Chicken with avocado cream and chile garlic mayo
![]() 2 slices chopped bacon 2 chicken breast 3 garlic cloves 1 small avocado 4 tbsp cream cheese 3 tbsp mayo 1/2 tbsp minced jalapeno 2 cupps shredded lettuce 6 olives (optional) 1 slice sharp cheddar (optional) 2 tbsp olive oil Cook bacon until crisp, leave pan and bacon greese to cook chicken in. Pound chicken breasts to equal thickness. S&P and rub tsp minced garlic on skinless side. Cook chicken on skin side first -cooking 3/4 (will be white on top sides and brown under- then flip and cook through (this way garlic doesn't get too carmelized/burnt) Meanwhile- In bowl, mash then mix avocado, cream cheese and one tbsp olive oil, S&P. In another bowl mix mayo, pepper and 1/2 tbsp minced garlic. Assemble- Shredded lettuce on bottom, Sliced chicken on top (pour pan juice over chicken) Put cheddar and olives on salad (optional), bacon over chicken and 2 thick sauces on sides. I think it's a great flavor profile- salty bacon, garlic spicy mayo and sweet creamy avocado. maybe 8 gm carb per serving- less without olive n cheddar |
