Ok Officially in love with my Waffle maker....
1/4C almond meal, 1 egg, 3/4 tsp baking powder, large pinch celery salt, small pinch sweetener, 1/4 C shredded mild cheddar Mix together and put in waffle maker for a few minutes till brown. I placed in freezer to cool it down and made an awesome ham and Swiss. 2.5 total carbs! Breakfast total 2 carbs 1/4C. Almond meal,1 egg, 3/4 tsp baking powder, large pinch cinnamon, scant amount walnuts, 2 capfuls Torani Vanilla, or any sweetner add butter and sugar free syrup Going to try a pizza crust tonight for dinner..........today is my waffle day hahaha

We use to make this all the time when I used cream cheese.
Waffles with stuffed cream cheese and berries like they use to make from DENNYS or IHOP. My kids and family loved these with s/f syrup. |

I keep looking at waffle irons, there are some really inexpensive ones but then I always think, but just one more thing to store. But now that I am truly committed to this WOE and looking at these great pictures, I think I will get one. Next time I see a great buy, I will snatch it up.

We used to make "waffle bread" ALL the time, using BettyR's amazing waffle recipe - made up a bunch (I think the recipe made 9 IIRC) and used them allw eek for sandwiches. They're so nice cuz the waffle holes hold condiments without drippage!
They're great for hamburgers too. |

I just got myself (for Christmas) a waffle iron from Walmart that makes waffle sticks for this type thing, or not, depending on what you want. It's under $20 and I did site to store. It's pretty neat.

Thanks for this! Made one yesterday for hubby's breakfast using the 1st recipe, it smelled a bit too eggy for me (I don't like eggs) he liked it so much though he asked for another this morning as we were getting into bed last night. This morning I tweaked the recipe as we were out of shredded cheese, used 3-4 oz of cream cheese & doubled the almond flour and was able to get 2 waffles out of it. By doubling the almond flour the eggy smell was gone so I used mine to make a bacon sandwich. YUM!!!!

I honestly don't think it matters what waffle batter recipe you use, as long as it has enough elasticity that it doesn't crack, crumble or snap when made into a sandwich. I think it's the cheese, in whatever form, that gives it that bendability. It's the *idea* of using the waffle as bread that has changed my world.
![]() I've got my eye on this Cuisinart waffle maker. It makes 6 square ones at a time! It's expensive, though. The one I have now only makes one big round one at a time. If I get to the point where I'm making a ton of these, I'm going buy the Cuisinart 6. |

I am going to shop for a waffle maker this week. Would you all recommend a regular one or a belgian one? Round or square? The smaller and easier to store the better for me, since I will be mostly making these LC, I will be cooking for 1.
