Yummy unique Thanksgiving day side dish!

![]() Butterflied, Dry Brined Roasted Turkey with Roasted Root Vegetable Panzanella Recipe : Alton Brown : Recipes : Food Network He makes a roasted root vegetable bread salad to go with his turkey. Basically he takes a mix of shredded brussel sprouts, a few bread cubes, and root vegetables and roasts them underneath a butterflied turkey so that the turkey juices drip into the pan of veggies. Obviously you could substitute your preferred mix of butternut squash, turnips, parsnips, onions, whatever low carb veggie. You could leave out the bread cubes. I feel that a hearty low carb bread something like Ezekial bread would work well here (where as to me, stuffing needs soft white bread or corn bread). Or even if you use regular bread, it would be very easy to just eat around the toasty bread cubes and let your family/friends eat them, since they aren't mushed into a stuffing mix. I may try this with a chicken or possibly even make an early turkey since they are so cheap right now. |

This looks wonderful and I love how all the skin on the turkey got nice and browned and crispy. Great ideas.
