Chicken Almond Salad
Our peach tree runneth over. Please come over with a sack. Summer can be a wonderful time with a bounty of good fruits and veggies. Take it easy on yourself and get a roasted chicken from CostCo or Sam's. Bring it home and take all of the breast meat and thigh if you like dark. Chunk it up and put it aside. I take the backs, wings, skin, fat and bones into the pressure cooker with parsley, S&P and seasonings of choice, pressure for 1 1/2 hours. Let it cool, strain and you have fabulous broth for recipes or just soup. Chicken Almond Salad with Peaches Serves 2-6 depending on how much chick you use. Place in salad bowl: 1/2 breast, one thigh cut up. It was a 6 lb. bird. 2 small or 1 medium peach, ripe but firm, peeled and cut into small pieces Center of celery hearts, sliced thin on diagonal Handful or more of natural almonds, crushed in food processor so they are medium chunky. Dressing: 2 tbs. cream cheese softened 4 tbs. sour cream Squeeze of lemon Truvia to taste A little salt to taste. Whirl it around well. Chill salad. Pour dressing over top and toss well. Served on a bed of lettuce of your choice The rest of our wonderful summer supper was sliced home grown tomatoes with olive oil/a few drops of balsamic vinegar and fresh basil leaves. Also served were deviled eggs, cucumbers with dressing and ending with ice cold small wedges of cantaloupe. ,

This sounds wonderful! I wish I lived closer I would take you up on your offer for peaches.
I moved to Oregon in 2004 and haven't had a good peach since I left So Cal. They just never get ripe. |
