Bouron Chicken
Hi all,
I wanted to tell you I have been following this great cook named Jay. She has lots of utube videos showing how to make many low-carb dishes. Just do a seach for lowcarb360. I will be making her bourbon chicken with faux fried rice tomorrow. Anyone follow her? there is a video on how to make this bouron chicken. Just and FYI, Debbie.... Bouron Chicken Ingredients 2 Lbs Chicken Breast ( cut in bit size pieces) 4 cloves chopped garlic 1/ 2 tsp ginger paste 1/2 tsp red pepper flakes- (Use less for a less spicy dish) 1/2 cups of Apple Juice sweetened with splenda – Healthy Balance Apple Juice (wal-mart) 3 tablespoons of splenda brown sugar blend 4 tablespoons sugar free ketchup 2 tablespoons brown rice vinegar 4 tablespoons low sodium soy sauce 1/2 cup water 2 tablespoons olive oil 2 tablespoons bourbon *1/2 tsp xanthan gum (optional) Method: Heat oil in pan and add chicken pieces. Cook for about 6 minutes then remove from pan. In a bowl mix remaining ingredients except the xanthan gum. In the same pan add the liquid mixture and bring to slow boil for about 4 minutes. Add the chicken and cook covered on medium low heat for about 15 minutes. *If mixture is not thick enough you can add the xanthan gum to thicken. Last edited by Tater Head; 02-04-2013 at 08:36 AM.. |

Yeah, I'm back on lowcarb. I miss Phoenix sometimes, but I love being near my grandkids here in Texas.
I am making this Bouron Chicken dish tonight. It was so easy to prepare, all I did was cube the chicken breast. In my 4 cup measureing cup put all the rest of the ingredience. Debbie |

Thanks for the recipe. My son loves the bourbon chicken (frozen) from Costco but it's breaded and I'm not planning on buying it again. I'll have to give this recipe a try, and I'll look for the videos too.

Thanks for the head's up for Low Carb 360
Jay is an adorable cook. I watched her making low carb low mein
and she cooks it clean and organized. She also showed us how to use of the fibrous part of the almond after making the milk. I made some scone like things once. She has a recipe for choco chip cookies utilizing the left over almond fiber. Nice videos. She is a newcomer to low carb and has lost her first poundage. She sez. "I love my food" |

UPDATE
Hi all,
I wanted to report back, this recipe rocks! my whole family loves it and it was so easy. You only have 2 containers to clean, one with cubed chicken and one with the rest of the ingredients. I did need to add the X-gum, so I sprinkled it over the mix at the end and let it simmer for a few more minutes to thicken. The fried rice recipe is very good too, but what a pain in the rear to cut up everything. If you make it, have all the veggies cut , diced the day before, putting it together was no big deal at all. I needed to add more soy and sesame oil to my taste. FRIED RICE, Ingredients 1 Head of Cauliflower (chopped using food processor, please see the video) 2 eggs (beaten) 1 tablespoon soy sauce 2 tsp sesame oil 1 stalk of celery (chopped) 1/2 of a carrot (chopped) 1/2 red pepper (chopped) 1/2 onion (chopped) 4 green onions (chopped) 1/2 cup green beans (I used frozen) 2 tbsp oil salt and pepper to taste Method: 1. Add oil to the pan and add the onions and saute for 2 minutes. 2. Add the cauliflower and fry for about 3 minutes. 3. Add the red pepper and the carrots and cook for 1 minute longer. 4. Move the cauliflower rice to one side and add 1 table spoon of oil. 5. Add the egg and scramble. 6. Mix into the rice 7. Add the green onions and mix into the cauliflower rice. This is the best low carb rice, so tasty and so low in carb! Enjoy! I think Jay is so sweet and I love her videos. Missed you all too, I keep and eye on you though Debbie....
