High fiber low calorie low carb muffin recipe?
Does anyone have a high fiber low calorie muffin recipe to share? I have been making oat bran muffins for me and my husband and we like them but they are pretty high in carbs. The recipe calls for 2 cups oat bran and 1/2 cup almond flour. I'd like a lower carb version which is also low in calories. I understand that oat fiber is calorie and carb free but can only be used in small quantities. If the bulk of of the flour in the recipe is almond flour it will be higher in calories.Oat bran has 231 calories per cup, almond flour has 640. Does anyone have a low calorie high fiber muffin recipe to share? :stars: Thanks in advance,

I use a mix of 1/2 c flaxmeal, 1/2 c oat fiber, and 1/4 cup unflavored whey protein isolate as the "flour" component of my muffins. I find that maximizes fiber, minimizes carbs, and optimizes texture. The whey protein in needed to keep them from falling apart. It "toughens" the crumb enough to compensate for the oat fiber which makes the crumb extremely soft and crumbly.

I sometimes make this recipe from Stardust Shadow.
Bluffin Muffin 2 Tbsp. flax meal 1 scoop vanilla protein powder 1 tsp. pumpkin pie spice 1 egg 2 tsp. sweetener 1 tsp. butter Mix together. Microwave for one minute. |
I don't have a microwave, do you think the Bluffin Muffin ( great name) will work in in my table top Breville oven? Or the Chocolate OMM? Thanks for the suggestions, drjlowcarb and Soobee. Soobee , you seem to very knowledgeable about using oat fiber. I'm mostly interested in the cholesterol lowing properties of oat fiber as a sub for oat bran. Any suggestions on subbing one for the other? I appreciate all suggestions.

I never use oat bran, so I can't be exact. But oat fiber probably soaks up way more liquid. You might need to increase the liquid in the recipe. Also it soaks up flavor, so you may need to increase salt, sweetener, and spices.
