Missed Fried Potatoes
I am new to this blog and really love it alot. This may have already been posted prior to my finding this blog. I have been making this because I grew up on fried potatoes and onions and missed them so much.
Instead of potatoes I now cut a head of cabbage into thin strips. Then I fry up 2-3 slices of bacon, cool and crumble them and set them aside. Then in the bacon grease I fry a half of a small onion cut into slices and set it aside. Then using the rest of the bacon grease I fry the cabbage strips till they are tender crisp. Then add in the onions and bacon pieces and serve. Sometimes I have to add more bacon grease, depends on the amount of fat in the bacon strips. Yummy, and I dont miss the potatoes so much anymore. sounds good..... I miss my big pan of fried potatoes occasionally too

i use sweet dumpling squash to make fried potatoes and delicata.

We love squash browns - peeled/diced Delicata squash, onion, bacon fat, crumbled fried bacon at the end, or strips of bacon as a side. They ALMOST have that "starchy" mouthfeel of potatoes and they taste BETTER!

miss fried potatoes
I tried the radishes, jimica and turnips--- did not like the texture. I always liked cabbage but had never fried it and was amazed when I gave it a try. I also fry cauliflower this way but like the cabbage better. My non- LC hubby loves the cabbage dish too.
