Fast easy summer recipes?
I just made the fastest ever low carb pulled pork BBQ for an afternoon picnic:
1 pkg plain (no sauce) smoked pulled pork (from Costco) 1 bottle Dave's SF BBQ sauce (actually mixed 1/2 bottle of the spicy and 1/2 bottle of the regular to get the right amount of heat) Heated the two on the stovetop, then transferred to broiler for 8 minutes to get that yummy crispy coated BBQ texture. Made about 6 cups. My husband apparently loves it, as he won't stop nibbling at it. Making this made me realize, "Hey! It's summer and I would like to spend less time in the kitchen!" Anyone else out there who have quickie summer recipes-even using some premade stuff (aka "semi-homemade")? |

I don't have much for recipes, I basically make stuff up as I go along.
I eat a lot of different salads with salad dressing and wraps on lavash bread and stuff like that during the summer. It also helps that when I do cook, I make extra and freeze it to nuke for a quick dinner later on. I mostly eat vegetarian, but I used to buy the pre-cooked beef fajitas and chicken fajitas and white chicken and just heated them up in the skillet with peppers and onion and made tacos out of them. Super easy. just add some salsa and sour cream and viola!! Another thing that is easy is to buy the already cooked roasts, etc. I find them in the meat section and I think the brand is Hormel. They are around $5 but you just nuke them. You have to check for the carb counts to make sure they aren't too high. There are other brands too that have basically the same stuff. Tony Roma ribs, etc. I like to make cheese chips up ahead of time and then make some guacamole and I eat that for a meal on hot days too. I hope other people post some great recipes for you. |

I have this printed out from a few years ago. It isn't LC specifically, but many of the recipes can be easily adapted to LC.

I am so sorry.
I wrote Dave's because that is what I usually use but in fact I ordered GUY'S Sugar Free BBQ sauce from Netrition- in both regular and Spicy versions, then mixed the two. |
