The cauliflower blender rice trick
Just letting you know it works quick using a cuisinart blender and frozen(thawed)cauliflower as well as a vitamix and fresh cauliflower(that is shown on youtube).
Put the thawed cauliflower in the blender and cover with tap water (cold). Pulse on high 3-4 times and it's done. Drain and you have perfect cauliflower rice without a mess! |

A brief sautee or steam works for it
I like to put a little olive oil and garlic in a skillet, once the garlic is fragrant add the riced cauliflower, salt and pepper and stir it around for about a minute. It's done then. Also I add cumin, chopped cilantro and a squeeze of lime juice for a spanish rice |

I was telling my sister about this yesterday and she said wow that sounds so much easier than the was she has been doing it.
caukifkower rice can be used as you use rice. spanish rice stuffed peppers stuffed cabbage rice pilaf fried rice She had been using a box cheese shredder. I use a vita mix. Dottie she says you were sent from the heavens,LOL. Tori says THANK YOU!!!! |

I saw this trick a few months ago on LCF and have been doing it this way in my super cheapo blender ever since. I make sure it is very well-drained and dry, then store it in containers in the fridge and pull it out to saute for rice dishes. Just be careful not to get it too fine, or you'll have pieces the size of cream of wheat. Still good for steaming and pureeing with cream, butter, etc., for mashed cauliflower, though.

@Esther, can you advise how long and what setting you used on your vitamix? I tried to do it in mine a while ago and ended up with a big mess.
