Toasted almond-coconut crunch cereal
I stumbled on this blog called "I breath, I eat", and she has a lot of really good looking low carb recipes. She has this one called "Cinnamon Faux-st Crunch Cereal" and I was really inspired by it to make my own breakfast cereal. I used her recipe as a template and followed her baking instructions. This cereal was pretty darned tasty. It was like almond delight meets cinnamon toast crunch. I think next time I will use coco powder instead of cinnamon and make a chocolatey cereal.
I blended the following in my Ninja: 1/2 cup flax meal 1/2 cup almond meal 1 tbls coconut flour 1 tbls cinnamon 1 tbls coconut oil sweetener to taste 1 egg Then pat it out on a parchment covered cookie sheet and baked at 300 for 15 minutes. Took it out, cut into little squares, then put it back in at 250 for 10 minutes. Then I turned it off and left it there for a few hours until it was totally crispy and dried out. Then today, I took about 1/2 cup of slivered almonds and 1/2 cup unsweetened coconut flakes and toasted them in a skillet and mixed that up with the cereal squares. Serve with your low carb milk of choice (Hood, almond, coconut, etc.) and enjoy. It makes about five half-cup servings. Here is a 1/2 cup of cereal before and after adding milk. I made this today. I added 1/2 c sliced almonds and 1/4 c. coconut to the mixture before baking it. Instead of cutting into squares, I made crumbles, and baked it all together. Its wonderful. I got six 1/2 c. servings, calories-

Dorcas Beautiful!!!!! I love this stuff.
I make this all the time but without flax (allergic). I use it to munch on. It's my crunch. You can also add anything you like. I use other nuts and flavorings. |

Thanks for sharing this recipe! I made it the crumbled way, I low baked it for quite a while to get it to the right crunch. It tasted so much better than I was even expecting! Great change from the usual egg breakfast.

Netrition sells a coconut chips (not flakes or shreds- by Nutiva) that when sweetened, sprayed with oil and well browned in a slow oven turn into wonderful cereal. The browning gives them a grainy flavor and the texture is spot on. I eat them with plain greek yogurt that's been thinned out similar to milk with vanilla or coconut sf DaVinci syrup.

I use golden flax meal. My almond meal is almonds I ground in my blender, so they are slightly chunky. Maybe thats what you see?

To day I made a peanutbutter version of this cereal. Omit the coconut oil, add 2 TB peanut butter and mix all together. spread crumbles on parchment and baked til golden brown. Soo good.

I just made a batch of this cereal. You should smell my kitchen! It's awesome!! I added banana flavoring to this batch and 2 TB of sunflower seeds along with the sliced almonds and flaked coconut.

Here's another batch I made. I tried a brown sugar flavored variation, rolled it thin, and tried to make 'flakes.' It didn't get crispy, but I'll eat it anyway.

195, total carbs-7.8g, fiber-5.7g. = 2.1 net carbs. Then add the counts of anything you add in, like sunflower seeds. I used Kevinpa's brown sugar replacer, which is erithritol and yacon syrup. But I won't do it again because I baked it for hours and it didn't get crunchy. So I'll just continue sweeten with liquid sucralose and maybe 1/2 tsp blackstrap molasses for flavor. This is good! I made the original recipe and added some pecans and coconut and vanilla extract. I Did the crumbles like dmburk did. It's crunchy and really yummy!! I can't wait to try different flavors. I added some unsweetened cranberries to it this morning.

My daughter and I have been eating this all week. It's crunchy and sweet, it really makes a very nice cereal. I'm buying some unsweetened blueberries for a change of pace.
My daughter says they taste like honey bunches of oats. I'm going to get some sf honey and try using that for the sweetener. |
