Raspberry Pie
I have made this pie several times this summer and thought I would share the recipe. One summer back in the 90's I was visiting my parents in upstate NY and they took me to a vegetarian restaurant in Kingston. I was urged to try their famous raspberry pie for dessert. I fell in love with each bite and asked for the recipe which the chef kindly scrawled on a piece of parer which is safely pasted in my hand written cook book.It is so simple and easily low carbed.
Pie filling 3 cups raspberries Fresh are best, frozen thawed berries work fine 3/4 cup heavy cream 1/2 cup almond flour sweetener to taste The original recipe calls for 1/2 cup of honey.I use a mix of Truvia and Torani raspberry syrup Pie shell I use the Shortbread crust I found on the recipe board, I think it's Jen Eloff's . The original recipe used a chocolate graham cracker crust so I added 1 Tbls unsweetened cocoa. 3/4 cup almond flour 2 Tbls oat flour 1 Tbls erythritol 1/8 tsp stevia extract 1/4 cup melted butter ( I used coconut oil, and used less than 1/4 cup) I added 1 Tbls unsweetened cocoa. The plain version is fine, too. Mix dry ingredients for pie crust, add oil or butter, mix till combined. Pat into a pie pan, I used a non stick one which I coated with cooking spray. Pre bake the crust till firm, 8 minutes at 350 in my Breville table top oven. Make the filling, adding the flour and sweeteners to the cream, mixing well and then fold in the berries. Pour the filling into the baked shell and bake at 350 for 35 - 45 minutes or till set. When cool, refrigerate the pie. It needs time to set up, make it in the morning if you want to serve it after supper . It's great the next day. Must be served cold. Dee |

Our raspberries at Wallie don't look that great right now..I think this would be great
with frozen ones.. Yummy.. |

CarolynF, frozen work fine. I use them almost always. I don't let them get soupy , just unfrozen and firm.
Iramirez2000, I am stuck on the raspberries, haven't tried other fruit. I buy them frozen at Trader Joe's, I think a package is 2.99 for the organic ones. I use one bag and one additional cup. Nigel, you are welcome. One correction, I use 2 Tablespoons of unsweetened cocoa powder in the chocolate version of the crust, not one Tablespoon. Sorry I don't have a photo, it is a very pretty pie! Oh this sounds lovely. I jsut froze 2 flats of raspberries. And I'm getting ready to pick my blackberries. YUM.

Oh my , rosethorns I see you live in Berry Heaven!!!I will never forget the abundance of berries, apples and salmon when we lived in WA state in 1970, 71.

I lived in Vegas for 20 years. And now WA has my heart. There are so many apple varieties to can. And my 2nd year of rasphberries yeilded 3 cups. This variety has berries 2 times a year. YUM!!!!! |
