looks amazing!! we make pork rind crusted pork chops (so meta :P) and these look like something i would like to try. was the recipe that easy, just coat in egg and roll in crushed rinds? our chop recipe calls for almond flour and buttermilk as a coating (so the rind sticks). did the rind stick ok with the egg coating?

Yum yum!!
![]() If you want to try something a little different - use some Brie instead of cream cheese. I cut the rind off (that's where a lot of the strong flavor is) and just chuck it in the hot cauliflower. DH, who professes to hate Brie cheese, LOVES the cauli this way. I waited til I'd made it several times before I told him what was in it! ![]() |

We like to add in some chopped bacon bits to the mashed cauliflower too.

That looks delicious and is one of our favorites. I add almond meal to the pork rind, parm mix and don't bother with egg. It sticks fine for me. I also add steamed sugar snap peas.
Charski-Brie sounds really good. Love Brie. I trick my husband by hiding vegetables in things all the time. Lol Its for their own good right? |

sometimes mashed cauliflower tastes so much better than real mashed potatoes. is that just me, or is it LC living for such a long time?
