Lemon Fat Bomb
I posted this recipe last September, but it was buried inside a 'fat bomb' thread, so thought I'd post it seperately.
This is so lemony and yummy. Lemon Fat Bomb (About 8 servings) 1 ounce cream cheese, room temp. 2 tablespoons butter, room temp. 2 tablespoons coconut oil 1 tablespoon sour cream 2 teaspoons lemon juice 1/8 teaspoon lemon extract sweetener to taste Stir together the cream cheese and butter. Add the remaining ingredients and stir until smooth. Drop by tablespoons onto wax paper and freeze. |

Oh, I can't wait to try these out, Widdget! I'm glad you extracted your recipe for a separate post, as I had indeed missed this one. Mmmm. These sound delightful! I can see these being made with some coconut added, too! Mmmm.

Does it make a big difference if you don't have lemon extract? Think there's an acceptable substitute?

I've made these twice and can attest to their awesomeness! The first time I ate the whole batch! The second time I doubled it and portioned it out.

Why not some grated lemon rind, in a pinch, especially if you use fresh lemon juice? These sound wonderful. I am going to make them tonite!

I made some tonight, but I left my brain on idle while I very carefully measured 1 ounce of cream cheese instead of 1Tbsp.

I just put a batch in the freezer. The little bit I licked off my finger was great... but I'm a sucker for anything lemon. Love that they are an induction friendly treat and glad you put them in a separate thread!
I do have a question. Do I leave them in the freezer just long enough for them to firm up and then transfer to fridge for storage, or are they to be stored in the freezer as well? |

I dropped it by a tablespoon each in my silicone mini muffin pan then popped them in the refrigerator. The perfect size for me.

I made another batch today replacing the lemon juice and extract with 1/2 a t. of vanilla extract and 1/4 t. peppermint extract. I prefer the lemon version, but the mint is nice too.

I just wanted to pop in to this thread again to THANK you for this recipe, Widget. I just yesterday made these, but did add the coconut, a bunch of lemon zest, much more lemon juice and I used coconut cream instead of sour cream. They were FANTASTIC!! This is what mine look like (they're too big, but my smaller mold was "in use"). I'm seeing other flavors on the horizon for this base recipe.

Yep! You'll get in in email if you subscribe. I'm always surprised at the light differences at night, when this pic was taken, with artificial light and flash. Daytime shots are usually much nicer.

I just went to my e-mail and it's there YAY!!!
Tofucheez you are right I don't do dairy. I'm going to change the cream cheese to D/F yogurt. I think it will come out creamy and delish. WOW theese sound so good!! |
