Mint N' CHIP Low Carb Sugar Free Brownies ( using Duncan Hines Frosting Creations)
Hello Awesome Lowcarbing people...
as requested, here it is the recipe to a new creation of mine, think you will love it: ![]() Mint n Chip LowCarb Sugar Free Brownies: 4 TB Flaxmeal ( you may use golden or regular - whatever you prefer ) TB Cocoa Powder ( make sure you use a brand that is low carb, hersheys is) carbs= 4 2 TB Coconut Flour carbs = 3 2 TB melted butter ( you may omit the butter, if you wish, if u r watching cals, 2 ) carbs= 0 2 eggs carbs=01 tsp Baking Powder 1 1/2 cups Splenda ( or equivalent of your Choice of Sugar Free Sweetener) 3-4 TB Waldens Farms Chocolate Dip carbs=0 1/2 Packet of Duncan Hines Mint Chocolate Frosting Creations carbs = 1 Mix all above ingredients together. Spray a square brownie pan with Pam. Spread mixture into pan. Bake in oven at 375 for about 15-20 min. CHeck it with toothpick it you're picky like me, at about the 12 min mark to see how its doing....you dont want to over cook it. When done, remove from oven and allow to cool. then frost with the following, if desired ( and I DO recommend it ) Frosting: 3-4 TB Walden Farms Marshmellow Fluff carbs=0 2-3 TB softened Cream Cheese (reg or light, dont matter 2 me, use what u prefer) carbs=4 1-2 TB softened butter carbs=0 1/2 cup Splenda (or equivalent of your choice of Sugar Free Sweetener) 1/2 packet of Duncan Hines Mint Chocolate Chip Frosting Creations carbs=1 **** Optional but wonderful****** - sugar free chocolate bar bits or sugar free chocolate chips) carbs= ??? depends what kind of bar u use... After frosted, keep in fridge. DELICIOUS!!!! Yeilds about 16 brownies. Nutirional info for entire recipe: approx 14-15 carbs for entire recipe, about 1 carb per brownie approx 970 calories for entire recipe,( if using all the butter and full fat cream cheese,) with a total of approx 65 calories per brownie or only 470 calories for entire recipe,( if you omit the butter completely, and use fat free cream cheese instead of full fat cream cheese) with a total of approx 31 calories per brownie ![]() yes....you did read that correctly.... ****( disclaimer....carb and calories are from my calculations, I am not a brain surgeon, nor a rocket scientist, neither am I am astanaunt, not a mathematician.......recommmend lugging the info into firday, or some such mechanism, if my calculations frighten you or cause you and stress or fear that I might be trying to sabotage your lowcarbing success.....which I am not....I love you, I like you, and I wish delicious success for you each and every day of your life!) ![]() ![]() ![]() Have fun, kids! |

interesting. those frosting creations flavor packets are just flavoring, food color, and dextrose (sugar) to keep it a powder that will stay stable in the packet and disolve in your recipe. so you could just use flavorings and get the same result without the added sugar (or cost). it sounds good!

Remember....2 carbs per PACKET, means per serving, ( and most recipes for brownies, breads and such, yeild anywhere from 12- 16 serving ) is going to be miniscule. not much to worry about, one would think.? just something to think about. ![]() But you are most correct...one could easily flavor the recipe with everyday extracts and flavoring that you find in the baking aisle of any grocery store. |

sorry! if they are fun for you, knock yerself out. we all need fun, don't we?
I hate supporting overpriced processed foods, but a few of these will hardly bankrupt you and if you don't use a LOT of a particular flavor could even be more economical. no point in saying a bottle of extract would only cost 5 cents for the amount in one of these packets if that means 100 servings and that would be more than a lifetime supply of that flavor! LOL |

( I just couldnt resist buying the frosting creations when I saw the Mint Chocolate one- mint n chip has always been a fav of mine, and I have found it hard to re-create in the kitchen ...I dont know why I struggle with it so....I get the recipses either overly minty or not minty enough.....all kinds of problems...... and the frosting creations packet I used recently was JUST the right amount of Mint CHocolate-y goodnes, I was soooo excited about that - silly, I know, -but true. I hate to go off topic with my first reply but..
I'm allergic to bananas and would love your reciper, if you'd be willing to share. (also starting back to low carb, but I would seriously cry to be able to have a slice of "banana" bread) |
