Broccoli Casserole
I made this last night after not making it for a very long time and my family loved it. My family's most favorite veggie is broccoli and I love that they love this! Now, forgive me if you have seen this before, if it is posted here somewhere. I couldn't find it. It is not my recipe, just something I found on the 'net a long, long time ago. The date I have on the paper I printed it out on says Dec 2001, so it is about as old as my DD
Broccoli Casserole cook 2-3 heads of fresh broccoli just until tender or 2 bags frozen. mix in bowl: 1 cup mayonnaise 3 eggs 1 cup shredded cheddar cheese 1/2 cup onion 1/2 cup mushrooms (optional) Mix altogether then add broccoli and fold it in. spray cake dish with Pam, pour contents into cake dish, sprinkle 1 cup cheddar cheese on top. Cook for 45 mins at 350 degrees. I hope your family enjoys it as much as we do.

That sounds soooo good, Dawn. I'm finding mayonnaise does amazing things to vegetables when baked. Can't wait to try this.

The only broccoli casserole I remember is the one made with CheezWhiz and cracker crumbs sprinkled on top. My ex-MIL used to make it all the time because she loved it. She's 91 now and I'll bet she's still making it...
Confession...it was really, REALLY good! Now if I could just figure out a way to sub out the CheezWhiz, I'd be golden ![]() Dawn: Does it turn out creamy? That is what makes casseroles so yummy for me! Last edited by RVcook; 12-11-2012 at 05:37 PM.. |

This is not creamy. It has a lot of eggs, so it is more sturdy. I was thinking that adding some cream cheese would make it more creamy, just haven't tried that yet.

I believe my sister used to make a great dip that was about the same recipe (minus the vegetable). When I was trying to think of a good low carb way to use it a while back, (maybe as part of a main dish) a broccoli casserole never occurred to me...sounds like it would be very good.

I made this for Christmas dinner too. It was a hit with everyone but I found it a little sweet with the mayo. Think next time I'll do half mayo and half sour cream. Great recipe!
