Kobacha squash/pumpkin what is the real carb count?
I saw it mentioned on the boards so I googled it and found wildly differing nutrition information on it. Some pages say its 7 gm carbs per cup cooked and another says its 30 gm carbs per cup. It seems too good to be truely a low carb winter squash...I would hate to start loving it and then be disappointed by not being able to have it, like a long time ago, I believed several different people who insisted that Water chestnut flour was a low carb flour...NOT!
So, does anybody know the actual truth about Kabocha squash? |

I had to go make sure what I was going to tell you is true.
Kabocha squash =1 cup cooked squash 40 cals. 7 carbs. I love in in soup. It's 1/2 of what a butternut squash would be. |

It's out everywhere Deb. I live where they have all the winter squash for .69 cents a lb. Look around and see if you have farmers markets or contry markets.

I found this squash up in the Lake Tahoe area
a few years ago. I tried it and loved it.
You should be able to get it most places this time of year. It is a great value for only 7 carbs. Makes a nice mash. |

Hmmmmm, i didnt know what this was so i had to look it up, I'm so going to try to find this. I been wanting some squash but the carbs are a bit high.

This thread has good info. All about some wonderful winter squash.
Winter Squash I have 8 spagetthi squash,10 delicata , 4 golden nugget , 1 turban,3 kobocha and 6 sweet dumpling. I prefer this for potatoes , as hash, french fries, in stew. I 've made pumpkin recipes using turban, they are big and rich dark red color insude. I found Kabocha (japanese pumpkin) at my oriental grocery. I cut in to small chunks and roasted with olive oil and seasonings. It was wonderful. Tastes like a cross between a regular Irish potato and a sweet potato but much lower in carbs. I am not diabetic but do test my blood sugar with different foods. If I eat even a small sweet potato it spikes my bg levels but this did not!! I think it would make a great soup as well as sub for mashed potatoes.
