Pickled Beets
Just made my third batch of pickled beets today, this is something DH has missed more than potatoes, go figure. I don't have a garden like I did many years ago in the Midwest so I improvised with canned beets. The label says 8 grams of net carbs per half cup of beets, but as a pickle/side isn't too bad. I haven't tried canning them, but do them in the fridge. Today I added some sliced onions to half, and tried using Pickle Crisp in half for a comparison, it is supposed to add some crispness. We'll see. The ones without onions and Pickle Crisp were very good if you like pickled beets anyway.
2 15 ounce cans of sliced beets 1 cup vinegar (I like cider vinegar best) 1 cup sweetener equivalent (I used 1 cup xylitol and 9 drops Sweetzfree) 1/2 of a cinnamon stick 8 whole cloves Drain beets, reserving juice. Mix juice, vinegar, sweeteners, and spices in a saucepan, bring to a boil. Simmer for 10 minutes to release spices. Remove cloves and cinnamon stick. Pour juice mixture over the beets (I left the spices in the first time and found them a bit "clovey" but DH loved them) and refrigerate. We sampled them the next day and they were pretty good, but excellent the day after. Yield is two pints or so... christyjo |

I would have scarfed that whole batch as I love pickled beets!! So you left them steep overnight? I'll have to try this. Thanks.

Pickled Beets
My Dh loves them and they are so easy to do.
He likes me to pickle them with sliced red onions. Even if you don't have home grown, canned beets do very well. |

Sounds like when you fish the beets out, you could add just a little more vinegar and sweetener and do a couple more cans.

I love pickled beets but I just use beet juice, vinegar, a little water and some onion rings. Throw it all together and let it sit of several hours. I eat them on my salads.
