Buffalo Wing Chicken Salad (Like mayo based chicken salad)

I came up with this to use up the dark meat from Rotisserie chicken that normally is not my favorite... and it was really good!

Leftover cooked chicken, cut into bite sized pieces or shredded
Celery, cut into bite sized pieces
Carrots, cut into bite sized pieces
Sprinkle liberally with hot sauce*
Mix with ranch dressing or blue cheese dressing to bind together
Mix in blue cheese crumbles.

*most people will like Franks hot sauce. My fav is Cholula, its not very hot at all, which works for my sensitive tongue.

Bonus: this get everything into a format that is easy to eat with a fork at work, so you aren't eating with your fingers and dribbling hot sauce and dressing down your shirt!

Mmmm, that sounds really good!!

I love the Cholula too - especially the Chile Lime and the Chipotle flavors. Yum.

I've only seen the regular... I MUST start the hunt for chipotle and chile lime cholula!!!!

Oh yeah! They have the chile lime, chile garlic (also really good), chipotle, and regular. I love them all.

You can go to their website and check 'em all out. The chile lime is particularly good for hot wings - mix with some melted butter and toss your cooked wings in the sauce. YUMMY!
