Savory ideas for MIM?
So, I've decided, among other things, to cut out artificial sweeteners. I still want my one minute muffins though! What do you put in them to make them savory? I need to switch it up anyway, and any interesting ideas would be welcome.

Good question. I'm looking forward to hearing the answers, since I also am not doing artificial sweeteners. How about good quality grated Parmesan cheese, oregano, diced oil-packed sun-dried tomatoes, and/or minced oil-cured black olives (any combination of these that appeals to you)? How about a tablespoon of jarred pesto sauce or tapenade? How about crumbled feta cheese and whatever herbs you like? Or crumbled blue cheese and minced walnuts? Finely minced proscuitto? Crumbled bacon and shredded cheddar cheese?

Are you wanting them to taste like toasted garlic bread, or cheesy bread?
I don't make these muffins, so don't know what all might affect their consistency, but are they something that you could add chopped jalapeno peppers and shredded cheese to? Or perhaps try to make them a little bruschetta with chopped sundried tomato, minced garlic, maybe some minced onion, chopped black olives, drizzle with a good olive oil, etc.. whatever your favorites for bruschetta is. Maybe make them like a good dill bread and then spread with cream cheese.. Or put dried chives into them. Can these be made with beer? Maybe you could turn them into a sort of cheddar/beer bread.

This is kinda sweet, but I've used 2 tbsp canned pumpkin with nutmeg and cloves.

Can you make these muffins in the shape of slices of bread and make grilled cheese sandwiches with them? That would open up more possibilities of using them with a tremendous number of wonderful sandwich fillings.

Parmesan cheese, fennel, Italian spice/herb blends! I tried something like that once and it wasn't half-bad.

I tried adding 1 oz grated Jack cheese to mine once, and eliminated the sweetener. It was pretty good, but needed a little extra time to cook (20 more seconds). Next time I will add some herbs, too, and use a stronger cheese, as the flavor was pretty bland. You could also try using broth (or diluted soy sauce or Worcestershire sauce). Love the idea of chopped sun-dried tomatoes and cheese, for a pizza-like bread, or garlic-y bread.

1/4c flax
1/4tsp cinnamon 1/2 tsp baking soda 1 egg mix and nuke for 1.5 - 2 minutes I toast it and add cream cheese. I also have a version with banana liqueur (alcohol cooks out but it has some banana taste). See siggy. |

Vanessa from these boards has a blog called Healthy living How To and this is her recipe.
I make it all the time and it is wonderful. It is great just as it is, but you can add whatever seasoning you want to change the taste. I will post recipe here, but go to her site for her variations (and lots of other great stuff!!!). One Minute Muffin Recipe by Healthy Living How To Prep Time: 3 Minutes Cook Time: 1 Minute Servings: 1 Ingredients •1/4 c. Almond Flour •2 Tbsp. Bob’s Red Mill Organic Golden Flaxseed Meal •Pinch Celtic Sea Salt •1/2 tsp. Rumford Baking Powder (Aluminum-Free, Gluten-Free) •1/2 Tbsp. Organic Unsalted Butter or Nutiva Coconut Oil, Extra Virgin, Organic or Ghee •1 Large Organic Egg Directions 1. Melt butter in a 4 1/2 inch ramekin. 2. Whisk egg and then slowly drizzle in the melted butter. 3. To the egg and butter add almond flour, flaxseed meal and salt. Mix well with a spoon. 4. Sprinkle with baking powder and mix one more time. 5. Spoon into ramekin and microwave for one minute. 6. Remove from microwave with dish towel and invert on a cooling rack. 7. Once cool, split in half and enjoy!

Thanks Jandjsmom, for the recipe. I made this with garlic and onion powder and sun dried tomatoes and cheese and jalapeno peppers. It was delicious. I put it in a flat bowl and put butter on it when it was done. It was like a meal. I'm going to add black olives in it today.

Oh catlove....that sounds delish!! Never thought about adding cheese to it! I am about to make it for hamburger night so I am going to add in some shredded colby/jack and garlic powder. Glad I peaked on here while I had a few minutes to kill!!

For a savory OMM, I do the following:
1 Tbsp Almond Flour 1 Tbsp Ground Flax 1 Tbsp Coconut Flour 1/2 tsp Baking Powder 1 egg 2 Tbsp Water (or 1 Tbsp water and one Tbsp sour cream) Pinch of Salt 1 tsp Italian Herb mix (or whatever herbs you want) Mix well in large ramekin and microwave 2 minutes. This recipe is really flexible - I have added a Tbsp of grated cheddar cheese, Diced ham, you could omit the herbs, add sweetener and cinnamon, etc. Have fun! - Eric |
