Hard boiled eggs
What does it mean when you try to peel the shell but its too stuck and half the white comes off with it? I have no idea if I'm overlooking or undercooking because I put them on and go off to do chores. I usually let them go 10 minutes after I see them boil. What do you think?

What it means is that your eggs are too fresh!
There are a million and one ways to make HB eggs but if you start with fresh eggs, you'll likely have trouble with them peeling no matter how you cook them. Do a search on this forum for "hard boiled eggs" and you'll find tons of ways to cook them. My personal favorite is in the steamer for 13 minutes, then plunge into ice water. |

The shock-chill is important so the egg shrinks away from the shell. The air pocket makes them easier to peel
So whatever method you use, as soon as they're "done" cooking, ice cold water immediately helps a lot. |

I agree the eggs are too fresh. When I make hard boiled eggs I make sure there older and I put them in a pot of water and bring to a hard boil then put the cover on and take of the burner and let them sit for 15 min. They come out perfect every time.

I put a teaspoon of baking soda in water and bring it to a boil. Drop in eggs with a spoon gently. Cook for 14 minutes then remove the eggs and put them in ice water to cool...I haven't had an egg I couldn't peel since doing this...good luck.

Hello...
I have chickens...and so my eggs are super fresh.... And I recently found that that adding a tsp of baking soda makes a HUGE difference. I put my eggs in a pan....add salt and baking soda....cover with water. Bring to a boil...cover and remove from heat....sit for 10-15 minutes...rinse in cold water...put in fridge until cooled off. You will find peeling them a LOT easier than before. This is what works for me... I my fresh eggs! YUM! |

Enjoyed your reply about fresh eggs & hardboiling them. I can't believe there are fresh eggs in the supermarkets now but maybe times have changed. Noticed you are from Upstate NY/Catskills. My DH & I always tease Western NewYorkers who call themselves "upstate NYorkers"!! We're from Greene Co. south of Albany & consider ourselves "upstaters". The child in your avatar is beautiful! I used very fresh eggs yesterday and this method worked:
*Cover eggs with lukewarm water until the water is about 1/2" above the eggs, and add 1 tsp vinegar and 1 tsp salt to the water. *Bring to a boil and boil 1 minute. *Cover and set aside for 11 minutes. *Drain, rinse in cold water until cooled off and immediately plunge into ice water. Really ice water. with a lot of ice cubes in it. *When eggs are cold, drain and crack all over gently by rolling around in the pan. *Peel from the large end, because that is where the air bubble forms between the membrane and the shell. *As these were very fresh eggs, I still had to tread lightly and peel gently, but I got 20 perfectly peeled eggs! |
