Thanks for the suggestion Charski. Well I love the duck fat but not a fan of the duck meat. Tasted similar chicken thighs to me and I don't like chicken thighs. I love the duck fat though! While the drumettes were in the oven, I tossed in some radishes and celery root. I read that cooking potatoes in duck fat is amazing. I figured I'd try it with a potato sub to see how that would work. The Celery Root was OK, nothing spectacular but OMG, I have a new favorite LC food. The radishes were FANTASTIC! I've done radishes as home fries or oven roasted before but OMG, cooking it in the duck fat took it to another level. Wonder what other veggie would be awesome in this fat. Will be experimenting over the next few days before I go back to work.
