Chocolate Heaven....

So, I work nights. And I work from home. Around 2 AM it gets super quiet and I get a super case of the munchies. I decided to play around with some ingredients and I ended up whipping up a chocolate pudding/mousse type treat.

I took 2 tbs of PB2, added 1tbs water and mixed it up. Then I took a 1/2 block of baker's chocolate and plopped it on top of the PB mixture and microwaved it on medium heat until the chocolate melted. I mixed it together and added 2 pumps of Da Vinci's chocolate syrup and then added 1.5 tbs hwc. I added some Splenda (to taste) and mixed it all up until it was well blended. I put it in the fridge for about 30 minutes and all I can say is YUMMMMYYYYY! If you're ever jonesing for some chocolate, this will cure ya. I come up with 6 net carbs and just under 200 calories. If you add more hwc I am sure it would come out less like a pudding and more like a mousse, but I didn't want to go over 200 calories. It's very rich so it would be tough to over indulge with this one.

Tomorrow I might play around with the flavor a bit by adding a different syrup. I'm tempted to order some Da Vinci's Tosted Marshmallow because it sounds like it would be delicious with chocolate.

I think vanilla would taste great. Raspberry would probably be yummy too! I thought the splenda tasted fine, but I actually like a bitter chocolate so you might be better using a different sweetner. I have some Truvia and may try that next time I make this.
