Choucroute Garni
I lived in France for a number of years and ate this often. It's delicious...if you like sauerkraut. Count carbs in sauerkraut (lots of fiber and approx. 6g carb per cup) sausage, ham and wine/beer.
Big Jar no sugar Sauerkraut or 2 cans 4 or 5 Bratwurst and/or polish sausage 1 lb. smoked ham or 1 or 2 ham hocks 4 slices chopped bacon 1 lb. pork steak (fatty pork) 10-20 peppercorns 10 Juniper berries (optional) 1 cup of dry white wine (or low carb beer) Drain, rinse and squeeze water out of sauerkraut. Put all the meat in the bottom of a large pan (whole or large chucks except for bacon) Cook for a few minutes on med. browning meat. Top the meat with the sauerkraut, peppercorns, juniper and wine. Simmer covered until meat is cooked. Serve with your favorite mustard. Add salt as needed- Sometimes the meats are salty enough. Here's a good NY Times less carb friendly recipe- Choucroute Garnie - Recipes - The New York Times Note- making it with wine is more French, making it with beer is more German. Both good but with different flavor. ![]() |

I'm not personally fond of sauerkraut, but thank you for sharing your recipe with our members. And welcome you to the forums! My Mom lives in San Antonio at Air Force Village. So I down there often throughout the year. Love the great Mexican food that can be had in S.A.
