It's all Barbo's fault!!!!

I made Barbo's cornbread Barbo's First Draft Corn Bread LC

The only change I made to the recipe's ingredients was the Carbquik to Jen's Bake Mix. Instead of the 8x8 pan, I used my whoopie pie baking pans and got 24 of those dangerously delicious cornbreads!!! My DH said they were pretty good and would satisfy that wish for cornbread!! I make my own little baking cups and sprayed with buttery Pam.....

I only ate 6 of the little cornbreads for about 9 net carbs!

I'm about to pop! SOOOOOOOO GOOOOOOOD!!! Thank you, Barbo, for this excellent recipe!!!

I think it will stay at first draft. Good name for it.
Unless you would like to rename it sorta like Char's tee shirt?

I think your "First Draft Cornbread" is awesome! Cornbread is something I have missed and this fills that spot quite generously! I was only going to eat 3 -- and I kept munching -- so good! I'm going to use some of the leftovers to make ham and cheese mini sandwiches (warmed up and cheese all melty) for lunch tomorrow.

The best surprise of all -- these did not have a negative efffect on my blood sugar!

(BTW - I like your Lowcarb Kitchen!) THANKS, again, for the recipe! dianne

I am so thankful for ALL the recipe gurus here on LCF. And I know from the number of my goofs, to get a first draft recipe as delicious as the cornbread is awesome in my book! The bake mix is a great exchange. I cannot tolerate Carbquik. All of you kitchen wizards rock! Dianne
