Sushi Rolls! ♥♡
So the thing I miss the most is sushi. I am a determined person so if I miss something bad enough I find a way to make it low carb. In the 3 years that I have been doing low carb (not counting the 1 year break) I never even considered finding a way to make the rolls. Well after doing some google searches I bit the bullet and got my dusty sushi gear out. I made california rolls and smoked salmon love rolls....OMG I have been missing out huge! For the "rice" I just grated cauliflower raw and microwaved for 2 minutes. I added just enough cream cheese to mix in and give it some form. I also added .5 tsp acv, .5 tsp splenda, and .5 tsp salt (my measurements are rough estimates as I didnt measure). Let it cool and make as you normally would. ♥♡♥♡♥♡♥♡♥♡♥♡

That looks really yummy! I love sushi too.
I took it one more step to the "easy side" - I just roll my stuff inside a sheet of toasted nori, temaki-style - like an ice cream cone. I "stick" it together with a little sliced avocado - no rice or rice-like substance required. I like the following combos - smoked salmon, cream cheese, avocado; tekka (raw tuna), avocado, spicy tobiko; unagi (BBQ eel), cream cheese, unagi sauce, cucumber strips. You can make them that way with whatever filling you like though, once it's rolled into that cone shape the stuff stays inside.

Wow those look good! My problem with sushi is that I could eat that whole plate, and then ask what is for dinner! Great idea with the Cauli-rice and cream cheese, though.

I just adore sushi! I've been making it with a small amount of well-seasoned quinoa to stand in for the rice, keeping it fairly low-carb. I also make my own sugar-free pickled ginger which is SO much better than any I have ever bought from the store! I'll have to try the cauli-rice version, now.
