I love venison. YUM. We got 3 deer this year, so I have a TON. For ground, just use it any way you would use ground beef. The thing to keep in mind is that venison is crazy lean, so you may need to add fat to it, otherwise it gets dry. Personally, I love coconut oil for this, but I've used olive too - just depends on your taste. Or - you can mix it 70/30 with ground pork sausage. Doesn't really change the flavor, but it will up the fat content. YUM. I do a moussaka like this, which is really yummy. (eggplant lasagna) |

If you find it has too much a "wild" taste you can mix with other ground meats. Use in all recipes just like ground beef. I was given a package and made chili and spaghetti sauce.

I just made venison meatloaf and chili in the last week. I love wild meat.
I'm suppose to be getting some moose in the next few weeks from Alaska. YAY!!!! Yes add that fat. I also use both fats and sausage, ground meats. |

I have some in my freezer too and didn't know what to do with it.
