Linda Sue's Hamburger Salad
HAMBURGER SALAD
1 pound ground beef 1 small onion, chopped (about 2 1/2 ounces) 1 clove garlic, minced 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 cup mayonnaise 1/3 cup dill pickle relish (see my comments below) 2 tablespoons yellow mustard 16 grape tomatoes, halved (about 4 1/2 ounces) In a large skillet, brown the ground beef with the onion, garlic, salt and pepper; drain the grease. Cool or chill until no longer warm. Mix in the remaining ingredients and adjust the seasonings to taste. Serve at once or chill to serve later. Makes about 4 servings Per Serving: 413 Calories; 35g Fat; 20g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs This was SO GOOD. I love to keep cold chicken and tuna salads in my fridge for quick easy lunches but I was getting kinda sick of chicken. This totally hit the spot. I left the onions raw for some crunch, used my DH's homemade dill green tomato relish and - wow. This was super good. I didn't even come close to eating 1/4th of it so the serving size will be higher for me. The only change I will make is to rip an American cheese slice into shreds over my next serving. I like your idea of using raw onions instead of cooking them with the meat. I will keep that idea in mind the next time I make it. I found that recipe in Taste of Home magazine and it hardly needed any tweaking to make it low carb. They said to serve it on buns but who needs a stinking bun??? Just give me a fork!

Now that I think about it, it's actually very similar to the Whopper and Big Mac salad recipes that are posted here minus the lettuce.
