I remelted the fat bombs and added more almond butter and chocolate, but they still feel like I'm biting into a big chunk of coconut oil.

The very reason I use coconut cream concentrate instead of the oil. I want my treats tasty, not oily. I don't like the bark for the very same reason--oily. |

If it's because you don't like the taste of coconut, get the expeller pressed and it has no coconut taste at all. Someone else doesn't like almond butter. I bet it's because it's not salty like peanut butter. When I've gotten it I just put a little salt in it (the part I'm eating). It's too bland for me and I'm not a big salt adder normally at all. |

I make mine with 2tbs each: coconut oil, butter, almond butter and Hersey's sugar free chocolate chips and put them in 1 tbs servings in cupcake papers.

Will have to give it a try with the butter. They are a little oily, but not so much that they are disgusting. The peanut butter has some texture and seems to help with that. Also, I think the powdered Splenda makes a difference.

I finally made some today. I used Coconut manna, coconut oil, butter, unsweetened baking chocolate and ES Sweetz. They are awesome! Sort of like a Mounds candy bar.

I find that putting them in the cupcake papers absorbs some of the extra oil that doesnt set up compared to strait on a pan.

1/2 C coconut oil 1/2 C salted butter 1/2 C chunky almond butter 1 1/2 C finely shredded coconut 3 T cocoa 6 T DaVinci French Vanilla syrup Kosher salt to taste I didn't have a scoop to get the portions exact, but I ended up with 22 bombs: Cal: 155.8, Fat: 16.4, Protein: 1.4, Net Carbs: 1.6 each. Next time, I'll try to get closer to 30 or 36 out of the batch. DH and I were pretty impressed with them (and I have a feeling he'll be nicking them all out of the fridge if I don't watch him lol). I like them because of the chewiness/texture, which greatly helped to offset the coconut oil.

4 TB CO
4 TB Natural PB 1 TB Salted Butter 2 tsp granular Splenda 1 square 100% dark chocolate, shaved Combine all ingredients into pan over low heat until melted. Place 1 Tbsp each into regular size muffin papers. Freeze for 20-30 minutes. Remove from muffin cups and place in ziplock in freezer. These taste exactly like peanut butter cups. I can't keep my kids out of them! |

I think wifezilla may post why they are good for you and why she eats them. I eat them because they are good and tasty!

My wife made these over the weekend using the recipe in the OP with a few minor tweaks. They were delicious but just a little oily. I'll have to mention the coconut cream concentrate. Thanks to everyone for sharing recipes.

I put the last batch in the paper cupcake liners and it did help with the oiliness a little. I really don't mind that it is a little bit oily though, so I guess it is just one of those things that you need to use what tastes best to you. I do plan to make some with the coconut butter versus the oil only and see how they taste.

I finally got some cupcake liners and decided to try making these again. In mine I put 2 TBS Almond Butter, 4 TBS Coconut Butter, 4 drops of liquid EZSweetz sweetner, and then placed whole salted almonds inside each cup as well as on top. It made 10 cupcake sized pieces about 1/3 of the way full. They are in the freezer now. I tasted them before freezing them and they taste the best so far out of all the attempts I've made. I can't wait to taste the finished product.
