I like frozen blueberries mixed with greek yogurt for breakfast. I let it sit for about 5 minutes so the blueberries soften just a little and the yogurt freezes a little. -My Costco has really big bags of organic frozen blueberries for $7.00.

I just baked a dozen eggs. Inspired by some of the posts, I put (cooked) bacon in the bottom of each tin, instead of greasing them. They popped out just fine.
Can't wait to eat some! |

This thread is AMAZING. I hope it continues! Breakfast is SO HARD for me. I rely a lot on things like hardboiled eggs and egg salad during the day (so easy to make and take into the office) that eating plain old scrambled eggs for breakfast sounds terrible.. |

Yup! I'm afraid no more variations from me for a few days, though, on the grounds that my muffin-tin holds a dozen eggs, and I haven't gone thru 'em yet!

My go to breakfast on the run is yougurt and mozarella stick (I have to watch calories), or the mock danish. Bag them refrigerate and eat one or 2 while on the computer before I have to run. Have seen a lot of you tubes on the baked egg theme. Have seen peeps put bacon and spinach and swiss cheese and one slice of potato.

Thanks All. I have my costco hard boiled eggs already. I've got sausage. And I am going to make those eggs. I've been having a hard time the last couple of weeks figuring out breakfast since I now sneak out and leave DS and DH sleeping. I don't want to cook eggs and wake them up with the smell, but I can reheat at work when I make my coffee and that will be awesome. And the muffin eggs! I am going to do that today. DS will freak.

Breakfasts
Anybody have any breakfast ideas aside from the baked eggs/omelets? Grab and go is great, but for me that could also mean spending all Saturday afternoon making something that I can freeze, and then grab and go during the week!

My favorite is bacon-wrapped eggs w/ goat cheese... I use a 6-muffin silicone pan, I was having trouble popping them out of my old metal tin, but anyway:
Bake 7 strips of bacon for ~8 minutes at 325F (to pre-shrink them, basically) Cut one of the strips into 6 Put a cut piece of bacon in each muffin cup Wrap each piece of bacon inside the perimeter of a muffin cup Crack an egg in each cup Top with a sliver of goat cheese Cook it at 400F for ~20 minutes (I like my eggs very well done/hard, you can get by with 10-15min if you don't mind them a little soft) I've put 2 of these in a ziplock bag and taken them on business trips... made a perfect snack if I didn't have time for lunch or was riding the train home during dinnertime. |
