Carb Counters Thickner vs. Glucomannan Powder
I've been trying different coconut milk ice cream recipes and ran across Kevinpa's. Has anyone tried it and how did you like it?
I also wondered if I could use my glucomannan instead of his Dixie Counters Thickner? I think he called it Not/Sugar? Thanks so much! |

Glucomannan works a bit differently- it may take some experimenting. I'm new to glucomannan. The NotStarch thickener is guar gum and xantham gum if I remember correctly. I use straight guar gum sprinkled out of an empty spice jar. It takes a minute to thicken so I sprinkle it over the top, mix it in, wait a minute and then see if it needs more thickening.

I want to try using alcohol for keeping it spoonable. I've read or seen it somewhere that it keeps it from getting rock hard. I now make 2 servings at a time for that reason.It might have even been it a thread.
I've never tried gluc. in ice cream. I think it's worth the try. Let us know how it goes if you try it. |
