socialize. Puppies are so funny.

Well, got a little gabby here. I guess I should give someone else a turn.

Oh, almost forgot. I weighed this morning. I'm back up to 258.8. I am starting over today! My goal for the week is to not cheat. This will be hard considering I will be home for 2 weeks recovering. I will have to stick to plan though. I can it. I have gone 19 days without cheating before. It just seems easier to do while working. Definitely NOT going to buy any potatoes for the family this week. They will just have to suffer. It would be too tempting to have fried potatoes and fried eggs EVERYDAY.
