options for chicken-liver spread
my honey made some chicken-liver spread yesterday. i want some, but not how i used to have it -- on bruschetta.
what's your favorite LC option? tia, tao |

Chicken Livers...
I still make the livers as I used to but I put the spread on
LC Crackers. There are many cracker recipes on this board. Easy to make...I also put it on my lc deli rye bread. So good. Almond Onion/Rye Bread Preheat oven 350F Spray with release agent 8 1/2" by 4 1/2" baking pan . COOKS' NOTE: HAVE INGREDIENTS MEASURED OUT AND RIGHT NEXT TO THE PROCESSOR. Place Ingredients into Food Proccesor in Order they are Given: 2 c. unblanched almond flour Rounded 1/4 tsp. salt 1 full tbs. caraway seeds 1 rounded tsp. of onion powder Process until well mixed. ADD: 1 tbs. dark molasses 3 tbs. water 3 tbs. Peanut oil Let this process until it is a soft dough If it is dry, add a bit of water, too soft? Add a bit of flour Let it process a full minute ADD: 3 eggs, Emulsify for a minute. You will be able to see it become a thick batter batter. Add: 3/4 tsp. baking soda 1 tbs. plus 1/4 tsp. white vinegar Blend this very well. Over a minute. Pour into your prepared baking pan and bake for about 30-40 minutes. Cool on a rack. When cold, cut loaf in half, then stand it up and cut 5 pieces in each half. 10 nice slices of onion/rye bread that holds up to large mile high pastrami or any other sandwich. __________________ Barbo

thanks, TBipp, I found them both.
Crisp Nutty Crackers - a Spin-off of the beloved Almond Thins Almond Thins those recipes both look great. i can really imagine the almond thins with the spread, but i think i'm going to have to try the coconutty ones, too. thank you! ![]() i sometimes fight to not to overeat crispy/salty savory things. would you have any concern that these might be triggering for me? (if so, i can try a small batch.) doing the search i also saw an idea about making crackers out of a low carb Lavash offered here, that looked pretty good, too. and safe! |

ok, i'll try with the full recipe. if i find myself tempted to overindulge, i'll freeze some in batches. they will probably need to be recrisped after freezing, so that will keep me in the driver's seat.

You can also stuff the paté into celery ribs - easy, crunchy, holds plenty of paté and I don't overeat it! Unlike the almond thins. I can clear a whole panful of those things at an alarming rate.

it's super simple to make.
sautee some minced onion (bacon grease or schmaltz is good here) until transparent. add some minced garlic and a pinch of allspice until garlic is fragrant. add chopped chicken livers, and cook until no longer pink. place it all in a mini chopper and whizz it up. season to taste. and now we have two votes for just eating it on a spoon! ![]() |

Wow! I bought chicken livers just before Christmas to feed my cat (and eat the leftovers) because she was very sick. Just stuck them in the freezer until I could decide to get them out and make something. DH won't touch them, so I needed something good I could nibble on for a few days. This'll do the trick. Thawing them right now. Thanks!

awww, that's a sweet story, Diana. i'm glad your Emma is better. we said goodbye to our little cuddle bug Anu just before Christmas, and we are missing her hugs. give your Emma a kiss for me.
i have some turnips and rutabagas i need to use up, and i found a recipe for turnip pancakes, so i'm going to try those with the chicken liver spread today. i haven't had time to make the crackers yet -- yesterday was my hubby's bday -- so i was using melba toast i made out of a loaf of rustic bread. it fits in my carbs if i don't overeat for the day, but it's not what i want. my engine works so much better if i give it the right fuel. ![]() |
