I jacked up my Caulitatoes by putting in too much cream cheese...
Don't know what I was thinking. I had a very large cauliflower, so I put in a whole block of cream cheese. I sent DH to the store and he bought 2 more smaller cauliflowers and I cooked one and a half of those and put them in with some more garlic and onion and it tastes good but still too cream cheesy on the tongue tasting. Any suggestions? It's a BIG batch now and I'm not sure if extra cauliflower will do the trick. I think I'd probably have to add two more heads. I blended it with an immersion blender so there's not much chunk left to it, which probably makes it worse. Taste is great. Slicky on the tongue too much, though.

Maybe add some sour cream or regular shredded cheddar and use it as a dip? Green chilies add a lot of flavor and help with too much cream cheese...if you like spinach, that would help lessen the cream cheese too.
Or maybe you could add some heavy cream and a bit of parmesan and turn it all into a cheese sauce to put on steak or chicken? That's about all I can think of. Last edited by Nigel; 08-05-2012 at 09:08 PM.. |

What about mixing it in a pan with some chicken and veggies (broccoli, peas, carrots, etc) and maybe some more regular cheese then baking it in the oven, kind of like a casserole thingy.

I'm with Nigel on adding some cheddar cheese. Also, some bacon bits or chopped up cooked bacon.

I would take 2 cups of your cauli mixture, add 1/4 c. sour cream, 1 egg and some ham or bacon. Top with some cheddar cheese and bake at 350 for 45-50 min.

Not sure exactly what to suggest, except that I would only work with smaller batches at a time now. I wouldn't do anything else to the whole batch.
Maybe try different things from above, but only using part of the original each time. If you have too much, try freezing part of it, again in smaller batches. |

I would use this as a base to make cream soups out of. Add a large amount of chicken or beef stock and make cream of celery, cream of mushroom, cream of broccoli, cream of asparagus soups etc.
I do it all the time when I have made too much fauxtatoes with the cauliflower/cream cheese mix...when we get bored of it, I make soup. Add other meats or veggies and you have a meal in a bowl. Heat the cauli-stuff with the stock and when heated, whizz with an immersion blender, then add your extras...its delicious, especially with LC bread or MIM or biscuits |

I was going to post soup as well. I would scoop some into a pot, add broth, broccoli, and cheddar cheese to make a cream of broccoli soup.
Also I came across a recipe (of course I don't have it here now!) for making cheesy cauliflower patties. I would take a scoop of your faux potatoes, add chopped, cooked cauliflower, and either cheddar or parmesan cheese. Form into patties on an oiled pan and brown on both sides. |
