ALMOST SPLIT PEA SOUP HAPPY M'S DAY
Happy Mother's Day to you all.
Most women, even if you have not given birth, have mothered. We women mother anyone and anything that we deem worthy. How many have mothered lost dogs, puppies, animals abandoned to animal shelters or by persons unable to continue taking care of their pets. Adopted children, fostered children or have taken care of their ailing or elderly parents. There are many other forms of mothering so my hat is off to you all. We are healers, mediators, cooks,peacemakers, drivers, and lovers of all whom we mother. Have a good year you worthy women. Barbo's "Almost" Split Pea Soup 2 bags "Steam in the Bag Green Beans", cooked about 7 minutes each in microwave. Cook and place them in your food processor,or Vita Mix which is what I use. They need to be very soft. 4 slices of Applewood Smoked Bacon 1 medium carrot, peeled and cut into quarters 3 celery hearts, quartered 3 oz. of onion quartered. Thyme powdered to taste Dash of "Cavender's" seasoning Chicken broth Black pepper to taste Cream (optional) Cut bacon in to squares and cook until brown, Remove and set aside. Save bacon fat to sauté the veggies. Place cooked green beans and 1/2 c. chicken broth into the Vita Mix. . Whirl until beans are mushy. Add more broth if necessary. Throw quartered veggies into food processor and whirl until nicely chopped. Saute them in the bacon fat that you have saved. Add your bacon & seasonings and whirl again. Taste, see if you need more seasoning. Lastly pour in about 1/4 c. (optional) heavy cream Whirl and enjoy!

Barbo, you're so sweet, and so right - not having a "human" baby doesn't mean we don't have the mothering gene!

I find pureeing uncooked avocado in a soup like this really increases the "split pea" quality.
