Low carb peanut butter cups (adapted from food.com)
1/2 cup butter 1 ounce unsweetened baking chocolate sweetener equivalent to 1/3 cup sugar (I use liquid splenda) 1 tablespoon cream 4 tablespoons peanut butter 1/4 cup chopped nuts (optional - or use chunky peanut butter) Directions: Heat butter and chocolate in the microwave until the mixture is melted (about 60 to 90 seconds - do not boil). I use a large pyrex measuring cup or glass bowl. Stir the sweetener, cream and the peanut butter (and nuts if using) into the melted mixture. Divide mixture evenly between the 10 lined mini-muffin tins or silicone molds. Freeze until firm. Store in freezer. Note: I usually double the recipe, it's very good! If you do find coconut oil, you can use half coconut oil and half butter instead of all butter, but it tastes very good either way. Last edited by Mistizoom; 05-03-2013 at 06:08 AM.. |

Check the organic foods aisle at the store for coconut oil, not the baking aisle. You may have better luck there

If you only make chocolate once in while I would suggest To me equal.. It is the only sweetener that makes chocolate taste like chocolate...

Stevia and erythritol both do well with chocolate. I usually use sucralose ( a little), stevia an erythritol as my combo.

Chocolate will be bitter unless there is some sort of milk product in it - like skim milk or whole milk powder. Sucralose will not sweeten chocolate adequately unless there is a milk product added. Best to sweeten with a combination like others have suggested. I like powdered erythritol and EZ- Sweetz combined.

OP, all may not be lost, you could remelt your cups in the microwave (if you still have them) and add some other sweetener. I would recommened trying erythritol or Truvia is you have it, to taste, and see if that helps. |

You can use butter in place of coconut oil in most chocolate recipes...it is very rich and melts easily like the coconut oil, so best to keep chocolate refrigerated after making. And yes you should combine sweetenerrs...if you can get your hand on truvia at the stor it is erythritol mixed with stevia...then add in splenda and you will have an excellent blend.
