make ahead freezer casseroles
I would love to make about 10 or so of these bad boys this weekend to have on hand as the Christmas madness hits... anyone wanna share a great casserole recipe that freezes well?

Linda Sue's site is great for this.
I frequently freeze huge amounts of chili and soup (chicken with shredded hearts of palm in lieu of rice, other greens in there, etc.). Meatballs freeze well too (serve with spaghetti squash or broccoli). Mini meatballs (I like pork meatballs for this) are great in soups (freeze in it already or separately). We also grill chicken breast and freeze slices of that (flash freeze so you can pull out just a few pieces at a time to toss on a salad if you want to). Pork tenderloin and boneless leg of lamb roasted in the oven and sliced thin freeze well for me. I just reheat for a few seconds in hot water and serve that way. Linda Sue has a bunch of good ones like her LC lasagne that freeze well. |

I agree that Linda Sue's site is the best. I make the Chicken Divan, Jambalaya Soup, Cabbage and sausage soup, chili dog pie, enchilada bake and several others in larger quantities and freeze them for busy or "I don't want to cook" days. I cook a lot on the weekend and double, triple recipes and very little during the week. Linda Sue's meatballs are the best hands down! Her Italian meatball bake is one of our favorites.
