Low Carbing Among Friends Vol 2 What recipes have you tried?
Okay, my girls are off to college and God has blessed me with this cookbook in the mail the very same day.
So like Vol. 1, what have you tried? I'm sure I have tried some of them, but like the last volume, I may have looked all the way through it but missed so much. Thank you for all that contributed, thank you Jennifer for all that you put into this, and thank you for pointing out so many good recipes I probably would have overlooked! |

So happy your book arrived and the timing was absolutely amazing! My sons left the nest a year ago and so much has happened in that time. They have really changed into men in that year and learned to be very independent for the most part.Thank you for starting this thread. I don't have my book yet and it will probably be a few more weeks of waiting. ![]() |

You will find it gets easier as time goes by. Have you a Blackberry or something to keep in touch with your daughters? That thing is like an extended umbilical cord for a while. ![]() You're welcome, Tilly. Yep, I worked hard and all the authors and contributors were fantastic!! It is a labor of love and has always been. Good to be busy and not focus on myself. |

Hi Jennifer I tried Lisas cheese puppies on page 226. They are perfect when done in a mini muffin tin pan as little bases. Because they sink down and you can fill them up with sauce they are like little crusts that hold a filling. I smoothed down half a laughing cow in each one and then topped with marinara sauce. The presentation is so nice and this is an alternative for anyone who is gluten intolerant as a canape at a party! AND they tasted good, crispy and firm yet holding the creamy filling. A thumbs up for this recipe!

Jen, LOL! Laughing Cow is the brand name of some low-cal cheese products - mostly it's in small single-serve wedges in various flavors.
I can only imagine not knowing that product, what a funny statement that would be - "add half a laughing cow" - ![]() |

How timely! I received the book the day before we took my youngest son to college. I read through most of the book on the return trip (2 hrs.) and have marked more than half the recipes to try.
I already miss my DS terribly - it's so quiet around the house! But I'm looking forward to trying new LC recipes. It was hard to cook LC meals for DH and I and non-LC for DS. The dorm cafeteria is carb-heaven - DS claims he's going to gain the freshman "50" this year (he wants to, he's 6'2" and 140 lbs right now.) Silly boy, I tell him he'll be fighting it later, but when you're 18 yrs. old and invincible you don't listen! I've already made one recipe from v.2, Buttery Apple Torte, pg. 113. We ended up having an impromptu dinner with friends last night, so I took the torte to their house. It was a hit, even among the non-LCers. I served it plain because I was out of heavy cream. The only change I made to the recipe was to sub the rum with Calvados (French apple brandy) - I used 1 Tbsp. If the rest of the recipes in the book are as yummy as this one, we'll be eating LC high on the hog! |

KCSoccer, I'm so happy your cookbook arrived to bring you joy at this time. I can totally relate to your feelings. It helps to keep very busy! I also knew that I could not hang on to my sons any longer. They are men and need to feel like men. However, I got to have them home quite a bit longer due to circumstances, so it is much more difficult for you, for sure.
The boys love that recipe! Thank you so much for the nice review. Judy Barnes Baker of Carb Wars said it's one of the nicest low-carb desserts she has ever made. She tried it with all different fruits too. |

I must admit I am reading it page by page starting at the very beginning. I am fasinated with the history of LCing. So much I did not (and probably do not) know. I started way back in the 70's, but hard to stick to with my mother doing the shopping.
I had to get up to go and get a pencil to start circling people I want to learn more about. Wow, web sites for further research are included. And this is all BEFORE I get to the recipes. That's okay, I am hooked. I doubt I would have stuck with this WOE without this forum and all the support, suggestions, encouragement, and laughs! And I would not have known about the cookbooks and other blogs. Thanks again, I am slowly plugging through, want to savor it. ![]() |

I've made the choclate fudge cake by the Chicken Lady and the waffle southwestern casserole (I think by Lisa Marshall). Both very good. And have just made the waffle recipe by itself several times to use as bread and they are great that way, too. Also just made up another container of the LC Gluten free bake mix. Oh! the garlic parm wings from Kent-but they might be in book 1. Many pages bookmarked.

Oh my goodness, Chicken Lady's chocolate fudge cake is so good, quick and easy to make and delish! I think I still have some in the freezer from last time I made it. I've been off sweets for a couple weeks now and probably for a few more weeks. Love my sweets!

Because I just got back from vacation I wanted to make something that was quick for my first recipe from Vol 2 so I chose French Toast on pg 187 by Ginny Larsen. It was great & tasted just like french toast!! My husband was amazed too! He's not on low-carb but he enjoyed it very much!!

Volume 2 arrived yesterday
![]() happy.I started from the front cover reading every word. Will I retain it? Heck no, but it's so interesting. The coil bound is WONDERFUL laying flat, ready to receive my drippings, splashes and droppings, staining each page with wonderful batters, juices, vanilla, and etc. Thanks everyone for your reviews. I can't imagine cutting my 'Laughing Cow' in half. So funny. I'm heading for my bed and pillow and some more reading the cookbook. |

Not sure I can say this but it is offered at Amazon. There is SO much information in there, along with references to research more about this WOEing. I am only up to page 130 and seem to be marking almost every page. Useful comments and tips are at the bottom of most of the pages as well.
I have no clue where to begin making the recipes AND I have not even gotten to all that are in Volume 1, and they are talking about Volume 3!!! ![]() |

Two days ago I started making the Cold Brew Coffee pg 172 & today I made the Creme de Menthe Caffe Mocha Smoothie (same pg) It was great !! I felt like I was sitting in Starbucks but it did't cost me an arm & a leg!!
