Barbo's First Draft Corn Bread LC
BARBO'S LOW CARB FIRST DRAFT CORNBREAD.
I needed this bread to go with gumbo, and many other dishes. Very much needed to make stuffing for the holiday bird or meat. This is my first draft and I think final as it turned out so good, puffy and moist. Perfect to either butter and eat or cube it and dry it in the oven for stuffing. Preheat to 450 degrees, Spray 8"by8" Pyrex baking dish Food Processor 1 can 15 oz. baby corn drained 4 extra large eggs 2/3 c. softened butter Process until you have mush. Dry Ingredients: 1 1 /4 blanched almond flour 1/2 c. CarbQuick 3 1/2 tsp. baking powder 1 tsp. salt 3 tbs. sugar sub. Place in bowl with wet ingredients and pulse about 10 12 times. Pour out into baking dish. Dot with butter. Bake 18 to 20 minutes Check to see if a knife in center comes out dry. Let cool on rack. OPTIONAL: 1 tsp. poultry seasoning. It makes it taste like cornbread stuffing The bread is very golden brown.

Hi Dee
I get the baby corn for a buck at the .99 store and also
at Farm markets.It's also at most super markets. My cornbread turned out so yummy If you do make it and decide to 'dry it out' in the oven for stuffing. Be careful not to leave it too long as it dries out quickly. We ate one half and used the other half to go into my lc stuffing recipe. |

Oh, Barbo, thanks..... this sounds so good! Since I don't have any Carbquik, do you think I could sub Jen's bake mix for it and the almond flour?
