Tip for Improving Homemade Almond Flour
I think I've figured out a way to get our own almond flour a bit finer. I started processing the dry ingredients with the almond flour in my food processor. Mine has a serrated S blade, which I believe does help too.
For example, if I'm making The Chicken Lady's fudge cake, I'll toss the almond flour, cocoa, erythritol, and other dry ingredients into the processor and give it all a whirl until I think I see the almond flour just barely starting to clump. Also, I try to start with cold almond flour with the hopes that will increase processing time. Alternatively, I convert The Chicken Lady's same fudge cake into brownies. Yum! I replace the eggs and oil with mayonnaise, and I add the almond flour to the mayo, cocoa. and Erythritol and give it a good whirl in the food processor. Very interesting. I like using the food processor for making
lots of things with almond flour. My bread is very fine in the crumb. I'll give it a go as I'm going to try making Chicken Lady's fudge cake very soon. |
