OMM One Minute Muffin Frosted Lemon Poppyseed
This was a delicious breakfast I just made taking bits and pieces of various recipes from this site:
Muffin: Mix dry items in small bowl sprayed with Pam: 1/4 cup almond flour (I swapped out about 2T of almond flour and replaced it with flaxmeal) 1/2 t. baking powder 1/2 t. poppy seeds 1-1/2 t. splenda Add wet items and mix all well: 1 egg 1 T. butter broken up in pieces 1/2 t lemon flavoring (buy in store near spices, $3-4 bottle size of vanilla bottle) Microwave on high one minute, then plop on plate Frosting: Heat in microwave 20 seconds then mix till smooth and spread on muffin: 1 T. or so cream cheese, a little more ok 1 t. heavy cream 1 t. splenda Very delicious! |

Yes, that does sound good. I might try it with real lemon juice and zest rather than the flavoring. Thanks for sharing the recipe here!
