Chicken Club Stack
A little low-carb take on a classic chicken club sandwich
1T mayonnaise 1/2tsp dijon mustard shake of cayenne pepper Mix and set aside 2 strips bacon (fatty is good here) 1 boneless, skinless chicken breast, pounded kind of flat but not too thin, salt and pepper as you like 1 thin slice deli ham (your favorite brand) 1 thin slice deli turkey (your favorite brand) 1 slice mild cheddar cheese 1 cup chopped romaine lettuce Fry the bacon until crisp and remove from pan. In the bacon fat saute the chicken breast for approximately 3 minutes per side, until cooked through. Top with 1/2 the dressing, cheese, turkey, ham and cooked bacon, cover and turn off heat to let everything warm through. Toss the romaine with 1/2 the dressing and place on a plate. Place the chicken on top and dig in! Depending on brands, approx 400 calories, 28g protein and 4g carbs.
