Low Carb Poppy Seed Dressing
An online friend asked me to post this recipe so here you go.
I love Poppy Seed Dressing on tuna and chicken salad, so I came up with this recipe a couple of years ago and we have really enjoyed it. The family can't tell any difference between this one and the real thing. It really will keep forever in the frig. Keep it in a jar with a tight lid and give it a good shake before you use it. Poppy Seed Dressing 1 1/2 cups Splenda 2 teaspoons Dry mustard 2/3 cup Vinegar 1/4 of a medium size onion 3 tablespoons Poppy seeds 2 cups vegetable Oil Combine ingredients except for the Poppy seeds and the oil in a food processor. Process until smooth, and then slowly add the oil. Add poppy seeds and blend lightly. Chill, covered, in refrigerator. I keep mine in an old mayo jar in the frig. It will separate after sitting for a while but a couple of shakes and it’s good to go. It will last practically forever in the frig. |

Your welcome guys, my favorite lunch is chicken salad on avocado halves with poppy seed dressing. When I was a teenager I used to go visit my aunt in New Orleans and she would take me to a small cafe where they would serve that along with some toasted french bread. It was always sooooo good!!!

We really enjoy poppy seed dressing at our house too but haven't had a low carb one so I made this right away. I had also recently received my order of Swerve so subbed that for the Splenda.
It didn't work out!! The Swerve did not dissolve at all! The flavor was perfect except that the salad had what seemed to be sugar crystals in it! So weird! I thought I read somewhere that erythritol has to completely dissolve otherwise it retains its cooling effect, but it didn't seem to want to dissolve in this recipe. Next time I will substitute liquid stevia for the splenda and see how that does. Another problem I had with erythritol was when I used it to make a crumble coating for my muffins. Again, did not dissolve. Maybe it water soluable and not oil soluable. I dunno. Has anyone else had this issue with Swerve? |
I made this recipe yesterday. Liked it very much over a salad of diced chicken, avocado, and celery. Repeated the salad again for lunch today.
Instead of splenda I used stevia and xylitol. Made only a half recipe to make sure I was going to like it. It's a keeper! Thanks for sharing, chicken lady. |

For a little snack when I feel like I need a little something but I don't want anything big to eat, I like to pour a little of the dressing out in a bowl and dip pork rinds in it. I love the sweet and salty crunch. |
Sub. Never had poppy seed dressing but it sounds good.
