Chicken Enchilada pie
Found this recipe today - thought it would be good using the cheesebread rounds recipe that was posted instead of the cornbread mix on top - maybe add a tablespoon of cornmeal to the recipe for the flavor!!
Ingredients 2 teaspoons vegetable or canola oil 1 small white onion, diced 1 jalapeno, seeded and diced 1 (10 ounce) can Old El Paso enchilada sauce 1 cup Old El Paso salsa 2 cups shredded cooked chicken 1 (15 ounce) can Progresso black beans, drained 1 1/2 cups shredded Mexican cheese (divided) use the cheese bread recipe instead of this below 1 (6.5 ounce) pouch Betty Crocker cornbread mix 1/3 cup milk 1 egg 2 tablespoon melted butter Directions Preheat oven to 350 degrees. Heat oil in a medium skillet over medium-high heat. Add onion and jalapeno and cook for 5 minutes until the onion is translucent. Transfer onion and jalapeno mixture to a large mixing bowl. Add enchilada sauce, salsa, chicken, black beans, and 1 cup of Mexican cheese. Stir all ingredients until evenly mixed. Transfer mixture to a pie plate that has been greased with cooking spray. Pat the mixture down with a spoon so that it is nice and even.4In a separate bowl, whisk together cornbread mix, milk, egg and melted butter until combined and smooth. Then spoon the mixture on top of the enchilada mixture until the entire pie is covered. Bake for 20 minutes, until the cornbread topping is set and the edges are just beginning to brown. Remove the pie, and top with an additional 1/2 cup of shredded cheese. Bake for an additional 3-4 minutes until cheese is melted. Remove and serve immediately. |

Sounds good. You could substitute black soybeans for the black beans to lower the carb count.

I don't know if those cheese bread rounds will work - DH tried heating one up a bit in the microwave to have it warm with butter and it got so soft he couldn't pick it up til it cooled again!
Remember, it's mostly cheese, so it's gonna still melt when the heat hits it! I'd make Chicken Lady's cornbread recipe and use that. |

this is going to be a rough recipe to low carb... so many of the key ingredients are carby. you could do something with black soybeans and making a cornbread substitute from almond meal, but it would take a lot of experimentation, I'm afraid. too bad because this sort of thing is one of my favorite types of dishes!

Since this is a takeoff of tamale pie, I did a search on here and came up with a few threads - you might try one of these topping ideas.
