suggetions for the ham bone I have sitting in the fridge...?
I have a ham bone. Before the LC WOE I would have made split pea soup. But now I don't want to waste it. What to do with it. I'm going to the store in the morning for supplies...whatever I end up doing. Any suggestions are appreciated. I've got tons of left over ham too, but I have that covered...but I have reserved some for whatever I do with the ham bone...TIA all!

Ham bone conundrum
Hummm... A ham bone not for pea soup... what about using it in a way like you would use bacon... for the smokey flavor? I am thinking of a chowder (ok, I am really thinking of smoked salmon, which is my all time favorite indulgence, but trying to create that taste). But a creamy soup with the bone boiled in the stock for a while first... So, take low sodium stock (fish, veggie, or chicken) and dump it in a pot with the ham bone and boil for an hour or two covered, then remove the bone and add chicken or fish, chopped celery, sauteed diced onion, diced turnips or daikon radish or cauliflower as a potato sub, and some cream or half-and-half. Season as you like - I'd probably use bay leaves and thyme. Cook just long enough so the veggies become soft. You can use grated parmesan cheese or some other thickener if you want. Let me see if I can find it. I make pea soup with green beans, the bone and other stuff. I don't completely follow this recipe. I make mine like I use to. I make this all winter. Love it. If you make it the way you use to it will come out great. YUM!!!!
I use a ham bone and a crockpot. It works well with an immersion blender. I figured it out! I bumped it up. Linda Sue has a pic of the recipe. Last edited by rosethorns; 12-27-2012 at 06:21 AM.. |

I've frozen a beautiful ham bone with lots of ham to make soup. I make mine mostly vegetable(lots of kale or spinach)and then add a can of white kidney beans. They have about 11 net grams of carbs for 100 grams of beans,and are used as the base of carb blockers. I make it very meaty and it's so satisfying. Other veg I add are a small amount of carrot,lots of celery and onion,brocollini,and mashed cauliflower to thicken it a bit. yummy

Thank you so much Rose and shoo. Sounds perfect. I am headed off to do some Krogering for veggies and some of those beans. I am going to crock the ham bone over night and pull it out in the morning tomorrow. Add the veggie and cook for a few hours and then blend then add some some more veggies for texture. Possible some grilled onions. They always add some depth. I had my heart set on pea soup and I couldn't get away from it.
I just got an immersion blender for my birthday! |

Bella....here is how I do mine
Mock Pea soup. 1 ham bone 1 onion chopped 2 cloves of garlic chopped 1 tsp. dried thyme 2 boullion cubes one small carrot chopped ( for flavor, if on induction leave this out) 16 oz. bag frozen green beans 1 cup frozen cauliflower 6 cups water 1 c. cream( put in bowl and set aside) Put everything in your crockpot and turn on high for 4 hours. When done cooking turn off crockpot. Take a good ladles worth in the bowl holding the cream. This is called tempering your cream so your don't have curdled cream in your soup. Now I use an immersion blender. If you don't have one this is when you use your blender to make it smooth. YUM!!! If you want to freeze this then add your cream when you eat it. I hope this helps.

I use mine for kale. I cook the ham bone covered in water, some red pepper flakes, a few cloves of garlic, and a chopped onion, at a good simmer for an hour or two. Remove the ham bone, let cool, pick off any good meat and throw it in the pot again. You can put the stock in the fridge and let the fat harden, then skim it off, if you want, but I don't. Add a bag of Trader Joe's cleaned chopped kale, or Costco sells it in a huge bag, and cook down til tender, about 30 minutes. Add a teaspoon of Splenda (or to taste), a tablespoon of cider or red wine vinegar, and hot pepper sauce to taste. If it needs salt, add that too.
We LOVE kale cooked that way! Ladle out the kale into a bowl and add some of the broth. It's so good for you too.

Low Carb Bean Soup with Ham Almost like Senate Bean Soup Large soup kettle: Fill with about 2/3 full of water 2 big ham hocks (we get them from Honey Baked Ham Store) 1 tbs. Ham Base (optional) 1 tbs. light olive oil 3 oz. onion, chopped 2 cloves garlic, chopped 2 c. celery, chopped 8 oz. fresh green beans 3 oz. of shredded carrots Onion Powder Kosher salt to taste Xanthum Gum Freshly ground black pepper to taste 3 cans of *organic soybeans, including liquid (21 grams carb) 14 oz. cauliflower, cut into nice chunks (goes in last) Sauté onion, garlic and celery in oil. Add to soup pot along with water and ham. Add soybean with their juice & ham base. Cook for about an hour or at least until the ham is coming off the bone. When the ham hocks are very tender, remove them and take off the meat and throw away the fatty skin. Add it back to the pot. Now add green beans, shredded carrot and cook for another ¾ hour. Add cauliflower and taste for seasonings. Cook uncovered until the cauliflower is done. Right at the end I used Xanthan gum, sprinkling it in and stirring until it was the right thickness. *I found these in the .99 stores. Libby Co. cans them and they are light in color and reminded me of the taste of Navy beans. They were tenderer than the black soybeans. I bought 20 cans of them and I might go back and get more. We have never seen these beans in regular super markets, or anywhere for that matter. Each can = 7 grams carb. I cannot wait to make ‘baked beans’ with them.

WOW! Those are great recipes. Thanks for the step by step. I've got mine going now. Looking in the freezer to see what I have to buy at the store. I know I've got most everything, but think I am out of green beans and cauliflower. Frozen cauliflower in AZ in winter is hard to come by.

Okay, so here is what I did:
I put the ham bone in my crock pot on high after breakfast this morning. After lunch I put in a bag of frozen green beans and a bag of frozen cauliflower. Left it on high. Then around 4:30 I took the bone out. I let that sit on the cutting board while I added two cubes of garlic from the freezer. I thought I had some onion, but it was no good. So I put a couple sprinkles of onion powder and a teaspoon or so of guar gum and let it cook uncovered for a half hour on high. Turned out a little watery, but very smokey and yummy. Next time I will double my veggies or less water... |

You can have beans on lc-what about adding some chickpeas or other beans?
