Chinese eggplant=accidental home fries!
I have some ricotta and I wanted to make a quick eggplant-parm kinda snack; I only have Chinese eggplants in the house, but I figured what the heck! I sliced one kinda thin and fried the pieces. I had to taste one before I put the sauce & stuff on them, and it reminded me of a fried potato! It even got crispy...leave the skin on, that really gets crispy.
I usually cook or cut the pieces differently, so I've never gotten this texture before. I had my skillet on pretty high heat because I was in a rush. Happy accident!
